本发明涉及食品领域,尤其涉及一种蓝莓糕点及其制备方法。
背景技术
糕点是我国的传统美食,常用于招呼客人或者休闲时使用。随着人们生活水平的提高,人们对养生愈来愈重视,因而人们对食品的要求也随之提高。现在的糕点不仅仅要求美味,更要求具有营养价值。
蓝莓是一种营养价值非常高的水果果肉富含丰富的维生素、蛋白质和矿物质等营养元素,其中蓝莓中独特的珍贵的花青苷色素在众水果中比重是非常的高,还有蓝莓中富含丰富的蛋白质、膳食纤维、脂肪、维生素等营养元素,蓝莓中这些富含的营养元素都高于其他水果富含的营养。蓝莓中还包含着丰富的钙、铁、磷、钾、锌等微量矿物元素,这些矿物元素的存在比例明显高于其他水果。另外,蓝莓中含量非常高的花青苷色素对人体的眼睛具有很好地保养的作用,它可以缓解眼睛疲劳、改善人的视力,蓝莓不仅含有维生素A,其主要成分是花青素,可直接加速视网膜、视紫质的合成与再生,让眼睛绽放活力光彩。
发明内容
本发明的目的是克服现有技术的不足,提供一种可以缓解眼睛疲劳、改善视力的蓝莓糕点及其制备方法。
为了实现上述目的本发明采用如下技术方案:
一种蓝莓糕点,由下述重量份的原料制成:蓝莓20-30份、燕麦粉60-80份、绿豆粉50-70份、菊花2-3份、桑葚1-2份、扁豆花1-3份、丹参2-3份、甘草2-3份、五味子2-3份、雪白乳化油10-12份、花生仁3-5份、核桃仁2-3份、甜味剂5-6份。
所述的甜味剂由一水葡萄糖10-15份、三氯蔗糖0.5-1.5份、山梨糖醇20-25份、低聚异麦芽糖15-20份组成。
所述的蓝莓糕点的制备方法,包括以下制备步骤:
(1)将蓝莓洗净后,用榨汁机打碎,过滤,分别得到蓝莓汁和蓝莓泥,然后将白糖加入蓝莓泥中,腌制3-5小时;
(2)将花生仁和核桃仁混合,放入180-200℃的热锅中翻炒,翻炒8-10分钟后取出冷却,当温度降至50-60℃时,磨粉,过80-100目筛网,制得辅料粉;
(3)将菊花、桑葚、扁豆花、丹参、甘草、五味子加入适量水中,加热煎煮,得到煎煮液;
(4)将燕麦粉、绿豆粉和步骤(2)制得的辅料粉混合,加入到煎煮液中,搅拌混合后加入步骤(1)中得到的蓝莓汁、雪白乳化油和甜味剂,充分搅拌混合至黏稠糊状,将糕点分成小份放入模具中,然后将腌制后的蓝莓泥均匀铺在表面,按压成型后蒸熟,冷却包装,即可。
与已有技术相比,本发明的有益效果如下:
(1)本发明添加蓝莓到糕点中,蓝莓中的花青素可以促进视网膜细胞中的视紫质再生,预防近视,增进视力。蓝莓中富含丰富维生素、矿物质和纤维元素等营养成分,多多食用蓝莓可以提高人体免疫力,提高人体素质。另外蓝莓中丰富的维生素C具有预防癌症,抵抗心脏病的功效。另外,蓝莓中还有丰富的抗氧化剂,可以延缓人体的衰老。蓝莓中的花色苷有很强的抗氧化性,可抗自由基、延缓衰老、防止细胞的退行性改变,对于抑制血小板聚集,预防大脑病变、动脉硬化等病症具有一定的效果,同时还可以强化毛细血管、改善血液循环、减弱血小板的黏滞性、防止血凝块产生、增强心脑功能、增强儿童骨质密度、防止便秘。此外,蓝莓还可以治疗一般的伤风感冒、咽喉疼痛以及腹泻等症。
(2)本发明辅以菊花、桑葚、扁豆花、丹参、甘草、五味子等可以保护视力的中药成分,使糕点具有保健功能。

一种蓝莓糕点,由下述重量份的原料制成:蓝莓25份、燕麦粉70份、绿豆粉60份、菊花2份、桑葚2份、扁豆花2份、丹参3份、甘草2份、五味子2份、雪白乳化油10份、花生仁3份、核桃仁3份、甜味剂6份。
所述的甜味剂由一水葡萄糖12份、三氯蔗糖1份、山梨糖醇22份、低聚异麦芽糖16份组成。
蓝莓糕点的制备方法:(1)将蓝莓洗净后,用榨汁机打碎,过滤,分别得到蓝莓汁和蓝莓泥,然后将白糖加入蓝莓泥中,腌制5小时;
(2)将花生仁和核桃仁混合,放入200℃的热锅中翻炒,翻炒10分钟后取出冷却,当温度降至60℃时,磨粉,过100目筛网,制得辅料粉;
(3)将菊花、桑葚、扁豆花、丹参、甘草、五味子加入适量水中,加热煎煮,得到煎煮液;
