本发明提供了一种皱皮木瓜含片的制作方法,包括原料制备、提取脱胶、浓缩、喷雾干燥、调配压片、灭菌包装工艺,其特征是:1.原料制备:皱皮木瓜鲜果干燥至含水率为5~18%;2.提取脱胶:皱皮木瓜干放入纯净水中浸泡后过滤,滤液放入脱胶罐中加入脱胶剂脱胶,经板框式过滤机过滤;3.浓缩:将脱胶后的滤液抽入真空浓缩罐浓缩成浸膏;4.喷雾干燥:浓缩的皱皮木瓜浸膏喷雾干燥成皱皮木瓜精粉;5.调配压片:皱皮木瓜精粉中加入调味剂混合均匀后压片、干燥;6.压片经灭菌包装。使用本发明生产的皱皮木瓜含片,随时随地可以食用,便于消费者携带。

技术领域
本发明涉及一种皱皮木瓜含片的制作方法。
背景技术
皱皮木瓜(Chaenomeles speciosa),通称贴梗海棠,又叫酸木瓜,为蔷薇科木瓜属植物,多年生落叶灌木或小乔木。皱皮木瓜具有药用、食用、保健、观赏等多种用途。作为药用,具有消炎、镇痛、舒筋活络、驱风、平肝和脾、治哮喘、降血脂、降血压等功效,并对治疗冠心病有一定疗效,是医药工业的重要原料;作为食品,因其果肉厚清脆,味甘酸,营养丰富,可以制作饮料、果醋、果奶、果酒、木瓜脯、木瓜酱等。近年来利用皱皮木瓜为主要原料加工的药品较多,但作为食品因果实含酸量较高,很少直接鲜食,基本都加工成含糖量较高的果脯果酱和如饮料等液态产品,这样一是消费人群受到限制,二是食用不太方便,三是如液态产品包装和运输成本都比较高,相应的销售价格也比较高。
发明内容
本发明的目的是针对上述皱皮木瓜作为食品使用方面存在的不足之处,提供一种携带和食用方便的皱皮木瓜含片的制作方法。
本发明是这样实现的:包括原料制备、提取脱胶、浓缩、喷雾干燥、调配压片、灭菌包装工艺,其特征是:
1、原料制备:皱皮木瓜鲜果挑除病烂次果后,干燥至含水率为5~18%;
2、提取脱胶:按纯净水质量的15%~25%皱皮木瓜干放入70℃~80℃的纯净水中浸泡12~24小时后过滤,取出滤液,将滤液放入脱胶罐中加热至50℃~55℃时加入脱胶剂搅拌4~6分钟后,静置18~24小时,经板框式过滤机过滤至透明呈金黄色;
3、浓缩:将脱胶后的滤液抽入真空浓缩罐浓缩至含水率为30%~50%的皱皮木瓜浸膏;
4、喷雾干燥:浓缩的皱皮木瓜浸膏喷雾干燥至含水率为4%~7%皱皮木瓜精粉;
5、调配压片:经喷雾干燥的皱皮木瓜精粉中加入调味剂混合均匀后压片,将片剂干燥至含水率为3%~5%;
6、压片经灭菌包装,即成成品。
使用本发明生产的皱皮木瓜含片,随时随地可以食用,便于消费者携带,并可大幅度地降低产品的运输销售成本。
具体实施方式:
1、原料制备:在每年10~11月皱皮木瓜成熟时,挑除病烂次果后用洗果分级机处理后切片,干燥至含水率为5~18%后保存于原料库;
2、浸泡提取:根据生产所需按纯净水质量的15%~25%皱皮木瓜干放入多功能提取罐中,按比例加入75℃纯净水浸泡12~24小时后过滤,取出滤液,将滤液放入脱胶罐中加热至50℃时加入脱胶剂搅拌5分钟后,静置24小时,经板框式过滤机过滤至透明呈金黄色;
3、浓缩:将脱胶后的滤液抽入真空浓缩罐浓缩至含水率为30%~50%的皱皮木瓜浸膏;
4、喷雾干燥:浓缩的皱皮木瓜浸膏喷雾干燥至含水率为4%~7%皱皮木瓜精粉;
5、调配压片:经喷雾干燥的皱皮木瓜精粉中加入调味剂混合均匀后压片,将片剂干燥至含水率为3%~5%;
6、压片经灭菌包装,即成成品。

1.一种皱皮木瓜含片的制作方法,包括原料制备、提取脱胶、浓缩、喷雾干燥、调配压片、灭菌包装工艺,其特征是:
(1)原料制备:皱皮木瓜鲜果挑除病烂次果后,干燥至含水率为5~18%;
(2)提取脱胶:按纯净水质量的15%~25%取皱皮木瓜干放入70℃~80℃的纯净水中浸泡12~24小时后过滤,取出滤液,将滤液放入脱胶罐中加热至50℃~55℃时加入脱胶剂搅拌4~6分钟后,静置18~24小时,经板框式过滤机过滤至透明呈金黄色;
(3)浓缩:将脱胶后的滤液抽入真空浓缩罐浓缩至含水率为30%~50%的皱皮木瓜浸膏;
(4)喷雾干燥:浓缩的皱皮木瓜浸膏喷雾干燥至含水率为4%~7%皱皮木瓜精粉;
(5)调配压片:经喷雾干燥的皱皮木瓜精粉中加入调味剂混合均匀后压片,将片剂干燥至含水率为3%~5%;
(6)压片经灭菌包装,即成成品。
