Abstract
一种黑豆牛肉酱,由以下重量份原料:面酱40-50、黄豆酱60-70、黑豆10-15、刀豆8-10、柿子15-20、洋葱60-70、榛子20-30、石斛4-5、红景天2-3、车前草1-2、桃树叶1-2等;本发明的一种黑豆牛肉酱,在配方中增加黑豆,具有很好的补肾的作用,且具有丰富的植物蛋白,同时还添加石斛、红景天等清热解毒、清肺等功效的中药材的提取物,具有很好的保健功效,作为方便面酱料是一种能够替代传统酱料的营养酱料,营养丰富,口感极佳。

本发明主要涉及方便面酱料及其制备方法技术领域,尤其涉及一种黑豆牛肉酱。
背景技术
方便面是人们在日常生活中,是一种代替主食的重要副食品,其味道鲜香可口,深受人们喜爱,主要是因为方便面中附带的酱料和粉料,而市场上现有的方便面酱料除了口感好,可以作为调味食用以外,并没有很高的营养价值。
发明内容
本发明为了弥补已有技术的缺陷,提供一种黑豆牛肉酱的制备方法。
本发明是通过以下技术方案实现的:一种黑豆牛肉酱,由以下重量份原料:面酱40-50、黄豆酱60-70、黑豆10-15、刀豆8-10、柿子15-20、洋葱60-70、榛子20-30、石斛4-5、红景天2-3、车前草1-2、桃树叶1-2、栗壳1-2、枣皮2-3、小茴香1-2、桂皮0.8-1、芝麻油130-140、薏仁油15-18、辣椒粉10-15、生姜粉20-25、蒜泥15-20、白醋20-30、白酒10-13、水适量。
一种乌梅牛肉酱的制备方法,包括以下步骤:
(1)将黑豆、刀豆洗净,置于容器中,加入白醋、白酒,浸泡7-8小时,将黑豆、刀豆取出,置于锅中,加入面酱、黄豆酱、芝麻油,炒至豆熟;
(2)将柿子、洋葱去皮,与榛子一起置于锅中,加入适量的水,加热焖煮20-30分钟,将柿子、洋葱、榛子捞出,做成泥状,得到柿子泥备用;
(3)将石斛、红景天、车前草、桃树叶、栗壳、枣皮、小茴香、桂皮用5-10倍量的水加热提取,将提取液浓缩,得到浓缩液;
(4)将除水以外的剩余物料与步骤1中的所有物料、柿子泥、浓缩液合并,搅拌均匀后,包装即可。
本发明的优点是:本发明的一种黑豆牛肉酱,在配方中增加黑豆,具有很好的补肾的作用,且具有丰富的植物蛋白,同时还添加石斛、红景天等清热解毒、清肺等功效的中药材的提取物,具有很好的保健功效,作为方便面酱料是一种能够替代传统酱料的营养酱料,营养丰富,口感极佳。
具体实施方式
一种黑豆牛肉酱,由以下重量份(Kg)原料:面酱40、黄豆酱60、黑豆10-15、刀豆8、柿子15、洋葱60、榛子20、石斛4、红景天2、车前草1、桃树叶1、栗壳1、枣皮2、小茴香1、桂皮0.8、芝麻油130、薏仁油15、辣椒粉10、生姜粉20、蒜泥15、白醋20、白酒10、水适量。
一种乌梅牛肉酱的制备方法,包括以下步骤:

1.一种黑豆牛肉酱,其特征在于,由以下重量份原料:面酱40-50、黄豆酱60-70、黑豆10-15、刀豆8-10、柿子15-20、洋葱60-70、榛子20-30、石斛4-5、红景天2-3、车前草1-2、桃树叶1-2、栗壳1-2、枣皮2-3、小茴香1-2、桂皮0.8-1、芝麻油130-140、薏仁油15-18、辣椒粉10-15、生姜粉20-25、蒜泥15-20、白醋20-30、白酒10-13、水适量。
2.如权利要求1所述的一种乌梅牛肉酱的制备方法,其特征在于,包括以下步骤:
(1)将黑豆、刀豆洗净,置于容器中,加入白醋、白酒,浸泡7-8小时,将黑豆、刀豆取出,置于锅中,加入面酱、黄豆酱、芝麻油,炒至豆熟;
(2)将柿子、洋葱去皮,与榛子一起置于锅中,加入适量的水,加热焖煮20-30分钟,将柿子、洋葱、榛子捞出,做成泥状,得到柿子泥备用;
