Abstract
一种果蔬香肠及其制备方法,其特征在于由下列重量份的原料制成:鱼肉95-100、白糖3-4、盐3-4、生抽2-3、麦芽糖1-2、苹果4-5、猕猴桃3-4、橙子4-5、胡萝卜2-3、鱼胶粉1-1.5、螺旋藻粉1.5-2、蜂王浆冻干粉2-3、金银花3-4、苹果叶4-5、佩兰2-3、薄荷2.5-4、蒲公英2-3.5、冰糖草2-3、耳草3-4。本发明添加了多种果蔬,可为人体补充多种维生素,此外还具有抗氧化、清热解毒、抗炎、补虚疗风、健胃、发汗、利尿、清心明目的功效。

技术领域
本发明属于食品加工技术领域,涉及一种香肠,尤其涉及一种果蔬香肠及其制备方法。
背景技术
香肠在中国有着悠久的历史,是肉经过绞切斩断,添加调味料,灌入肠衣,经一定工艺制成的肉制品。现在市场上的香肠多添加了亚硝酸盐,长期食用会危害人体健康。此外,现有香肠口味单一,营养价值不高,已不能满足人们的消费需求。
发明内容
本发明的目的是提供一种果蔬香肠及其制备方法,本发明具有口感好,营养健康的特点。
本发明所采用的技术方案是:
一种果蔬香肠,其特征在于由以下重量份的原料制成:
鱼肉95-100、白糖3-4、盐3-4、生抽2-3、麦芽糖1-2、苹果4-5、猕猴桃3-4、橙子4-5、胡萝卜2-3、鱼胶粉1-1.5、螺旋藻粉1.5-2、蜂王浆冻干粉2-3 、金银花3-4、苹果叶4-5、佩兰2-3、薄荷2.5-4、蒲公英2-3.5、冰糖草2-3、耳草3-4。
所述的果蔬香肠的制备方法,其特征在于包括以下步骤:
(1)将苹果、猕猴桃、橙子、胡萝卜去皮,切块,混合打浆,过滤分离果蔬汁和果蔬渣,再将橙子皮绞成泥状,得到橙皮泥;
(2)将果蔬渣和橙皮泥混合,加一倍的水,大火煮至沸腾,加入麦芽糖,熬至麦芽糖融化,加入鱼胶粉,小火熬至黏稠状,得到果蔬酱;
(3)将金银花、苹果叶、佩兰、薄荷、蒲公英、冰糖草、耳草绞碎,经过滤分离药汁和药渣,将药渣加4-5倍水煎煮,小火煎煮2-3小时,过滤后所得提取液与药汁合并;
(4)将鱼肉切块,加入白糖、盐、生抽、果蔬汁、步骤(3)所得物料腌制2-3小时,与果蔬酱和剩余物料一同投入到斩拌机内斩拌5-6分钟,得到馅料,经香肠常规生产工艺制成香肠,即得。
本发明的有益效果为:
本发明添加了多种果蔬,可为人体补充多种维生素;同时鱼胶粉具有抗氧化的作用,能促进细胞的新陈代谢,延缓细胞老化;螺旋藻对高血压、高血糖、高血脂有一定预防和抑制作用,能够美容和减肥;此外,金银花可清热解毒、抗炎、补虚疗风,佩兰可健胃、发汗、利尿,薄荷可清心明目,蒲公英、冰糖草、耳草清热可清热解毒。
具体实施方式
一种果蔬香肠,其特征在于由以下重量份(公斤)的原料制成:
鱼肉100、白糖3、盐4、生抽3、麦芽糖1、苹果4、猕猴桃4、橙子5、胡萝卜3、鱼胶粉1、螺旋藻粉2、蜂王浆冻干粉3 、金银花4、苹果叶5、佩兰3、薄荷4、蒲公英2、冰糖草3、耳草4。
所述的果蔬香肠的制备方法,包括以下步骤:
(1)将苹果、猕猴桃、橙子、胡萝卜去皮,切块,混合打浆,过滤分离果蔬汁和果蔬渣,再将橙子皮绞成泥状,得到橙皮泥;
(2)将果蔬渣和橙皮泥混合,加一倍的水,大火煮至沸腾,加入麦芽糖,熬至麦芽糖融化,加入鱼胶粉,小火熬至黏稠状,得到果蔬酱;

1.一种果蔬香肠,其特征在于由以下重量份的原料制成:
鱼肉95-100、白糖3-4、盐3-4、生抽2-3、麦芽糖1-2、苹果4-5、猕猴桃3-4、橙子4-5、胡萝卜2-3、鱼胶粉1-1.5、螺旋藻粉1.5-2、蜂王浆冻干粉2-3 、金银花3-4、苹果叶4-5、佩兰2-3、薄荷2.5-4、蒲公英2-3.5、冰糖草2-3、耳草3-4。
2.根据权利要求1所述的果蔬香肠的制备方法,其特征在于包括以下步骤:
(1)将苹果、猕猴桃、橙子、胡萝卜去皮,切块,混合打浆,过滤分离果蔬汁和果蔬渣,再将橙子皮绞成泥状,得到橙皮泥;
(2)将果蔬渣和橙皮泥混合,加一倍的水,大火煮至沸腾,加入麦芽糖,熬至麦芽糖融化,加入鱼胶粉,小火熬至黏稠状,得到果蔬酱;
(3)将金银花、苹果叶、佩兰、薄荷、蒲公英、冰糖草、耳草绞碎,经过滤分离药汁和药渣,将药渣加4-5倍水煎煮,小火煎煮2-3小时,过滤后所得提取液与药汁合并;
(4)将鱼肉切块,加入白糖、盐、生抽、果蔬汁、步骤(3)所得物料腌制2-3小时,与果蔬酱和剩余物料一同投入到斩拌机内斩拌5-6分钟,得到馅料,经香肠常规生产工艺制成香肠,即得。
