技术领域
本发明涉及食品技术领域,具体涉及一种用于糖尿病患者的保健面粉,本发明还涉及保健面粉的制备方法。
背景技术
近年来,随着社会经济的发展和居民生活水平的提高,糖尿病的发病率及患病率逐年提高,糖尿病已成为威胁人民健康的重大社会问题。为了降低血糖并维持血糖的稳定,除正确坚持使用降糖药物以外,糖尿病及其潜在患者的饮食问题也益受到重视。
目前,市面上专供糖尿病患者的面食种类繁多,如含硒面粉、中药面粉等等。名称为“一种降血脂降血糖食品”的发明专利(申请号201110442904.6)公开了一种有降低血脂、降低血糖量的食品,它主要是由核桃仁、黑芝麻、南瓜仁、糯玉米、麦门冬、糯小米、苦荞麦等配制成的食品,分别经过去皮除籽等处理,再经过炒熟或烘干加工、粉碎成粉、再经过包装即得产品,该食品主要由于含有苦荞,因而对糖尿病有一定的辅助作用。但是,当将苦荞加入面粉来制作专供糖尿病患者食用时,由于苦荞口感差,难以受到欢迎。另外,由于加工精度较高,面粉中很多维生素特别是叶酸和维生素B12会流失,导致面粉中的维生素含量极低,而这些维生素对预防糖尿病并发症起着非常重要的作用。因此,为了满足广大糖尿病患者的实际需求,需要在发挥预防保健作用的同时并改善这类保健面粉的口感。
发明内容
本发明的目的在于克服现有技术的不足,提供一种口感好、营养价值高的用于糖尿病患者的保健面粉。
本发明的另一目的是提供该保健面粉的制备方法,该制备方法生产成本低廉,制备条件温和,营养物质流失少。
为实现以上本发明的目的,本发明采用如下的技术方案:
一种用于糖尿病患者的保健面粉,由下述重量份的干品原料制备而成:
小麦面粉100~400、苦荞麦粉20~50份、大米粉20~50份、马铃薯20~50份、山药10~30份、苦瓜1~10份、黄豆5~10份、茶叶5~10份、黑木耳2~5份、南瓜2~5份、叶酸0.1~1份、维生素B120.1~1份、黄芪1~5份、人参1~3份、莲子芯1~3份、鸡内金1~3份、银耳1~3份、葛根2~10份。
在上述技术方案的基础上,由下述重量份的干品原料制备而成:
小麦面粉200~300、苦荞麦粉30份、大米粉30份、马铃薯30份、山药20份、苦瓜5份、黄豆8份、茶叶8份、黑木耳3份、南瓜3份、叶酸0.1~1份、维生素B120.1~1份、黄芪3份、人参2份、莲子芯2份、鸡内金2份、银耳2份、葛根2~10份。
本发明保健面粉的制备方法包括以下步骤:
1)、按重量份分别称取马铃薯、山药、苦瓜、黄豆、茶叶、黑木耳、南瓜、黄芪、人参、莲子芯、鸡内金、银耳和葛根,干燥至含水量为5~10%后,置于粉碎机内过60~100目筛备用;
2)、按重量份称取小麦面粉、苦荞麦粉和大米粉,分别将步骤1)制得的细粉以及捣碎后的叶酸、维生素B12加入,在120rpm/min的速度下混合1~3min,再在150~200rpm/min速度下混合5~10min,即得成品。
本发明经科学的营养配比而成,经多次试验,面粉中加入了一定量叶酸和维生素B12,在不改变面粉口味的基础上,可弥补面粉在加工过程中该类维生素的流失,糖尿病患者长期服用对周围神经炎、糖尿病足等糖尿病并发症起到较好的预防作用
本发明在面粉中加入了苦荞麦和山药,山药含有丰富的粘液蛋白可掩盖苦荞麦的苦味,两者配伍较好地解决了苦荞麦口感差的问题,山药含有大量的淀粉酶、多酚氧化酶等物质,有利于脾胃消化吸收功能,山药还含有的粘液蛋白具有益肺止咳、降低血糖、延年益寿的功效。苦荞麦可发挥药理保健功能,能降血糖、降血脂、健脾胃、解疲劳、增强人体免疫力,长期食用对糖尿病、高血压病人有极好的食疗作用。
面粉中加入的黑木耳含有蛋白质、脂肪、糖类、粗纤维、胡萝卜素、核黄素外,还含有钙、磷、铁及多种氨基酸等;黑木耳多糖具有抗肿瘤、抗白细胞降低、抗放射、抗炎症等细胞保护作用;具有降低血脂、胆固醇、血液黏度和抗血栓形成作用;还具有降低血糖、抗糖尿病以及延缓衰老,增强SOD活力,减少有害物质自由基产生的功能。
加入的马铃薯含粗纤维,可促进胃肠蠕动,加速胆固醇在肠内的代谢,增强肠胃动力,对糖尿病人的正常饮食起到重要地辅助作用。
面粉中加入的茶叶中所含茶多酚、儿茶素、黄酮类物质、叶酸和硒等具有防癌和抗癌的作用,使食品兼具了清热解毒、生津止渴、消食解腻、利尿排毒、清心明目、提神醒脑之功效。
具体实施方式
实施例1
一种用于糖尿病患者的保健面粉,由下述重量份的干品原料制备而成:
小麦面粉250、苦荞麦粉30份、大米粉30份、马铃薯30份、山药20份、苦瓜5份、黄豆8份、茶叶8份、黑木耳3份、南瓜3份、叶酸0.5份、维生素B120.5份、黄芪3份、人参2份、莲子芯2份、鸡内金2份、银耳2份、葛根5份。
制备方法包括以下步骤:
1)、按重量份分别称取马铃薯、山药、苦瓜、黄豆、茶叶、黑木耳、南瓜、黄芪、人参、莲子芯、鸡内金、银耳和葛根,干燥至含水量为10%后,置于粉碎机内过100目筛备用;
2)、按重量份称取小麦面粉、苦荞麦粉和大米粉,分别将步骤1)制得的细粉以及捣碎后的叶酸、维生素B12加入,在120rpm/min的速度下混合2min,再在200rpm/min速度下混合5min,即得成品。
取本实施例所得用于糖尿病患者的保健面粉于辊式压面机组压延、切条、低温烘干后制成面条,进行口味评分实验,经过60人感官评价,有45人表示喜欢本实施例的味道,7人表示不喜欢本实施例的味道,剩下8人表示本实施例味道一般。
实施例2
与实施例1相比,一种用于糖尿病患者的保健面粉中:苦荞麦粉为20份、山药为10份,其余不变。
制备方法同于实施例1。
取本实施例所得用于糖尿病患者的保健面粉于辊式压面机组压延、切条、低温烘干后制成面条,进行口味评分实验,经过60人感官评价,有42人表示喜欢本实施例的味道,9人表示不喜欢本实施例的味道,剩下9人表示本实施例味道一般。
实施例3
与实施例1相比,一种用于糖尿病患者的保健面粉中:苦荞麦粉为50份、山药为30份,其余不变。
制备方法同于实施例1。
取本实施例所得用于糖尿病患者的保健面粉于辊式压面机组压延、切条、低温烘干后制成面条,进行口味评分实验,经过60人感官评价,有40人表示喜欢本实施例的味道,11人表示不喜欢本实施例的味道,剩下9人表示本实施例味道一般。
典型案例
刘先生,男,65岁,患II型糖尿病7余年,一日三餐前服用二甲双胍肠溶片降糖,每餐以米饭(20~30g)为主食,配蔬菜和水果,多次医院检测血糖均不稳定,餐后血糖在11~13mmol/L之间波动。以实施例1的面粉为主食,且每餐食用少量蔬菜,其对该主食口感较好,无异常口味。二甲双胍肠溶片的服用剂量和服用时间不变,一个月后多次检测血糖均正常(空腹血糖低于6.2mmol/L,餐后血糖低于11.1mmol/L)。

Claims (3)
1.一种用于糖尿病患者的保健面粉,其特征在于,所述保健面粉由下述重量份的干品原料制备而成:
小麦面粉100~400、苦荞麦粉20~50份、大米粉20~50份、马铃薯20~50份、山药10~30份、苦瓜1~10份、黄豆5~10份、茶叶5~10份、黑木耳2~5份、南瓜2~5份、叶酸0.1~1份、维生素B120.1~1份、黄芪1~5份、人参1~3份、莲子芯1~3份、鸡内金1~3份、银耳1~3份、葛根2~10份。
2.如权利要求1所述的一种用于糖尿病患者的保健面粉,其特征在于,所述保健面粉由下述重量份的干品原料制备而成:
小麦面粉200~300、苦荞麦粉30份、大米粉30份、马铃薯30份、山药20份、苦瓜5份、黄豆8份、茶叶8份、黑木耳3份、南瓜3份、叶酸0.1~1份、维生素B120.1~1份、黄芪3份、人参2份、莲子芯2份、鸡内金2份、银耳2份、葛根2~10份。
3.一种用于糖尿病患者的保健面粉的制备方法,其特征在于包括以下步骤:
1)、按重量份分别称取马铃薯20~50份、山药10~30份、苦瓜1~10份、黄豆5~10份、茶叶5~10份、黑木耳2~5份、南瓜2~5份、黄芪1~5份、人参1~3份、莲子芯1~3份、鸡内金1~3份、银耳1~3份、葛根2~10份,干燥至含水量为5~10%后,置于粉碎机内过60~100目筛备用;
2)、按重量份称取小麦面粉100~400、苦荞麦粉20~50份、大米粉20~50份,分别将步骤1)制得的细粉以及捣碎后的叶酸0.1~1份、维生素B120.1~1份加入,在120rpm/min的速度下混合1~3min,再在150~200rpm/min速度下混合5~10min,即得成品。
