本发明属于保健品制备领域,具体涉及一种苦荞醋蛋液的制备方法。
背景技术
醋浸泡的禽蛋即醋蛋,无论国内外都是传统的食疗保健品,是具康复、治疗和预防三效合一的健康饮品。醋蛋液不但同时具备了醋、鸡蛋及饮用时加入蜂蜜的所有营养成分和食疗作用,而且在制作醋蛋过程中,鸡蛋中的蛋清在酸性条件下降解,生成了具有生物学活性的低分子量的氨基酸及寡肽,从而使其中的醋、鸡蛋及蜂蜜的食疗功能被醋蛋液可以治疗中老年人的骨质疏松,并通过钙的吸收来防治高血压。有专家学者研究发现,醋蛋液作为天然保健制品的醋蛋液,长期服用是安全的,对人体没有毒副作用。但是糖尿病病人服用醋蛋液,其中大都含有蜂蜜,蜂蜜约含80%的糖类,其中约45%是不经消化就可以直接吸收的葡萄糖,5%左右为易消化吸收的蔗糖,吃蜂蜜后因为这两种糖吸收很快,所以对血糖的影响很大,糖尿病患者在血糖和尿糖还没有得到控制的情况下,吃蜂蜜只会使血糖更高,所以传统工艺的醋蛋液不适宜糖尿病患者食用。例如:中国专利CN201210541024.9公开了一种蜂蜜醋蛋液功能保健饮料,由醋、鸡 蛋液、蜂蜜、糖和水组成,各组分占饮料总重量的百分比为醋4~8%、鸡蛋液2~6%、蜂蜜4~8%、糖2~6%、水75~85%。此发明中含有蜂蜜和糖,对糖尿病患者来讲不易食用。
然而不加蜂蜜或糖,传统做法很难有效清除醋蛋液中的异味,口感较差,使人难以长期坚持服用。还有些制作方法复杂,大部分采用对蛋液匀质、加入蛋白酶等生物转化反应等方法,制作工艺要求高,不易掌握。
本发明采用苦荞醋制作的醋蛋液后不用加蜂蜜或糖,特别适合糖尿病患者,口感较好,另外苦荞醋还含有黄酮类物质,对治疗三高有也有很好的效果。

本发明要解决的技术问题:现有技术中的醋蛋液都加蜂蜜或糖不适合糖尿病患者,本发明制作的醋蛋液后不用加蜂蜜,特别适合糖尿病患者,口感较好,另外苦荞醋还含有黄酮类物质,对治疗三高有很好的效果。
本发明采用以下技术方案:苦荞醋蛋液的制备方法,包括以下步骤:
(1)将鸡蛋清洗干净,灭菌杀毒;
(2)放入密闭的容器中,加入苦荞醋,封口,存放3~15天;
(3)待鸡蛋蛋壳完全被苦荞醋溶解后,经光检台筛选,完成生产。

本发明一种苦荞醋蛋液的制备方法,步骤(1)中鸡蛋的灭菌杀毒的方法具体为用酒精、盐水、双氧水逐次浸泡。
本发明苦荞醋蛋液的制备方法,步骤(2)中存放的位置为无阳光直射的室内环境,温度控制在5~15℃。
本发明苦荞醋蛋液的制备方法,苦荞醋的总酸值大于4。
本发明苦荞醋蛋液的制备方法,苦荞醋的总酸值为8。
本发明与现有技术相比,达到的有益效果:
(1)本发明采用苦荞醋制作的醋蛋液后不用加蜂蜜或糖,特别适合糖尿病患者。
(2)本发明采用苦荞醋制作的醋蛋液,苦荞醋还含有黄酮类物质,对治疗三高和糖尿病都有很好的效果。苦荞醋营养成分极高,非常丰富,含有生物类黄酮、多种维生素、18种氨基酸、粗蛋白、叶绿素及其硒、锌、镁、铬、钙等矿物质及微量元素,其独特的营养成分是黄酮类物质,其主要成分为芦丁。芦丁又名芸香甙、维生素P,含量占总黄酮的70%-90%,具有降低毛细血管脆性、改善微循环的作用,对糖尿病、高血压有着很好的食效。糖尿病人饮用苦荞醋蛋液后,口渴、饥饿、尿频、四肢酸软、周身乏力等症状得到改善,血糖、尿糖会逐渐恢复至正常水平,高血脂症糖尿病人的血脂得到改善。
除此之外,本发明的醋蛋液还具有以下效果:
1、推延和消弭疲劳。醋含有丰厚的无机酸,能促进糖代谢,并使肌肉中积存的乳酸和丙酮酸等惹起疲劳的物质分解而解除疲劳;2、调理体液酸碱度,维持人体内环境的绝对波动。醋是一种生理碱性食 品,由于人体每天食用少量成酸性食品喝点醋,可以维持人体内环境的酸碱均衡;3、协助消化,有助于增强肠胃消化功用。醋又能使食物中的钙、铁、磷等无机盐养分物质更多溶出,还能避免维生素C的被毁坏;4、预防衰老。醋能抑制和降低人体内过氧化脂类物质的构成,起到延缓机体衰老的作用;5、杀菌抗病毒。醋有很强的杀灭细菌,抑制病毒的才能,例如:伤寒杆菌、葡萄球菌、大肠杆菌、痢疾杆菌、嗜盐菌、流感病毒遇到醋都会被杀死或中止生成;6、防治高血压及动脉硬化。中医认可醋有活血散瘀作用,能促使血脉运转正常、血压颠簸;西医说醋能促进钠离子的排出,抑制体内盐分过剩,从而波动了血压;7、加强肾的排泄功用。醋能使尿液转向碱性,预防结石的构成,还会使酸性结石溶化;8、消脂。醋中所含氨基酸,可以促进人体内过多脂肪转变为体能耗费,还可使摄入的糖和蛋白质等养分物质的推陈出新顺利停止;9、抑杀蛔虫、蛲虫等寄生虫。例如:胆道蛔虫症患者,绞痛发作,翻腾难忍时,只需饮醋半杯,片刻就能让蛔虫中止活动,从而绞痛缓解。10、防癌作用。据日本的研讨报道,醋中含有抗癌物质;11、美容护肤。醋不但能抑制皮肤色素冷静,增加老年斑,而且能添加皮肤血液循环,肃清老死细胞,膨胀毛孔,使皮肤又滋养又润滑;12、补钙强骨。苦荞醋中的醋酸和鸡蛋壳中的钙分子结合成为醋酸钙,是人体最容易吸收的几种钙之一,所以服用醋蛋液能够帮助人体抵抗钙流失。
下面通过治疗案例进行具体说明
1,刘XX、男、49岁,贵州省六盘水市六枝特区平寨镇兴隆村人,为糖尿病患者,2012年2月16日在医院体检,得知自己又患有高血脂和高血压,收缩压(mmHg)为169,舒张压(mmHg)为95,甘油三酯为5.20mmol/L,食用本发明制作的苦荞醋蛋液,每个醋蛋液分5~7日服完,每日1次(约20~30毫升),于每天清晨服用,服用时加温开水2~3倍,充分搅拌后服,软蛋皮1次食完。连续一个月服用后,去医院复检,收缩压(mmHg)为160,舒张压(mmHg)为90,甘油三酯为4.80mmol/L,血糖的水平也有明显好转,多次检查均维持在5.5~6.8之间。
2,王XX、男、57岁,贵州省六盘水市水城县金盆乡干河村人,2009年7月18日被医院告知患上腰椎间盘突出,另外血糖偏高,他选择食用本发明制作的苦荞醋蛋液,每个醋蛋液分5~7日服完,每日1次(约20~30毫升),于每天清晨服用,服用时加温开水3~5倍,充分搅拌后服,软蛋皮1次食完。连续2月后,腰痛症状消失,到医院复查,发现腰椎间盘突出症状明显好转,血糖值恢复正常。
具体实施方式
实施例1
本发明苦荞醋蛋液的制备方法,包括以下步骤:
(1)将鸡蛋清洗干净,灭菌杀毒,具体为为用酒精、盐水、双氧水逐次浸泡;其中鸡蛋为农村传统方式喂养的鸡所下的土鸡蛋。
(2)放入密闭的容器中,加入苦荞醋,封口,存放12天,存放的位置为无阳光直射的室内环境,温度控制在10~12℃。
(3)待鸡蛋蛋壳完全被苦荞醋溶解后,经光检台筛选,完成生产。
其中苦荞醋的总酸值为5。
本发明醋蛋液的食用方法:开盖后用器具挑破醋液内的蛋膜,充分搅拌,再放置24小时,待蛋黄溶解,每天早晨空腹服用20~30毫升,建议兑水150毫升服用。
实施例2
本发明苦荞醋蛋液的制备方法,包括以下步骤:
(1)将鸡蛋清洗干净,灭菌杀毒,具体为为用酒精、盐水、双氧水逐次浸泡;其中鸡蛋为农村传统方式喂养的鸡所下的土鸡蛋;
(2)放入密闭的容器中,加入苦荞醋,封口,存放5天,存放的位置为无阳光直射的室内环境,温度控制在8~10℃;
(3)待鸡蛋蛋壳完全被苦荞醋溶解后,经光检台筛选,完成生产。
其中苦荞醋的总酸值为6。
本发明醋蛋液的食用方法:开盖后用器具挑破醋液内的蛋膜,充分搅拌,再放置24小时,待蛋黄溶解,每天早晨空腹服用20~30毫升,建议兑水150毫升服用。
实施例3
本发明苦荞醋蛋液的制备方法,包括以下步骤:
(1)将鸡蛋清洗干净,灭菌杀毒,具体为为用酒精、盐水、双氧水逐次浸泡;其中鸡蛋为农村传统方式喂养的鸡所下的土鸡蛋;

(3)待鸡蛋蛋壳完全被苦荞醋溶解后,经光检台筛选,完成生产。
其中苦荞醋的总酸值为8。
本发明醋蛋液的食用方法:开盖后用器具挑破醋液内的蛋膜,充分搅拌,再放置24小时,待蛋黄溶解,每天早晨空腹服用20~30毫升。

1.一种苦荞醋蛋液的制备方法,其特征在于:包括以下步骤:
(1)将鸡蛋清洗干净,灭菌杀毒;
(2)放入密闭的容器中,加入苦荞醋,封口,存放3~15天;
(3)待鸡蛋蛋壳完全被苦荞醋溶解后,经光检台筛选,完成生产。
2.根据权利要求1所述的一种苦荞醋蛋液的制备方法,其特征在于:鸡蛋为农村传统方式喂养的鸡所生产的土鸡蛋。
3.根据权利要求1或2所述的一种苦荞醋蛋液的制备方法,其特征在于:步骤(1)中鸡蛋的灭菌杀毒的方法具体为用酒精、盐水和双氧水逐次浸泡。
4.根据权利要求1所述的一种苦荞醋蛋液的制备方法,其特征在于:步骤(2)中存放的位置为无阳光直射的室内环境,温度控制在8~15℃。
5.根据权利要求1所述的一种苦荞醋蛋液的制备方法,其特征在于:苦荞醋的总酸值大于4。
6.根据权利要求5所述的一种苦荞醋蛋液的制备方法,其特征在于:苦荞醋的总酸值为8。
