背景技术
黑芝麻糊是以黑芝麻为主要原料,加入其它五谷杂粮调制而成的一种糊状食品,它营养丰富,清甜麻香,可以解馋,余味无穷,自古以来就被认为是滋补强身、延年益寿的佳品,如果选择添加适当的配料,还具有其它的保健功效。中医认为,芝麻味甘、性平,有补血、润肠、通乳、养发等功效,黑芝麻糊的效用更胜鲜奶,经常食用可使皮肤光滑、少皱纹,还可令肤色红润白净,更可缓解便秘,是深受人们喜欢的一种传统养生保健食品。
目前,公知的市场上所销售的黑芝麻糊主要以添加核桃或红枣来增加其保健功能,含有多种添加剂,经常食用对身体健康不利,此类黑芝麻糊的保健对象主要是针对老人或妇女,但口味单一,保健功效不全面,多食易觉得甜腻和上火,且制备方法复杂,不利于家庭制作食用,不能满足不同市场和人群的需求。
发明内容
为了弥补现有技术的缺陷,本发明提供一种具有原材料易得、制备简单、保健功效全面、口感清爽和多食不易上火的保健黑芝麻糊及其制备方法。
本发明的技术方案如下,
本发明所述的保健黑芝麻糊,包括以下原料和重量份数:黑芝麻80-100份,白花菜20-40份,蒲桃15-30份、糯米粉20-50份,粘米粉10-30份,木糖醇5-20份。
以上所述的黑芝麻,又名:胡麻,油麻,巨胜和脂麻等,拉丁学名:Semen Sesami Nigrum,属胡麻属,为胡麻科脂麻的黑色种子,含有大量的脂肪和蛋白质,还有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分,可以做成各种美味的食品,营养价值十分丰富,另外,黑芝麻的营养成分中还包括了极其珍贵的芝麻素和黑色素等物质。黑芝麻药食两用,具有“补肝肾,滋五脏,益精血,润肠燥”等保健功效,被视为滋补圣品,一方面是因为含有优质蛋白质和丰富的矿物质,另一方面是因为含有丰富的不饱和脂肪酸、维生素E和珍贵的芝麻素及黑色素。黑芝麻所含有的多种人体必需氨基酸在维生素E、维生素B1的作用参与下,能加速人体的代谢功能;黑芝麻含有的铁和维生素E是预防贫血、活化脑细胞、消除血管胆固醇的重要成分;黑芝麻含有的脂肪大多为不饱和脂肪酸,有延年益寿的作用;一般素食者应多吃黑芝麻,而脑力工作者更应多吃黑芝麻。黑芝麻所含有的卵磷脂是胆汁中的成分之一,如果胆汁中的胆固醇过高及与胆汁中的胆酸、卵磷脂的比例失调,均会沉积而形成胆结石,卵磷脂可以分解、降低胆固醇,所以卵磷脂可以防止胆结石的形成。现代医学研究结果证实,常吃黑芝麻可以帮助人们预防和治疗胆结石,同时还有健脑益智、延年益寿的作用。确实是中老年人常用的保健佳品。黑芝麻性味归经:甘,平。归肝、肾、大肠经。功能主治:补肝肾,益精血,润肠燥。用于头晕眼花,耳鸣耳聋,须发早白,病后脱发和肠燥便秘等。中医中药理论认为,黑芝麻具有补肝肾、润五脏、益气力、长肌肉、填脑髓的作用,可用于治疗肝肾精血不足所致的眩晕、须发早白、脱发、腰膝酸软、四肢乏力、步履艰难、五脏虚损、皮燥发枯、肠燥便秘等病症,在乌发养颜方面的功效,更是有口皆碑。
以上所述的白花菜,别名:羊角菜、五梅草,臭花菜、猪屎草、五梅草、白花仔草、屡析草,拉丁名:Cleome gynandra L.。属白花菜属,为一年生草本,是低海拔村边、道旁、荒地或田野间常见的杂草及药用植物,有杀头虱、家畜及植物寄生虫之效,临床应用广泛,能疗头痛,有抗痉挛作用,并为产科临床用药,广泛分布于中国大部地区,白花菜全草入药,味苦辛微毒,主治下气,煎水洗痔。捣烂敷风湿痹痛,擂酒饮止疟;制成混敷剂,能疗头痛,局部疼痛及预防化脓累积;因有抗痉挛作用,亦为产科临床用药,白花菜含有丰富的氨基酸及人体必须的钙、铁等元素,可炒肉、蛋炒或单炒,其味清香鲜美,具有清热解毒、活血止痛、祛风降湿、提神生津、开胃建脾、增进食欲、防病治病等多种保健功效,全株还能作药用,功能主治:清热解毒、风湿痹痛、跌打损伤、疟疾、痢疾、白带、痔疮等症状。
以上所述的蒲桃,又名:水蒲桃、香果、响鼓、风鼓、铃铛果,拉丁名:Syzygium jambos (L.) Alston,属蒲桃属,为桃金娘科的常绿乔木,蒲桃味甘、酸,微寒,人手太阴肺、足太阳膀胱、足阳明胃经,具有生津液,强筋骨,止咳除烦,补益气血和通利小便等保健功效,可用于气血虚弱,肺虚咳嗽,心悸盗汗,风湿痹痛,淋症,浮肿,烦渴,痘疹不透等症,也可用于脾虚气弱,气短乏力,水肿,小便不利等病症的辅助治疗,蒲桃果味酸甜多汁,并具有一定的营养价值,具有特殊的玫瑰香气,除可鲜食外,还可利用这种独特的香气,与其他原料制成果膏、蜜饯或果酱,果汁经过发酵后,还可酿制高级饮料。
以上所述的糯米粉,又名:糯米面,是由糯米浸泡一夜,水磨打成浆水,装入布袋中吊至水滴干,把湿的糯米粉团掰碎晾干后既得成品的糯米粉,市场上有现成糯米粉出售,它可以制作汤团、元宵之类食品和家庭小吃,以独特的风味闻名。糯米含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B1、维生索B2、烟酸及淀粉等,营养丰富,为温补强壮食品,糯米味甘,性温,入脾、胃、肺经,具有补中益气,健脾养胃,止虚汗之功效,对脾胃虚寒,食欲不佳,腹胀腹泻有一定缓解作用;糯米有收涩作用,对尿频,盗汗有较好的食疗效果。
以上所述的粘米粉,又名大米粉或籼米粉,用禾本科植物稻的种子(大米)磨成的粉,是多种食品的原料,是各种大米中糯性最低的品种,有着糯米粉不可代替的作用。纯正的粘米粉并非是雪白色的,而是微微带点灰白,粘米粉性平,味甘。具有补中益气、健脾养胃、益精强志、和五脏、通血脉、聪耳明目、止烦、止渴和止泻等多种保健功效。

2)榨汁

3)干燥
将步骤2)所得的蒲桃汁和白花菜汁混合均匀,放入离心喷雾干燥机内干燥制成粉末,得到粉末混合物A,备用;
4)炒制
a.将步骤1)所得的黑芝麻放入温度为40-60℃的炒锅内炒至表皮微黄,或放入温度为110-150℃的烤箱内烘烤5-8分钟至表皮微黄,得到熟黑芝麻,备用;
b.将糯米粉和粘米粉混合均匀,放入温度为40-60℃的炒锅内炒至颜色微黄,得到粉末混合物B,备用;
5)粉碎
将步骤4)所得的熟黑芝麻置于超微粉碎机,粉碎为100-300目的粉末,得到黑芝麻粉末,备用;
6)混合
将步骤3)所得的粉末混合物A、步骤4)所得的粉末混合物B、步骤5)所得的黑芝麻粉末和木糖醇混合均匀,得到黑芝麻糊粉末;
7)过筛
将步骤6)所得的黑芝麻糊粉末过200-300目筛网,去除杂物,得到黑芝麻糊半成品;
8)包装杀菌
将步骤7)所得的黑芝麻糊半成品进行真空包装,每份50-80g,进行辐照灭菌,装入外包装纸盒,得到成品,存放阴凉干燥的仓库中。
本发明突出的实质性特点和显著的进步是:

实施例1:
本发明所述的保健黑芝麻糊,由以下原料和重量份数组合制成:黑芝麻80份,白花菜20份,蒲桃15份、糯米粉20份,粘米粉10份,木糖醇5份。
其制作包括清洗、榨汁、干燥、炒制、粉碎、混合、过筛和包装杀菌步骤,其具体制作步骤如下:

5)粉碎
将步骤4)所得的熟黑芝麻置于超微粉碎机,粉碎为200目的粉末,得到黑芝麻粉末,备用;
6)混合
将步骤3)所得的粉末混合物A、步骤4)所得的粉末混合物B、步骤5)所得的黑芝麻粉末和木糖醇混合均匀,得到黑芝麻糊粉末;
7)过筛
将步骤6)所得的黑芝麻糊粉末过200目筛网,去除杂物,得到黑芝麻糊半成品;
8)包装杀菌
将步骤7)所得的黑芝麻糊半成品进行真空包装,每份50g,进行辐照灭菌,装入外包装纸盒,得到成品,存放阴凉干燥的仓库中。

2.根据权利要求1所述的保健芝麻糊,其特征在于,所述的黑芝麻、白花菜、蒲桃、糯米粉、粘米粉和木糖醇的重量份数为:黑芝麻80-100份,白花菜20-40份,蒲桃15-30份、糯米粉20-50份,粘米粉10-30份,木糖醇5-20份。
3.根据权利要求1所述的保健芝麻糊及其制备方法,其特征在于,包括清洗、榨汁、干燥、炒制、粉碎、混合、过筛和包装杀菌步骤,其具体制作步骤如下:
1)清洗
.将黑芝麻、白花菜和蒲桃分别用清水清洗干净,去除枝干树叶和杂物,沥干水分,备用;
2)榨汁
a.将蒲桃去核,切成碎粒,放入榨汁机内加入其重量1-3倍的水进行榨汁,过滤,去除残渣,得到蒲桃汁,备用;

将步骤4)所得的熟黑芝麻置于超微粉碎机,粉碎为100-300目的粉末,得到黑芝麻粉末,备用;
6)混合
将步骤3)所得的粉末混合物A、步骤4)所得的粉末混合物B、步骤5)所得的黑芝麻粉末和木糖醇混合均匀,得到黑芝麻糊粉末;
