Abstract
本发明公开了一种木瓜保健粉的制作方法,以木瓜为原料,经原料预处理、打浆、酶处理、调配、均质、杀菌、喷雾干燥等步骤制成营养粉,此方法加工而成的木瓜保健粉营养物质流失少,速溶性好,风味纯正、口感好,经过酶处理后,能够析出更多的营养物质,具有平肝和胃、舒筋络活筋骨、降血压、帮助消化、美容丰胸的功效,能消除体内过氧化物等毒素,净化血液,对肝功能障碍及高血脂、高血压病具有防治效果。

技术领域
本发明涉及一种保健粉的加工方法,尤其是涉及一种木瓜保健粉的制作方法。
背景技术
木瓜:又名万寿果、乳果,蔷薇科木瓜属,味酸、涩,性温,无毒。被称为“百益果王”,其含有维生素B、C、E、蛋白质、胡萝卜素等,木瓜有助消化之外还能消暑解渴、润肺止咳。它特有的木瓜酵素能清心润肺还可以帮助消化、治胃病,独有的木瓜碱具有抗肿瘤功效,对淋巴性白血病细胞具有强烈抗癌活性。木瓜虽然味道可口营养丰富,但是新鲜成熟木瓜不容易保存,因此必须加工利用才能提高木瓜的价值,目前木瓜粉或以木瓜粉为主要原料的产品较多,但加工方法中存在着营养流失大的不足,如申请号为200610016375.2的专利公布了一种木瓜粉的制作方法,该方法将果肉纤维滤去,存在着营养物质流失大的缺陷。
发明内容
本发明的目的是针对上述问题,提供一种营养物质流失小、速溶性好,风味纯正的木瓜保健粉的制作方法;
本发明的技术方案是:
A、木瓜预处理:挑选成熟、完整的木瓜清洗,去皮、去籽后,切成8-12g的碎粒;
B、打浆:将木瓜粒磨浆处理,磨浆时加水量为原料的3-5倍,用100-120目的筛网过滤,所得滤渣再加1-2倍水进行二次磨浆,将两次所得浆液混合;
C、酶处理:向木瓜浆液中按重量添加0.06-0.1%的果胶酶、0.08-0.12%纤维素酶,温度控制为45-55℃,时间为2-3h,制得木瓜汁;
D、调配:向木瓜汁中按重量添加6-8%的蜂蜜、2-4%的木糖醇进行调配;
E、均质:将混合液均质处理,温度为60-70℃,采用二级均质,一级均质压力为18-20Mpa,二级均质压力4-6 Mpa;
F、杀菌:采用瞬间杀菌法,温度90-95℃,时间20-30s;
G、喷雾干燥:将均质好的混合液进行喷雾干燥,得到木瓜保健粉;
H、检验、包装后,制成成品;
有益效果:此方法加工而成的木瓜保健粉营养物质流失少,速溶性好,风味纯正、口感好,经过酶处理后,能够析出更多的营养物质,具有平肝和胃、舒筋络活筋骨、降血压、帮助消化、美容丰胸的功效,能消除体内过氧化物等毒素,净化血液,对肝功能障碍及高血脂、高血压病具有防治效果。
具体实施方式
实施例1:
一种木瓜保健粉的制作方法,其特征在于:采用以下步骤:
A、木瓜预处理:挑选成熟、完整的木瓜清洗,去皮、去籽后,切成8g的碎粒;
B、打浆:取10kg的木瓜粒磨浆处理,磨浆时加30kg的水,用100目的筛网过滤,所得滤渣再加20kg的水进行二次磨浆,将两次所得浆液混合;
C、酶处理:取50kg木瓜浆,向木瓜浆液中添加0.03kg的果胶酶、0.04kg的纤维素酶,温度控制为45℃,时间为3h,制得木瓜汁;
D、调配:向木瓜汁中添加3kg的蜂蜜、1kg的木糖醇进行调配;
E、均质:将混合液均质处理,温度为60℃,采用二级均质,一级均质压力为20Mpa,二级均质压力4 Mpa;
F、杀菌:采用瞬间杀菌法,温度90℃,时间30s;
G、喷雾干燥:将均质好的混合液进行喷雾干燥,得到木瓜保健粉;
H、检验、包装后,制成成品;
实施例2:
A、木瓜预处理:挑选成熟、完整的木瓜清洗,去皮、去籽后,切成10g的碎粒;
B、打浆:取8kg的木瓜粒、2kg去内芽的莲子磨浆处理,磨浆时加40kg的水,用110目的筛网过滤,所得滤渣再加15kg的水进行二次磨浆,将两次所得浆液混合;
C、酶处理:取50kg木瓜浆,向木瓜浆液中按重量添加0.04kg的果胶酶、0.05kg的纤维素酶,温度控制为50℃,时间为2.5h,制得木瓜汁;
D、调配:向木瓜汁中按重量添加3.5kg的蜂蜜、1.5kg的木糖醇进行调配;
E、均质:将混合液均质处理,温度为65℃,采用二级均质,一级均质压力为19Mpa,二级均质压力5Mpa;
F、杀菌:采用瞬间杀菌法,温度93℃,时间25s;
G、喷雾干燥:将均质好的混合液进行喷雾干燥,得到木瓜保健粉;
H、检验、包装后,制成成品;
实施例3:
A、木瓜预处理:挑选成熟、完整的木瓜、紫甘薯清洗,去皮、去籽后,切成12g的碎粒;
B、打浆:取7kg的木瓜粒、3kg的紫甘薯粒磨浆处理,磨浆时加50kg的水,用120目的筛网过滤,所得滤渣再加10kg的水进行二次磨浆,将两次所得浆液混合;
C、酶处理:取50kg木瓜浆,向木瓜浆液中按重量添加0.05kg的果胶酶、0.06kg的纤维素酶,温度控制为55℃,时间为3h,制得木瓜汁;
D、调配:向木瓜汁中按重量添加4kg的蜂蜜、2kg的木糖醇进行调配;
E、均质:将混合液均质处理,温度为70℃,采用二级均质,一级均质压力为18Mpa,二级均质压力6 Mpa;
F、杀菌:采用瞬间杀菌法,温度95℃,时间20s;
G、喷雾干燥:将均质好的混合液进行喷雾干燥,得到木瓜保健粉;
H、检验、包装后,制成成品;

1.一种木瓜保健粉的制作方法,其特征在于:采用以下步骤:
A、木瓜预处理:挑选成熟、完整的木瓜清洗,去皮、去籽后,切成8-12g的碎粒;
B、打浆:将木瓜粒磨浆处理,磨浆时加水量为原料的3-5倍,用100-120目的筛网过滤,所得滤渣再加1-2倍水进行二次磨浆,将两次所得浆液混合;
