Abstract
本发明提供了一种无糖水果罐头及其制备方法,其中无糖水果罐头以重量份计包括:橘子5~8份,橙子3~7份,柠檬1~3份,柚子1~4份,人参果1~3份,火龙果3~6份,山楂1~3份,杨桃1~3份,蜂蜜3~6份,异麦芽酮糖4~9份,高麦芽糖浆3~7份,纯净水20~50份。制备方法为先将蜂蜜、异麦芽酮糖和高麦芽糖浆加入纯净水中煮沸得到糖水,然后将水果洗净去皮切块得到水果块,最后将水果块加到糖水中,即可。本发明采用蜂蜜、异麦芽酮糖和高麦芽糖浆作为甜味剂的主要来源,完全取代传统罐头配方中所用的冰糖,使水果罐头含糖量明显降低;另外,添加多种水果,营养丰富,滋养美味,美容养颜。

本发明属于食品技术领域,具体涉及一种无糖水果罐头及其制备方法。
背景技术
传统罐头配方中所添加的蔗糖和葡萄糖含量通常高达60%,不仅甜度高,消费者食用后很容易引起血糖升高,水果罐头属于脂肪含量偏高的食品原料,热量值较高。随着人们生活水平提高,更多的消费者开始关注食品健康问题,对高糖、高脂肪和高热量食品选择慎重,更倾向于选择低糖、低脂肪和低热量的健康食品。
发明内容
本发明的目的是克服现有技术的不足而提供了一种低甜度的无糖水果罐头,不仅营养丰富,而且滋养美味。
一种无糖水果罐头,以重量份计包括:橘子5~8份,橙子3~7份,柠檬1~3份,柚子1~4份,人参果1~3份,火龙果3~6份,山楂1~3份,杨桃1~3份,蜂蜜3~6份,异麦芽酮糖4~9份,高麦芽糖浆3~7份,纯净水20~50份。

步骤2,将橘子、橙子、柠檬、柚子和火龙果去皮切块,再将山楂、人参果和杨桃洗净切块,混合均匀;
步骤3,将步骤2所得水果块加入步骤1所得糖水中,即可。
本发明与现有技术相比,其显著优点在于:第一,采用蜂蜜、异麦芽酮糖和高麦芽糖浆作为甜味剂的主要来源,完全取代传统罐头配方中所用的冰糖,使水果罐头含糖量明显降低;第二,添加多种水果,营养丰富,滋养美味,美容养颜。

一种无糖水果罐头,以重量份计包括:橘子5份,橙子3份,柠檬1份,柚子1份,人参果1份,火龙果3份,山楂1份,杨桃1份,蜂蜜3份,异麦芽酮糖4份,高麦芽糖浆3份,纯净水20份。
上述无糖水果罐头的制备方法,包括以下步骤:
步骤1,将蜂蜜、异麦芽酮糖和高麦芽糖浆加入纯净水中,煮沸,至蜂蜜、异麦芽酮糖和高麦芽糖浆完全溶解,然后冷却至室温;
步骤2,将橘子、橙子、柠檬、柚子和火龙果去皮切块,再将山楂、人参果和杨桃洗净切块,混合均匀;
步骤3,将步骤2所得水果块加入步骤1所得糖水中,即可。
实施例2
一种无糖水果罐头,以重量份计包括:橘子8份,橙子7份,柠檬3份,柚子4份,人参果3份,火龙果6份,山楂3份,杨桃3份,蜂蜜6份,异麦芽酮糖9份,高麦芽糖浆7份,纯净水50份。

上述无糖水果罐头的制备方法同实施例1。
本发明制备的无糖水果罐头滋养美味,经检测,采用蜂蜜、异麦芽酮糖和高麦芽糖浆作为甜味剂的主要来源,经检测含糖量比市售普通水果罐头低50%~60%。

1.一种无糖水果罐头,其特征在于,以重量份计包括:橘子5~8份,橙子3~7份,柠檬1~3份,柚子1~4份,人参果1~3份,火龙果3~6份,山楂1~3份,杨桃1~3份,蜂蜜3~6份,异麦芽酮糖4~9份,高麦芽糖浆3~7份,纯净水20~50份。
2.根据权利要求1所述的无糖水果罐头,其特征在于,以重量份计包括:橘子6份,橙子5份,柠檬2份,柚子3份,人参果2份,火龙果4份,山楂2份,杨桃2份,蜂蜜5份,异麦芽酮糖7份,高麦芽糖浆5份,纯净水40份。
3.一种如权利要求1说2所述的无糖水果罐头的制备方法,包括以下步骤:
步骤1,将蜂蜜、异麦芽酮糖和高麦芽糖浆加入纯净水中,煮沸,至蜂蜜、异麦芽酮糖和高麦芽糖浆完全溶解,然后冷却至室温;
步骤2,将橘子、橙子、柠檬、柚子和火龙果去皮切块,再将山楂、人参果和杨桃洗净切块,混合均匀;
步骤3,将步骤2所得水果块加入步骤1所得糖水中,即可。
