本发明属于食品加工技术领域,具体涉及一种营养助消化的2段婴幼儿米粉。
背景技术
众所周知,母乳是婴儿最好的营养来源。它含有的免疫物质、优质蛋白、脂肪酸、乳酸和牛磺酸等,可以抵抗病毒和细菌感染,增强婴儿抵抗疾病的能力,促进大脑迅速发育。但是由于婴儿的肠胃消化及肾脏排泄功能还没发育完全,无法承受过量的蛋白质与矿物质,不易吸收。而母乳中的蛋白质、矿物质与脂肪酸比例的合理搭配,正好满足婴儿的需求。
6个月后的婴幼儿,生长发育加快,母乳的量和营养已经不能满足婴幼儿的营养需求了。所以我们需要添加一种近似于母乳的营养食品,既要能提供婴幼儿的营养需求和抵抗力,又要为断奶做准备,使婴幼儿慢慢适应由母乳过渡到半固体,再到固体类食物的过程。
根据食品安全国家标准GB10769-2010对婴幼儿谷类辅助食品的各种营养物质含量标准的规定:如能量≥1250KJ/100g;蛋白质≥0.33g/KJ;脂肪≤0.8g/KJ;维生素A14-43μgRE/100kJ;维生素D0.25-0.75μg/100kJ;维生素B1≥12.5μg/100kJ;钙≥12.0mg/100kJ;铁0.25-0.5mg/100kJ;锌0.17-0.46mg/100kJ;钠≤24.0mg/100kJ等。
根据食品安全国家标准GB14880—2012食品营养强化剂使用标准的规定:卵磷脂800-1500mg/kg;低聚果糖(FOS)+低聚半乳糖(GOS)≤64.5g/kg;二十二碳六烯酸(DHA)≤1150mg/kg。
目前市场上的米粉,大多都是由谷物类的食品直接粉碎或研磨得到,富含过高的蛋白质,且营养单一,不含有促进婴幼儿的消化和吸收的成分和益生元因子,容易引起腹胀、腹泻、便秘、不思饮食等。

糙米比加工后的精米更具营养价值,其含有的钙是精米的1.7倍,铁是精米的2.75倍,烟碱是精米的3.2倍,维生素E是精米的10倍,维生素B1是精米的12倍。且糙米含有的纤维素能明显改善肠道微生态平衡及增殖场内有益菌群,促进肠胃蠕动、防止便秘,利于人体吸收。
小米含有丰富的不饱和脂肪酸、维生素B1、维生素B12、维生素E、膳食纤维和矿物质。具有补血健脑、健脾和胃、补益虚损,防止泛胃、呕吐、消化不良及口角生疮的功效。但是小米本身口感粗糙,后味有涩的感觉,配以玉米,可增加其口感,使其香甜细腻,维生素更加丰富。
胡萝卜是一种质脆味美、营养丰富的家常蔬菜,素有“小人参”之称。其富含糖类、脂肪、挥发油、胡萝卜素、维生素A、维生素B1、维生素B2、花青素、钙、铁等人体所需的营养成分。具有保护视力,滋润皮肤,提高免疫力的功效。配以菠菜食之,具有促进生长发育、增强免疫力、预防便秘、延缓衰老的功效。
卵磷脂,促进婴幼儿大脑发育、提高记忆力,还可保护肝脏,预防肝硬化、降低胆固醇。它能够支持二十二碳六烯酸(DHA)整合入大脑,可强化DHA的效果,有助于大脑智力和视网膜感光细胞的发育。
低聚果糖(FOS)是优良的双歧杆菌增值因子,低聚半乳糖(GOS)是优质的益生菌增值因子,能协同促进肠道中多种益生菌生长,帮助营造健康的肠道环境、提高机体的自我保护能力、促进微量元素的吸收和肠蠕动,预防便秘。
本发明的有益效果是:1)本发明与传统米粉相比,省去了传统工艺的繁琐,可直接用50℃的温开水冲调食用、简单方便;2)本发明营养成分全面,能满足婴儿对食品营养的要求;3)本发明能促进大脑发育、提高记忆力,还可促进肠蠕动和消化吸收,增强免疫力,预防便秘。

一种营养助消化的2段婴幼儿米粉,包括下述重量份的组份:糙米30%、小米20%、燕麦10%、小麦12%、玉米8%、胡萝卜10%、菠菜8%、蛋黄1%、食用添加剂1%。
所述食用添加剂为每100g米粉中含有卵磷脂125mg、低聚果糖(FOS)0.5g、低聚半乳糖(GOS)1g、二十二碳六烯酸(DHA)100mg。

一种营养助消化的2段婴幼儿米粉,包括下述重量份的组份:糙米35%、小米15%、燕麦12%、小麦10%、玉米10%、胡萝卜8%、菠菜6%、蛋黄2%、食用添加剂2%。
所述食用添加剂为每100g米粉中含有卵磷脂125mg、低聚果糖(FOS)0.5g、低聚半乳糖(GOS)1g、二十二碳六烯酸(DHA)100mg。

1.一种营养助消化的2段婴幼儿米粉,其特征在于,包括下述重量份的组份:糙米30-40%、小米10-20%、燕麦10-15%、小麦8-12%、玉米8-12%、胡萝卜5-10%、菠菜3-8%、蛋黄1-3%、食用添加剂1-3%。
2.根据权利要求1所述的一种营养助消化的2段婴幼儿米粉,其特征在于,包括下述重量份的组份:糙米35%、小米15%、燕麦12%、小麦10%、玉米10%、胡萝卜8%、菠菜6%、蛋黄2%、食用添加剂2%。
3.根据权利要求1或2所述的一种营养助消化的2段婴幼儿米粉,其特征在于,所述食用添加剂为每100g米粉中含有卵磷脂125mg、低聚果糖(FOS)0.5g、低聚半乳糖(GOS)1g、二十二碳六烯酸(DHA)100mg。
