Abstract

Description
本申请要求2008年11月24日提交的发明名称为“新碳水化合物和碳水化合物混合物用于提供吸收提高的运动饮料的用途”的美国非临时专利申请No.12/276,976的权益,在此将其全部公开内容引入作为参考。
发明领域
本发明涉及新的碳水化合物、碳水化合物混合物和包含该碳水化合物混合物的饮料。特别地,本发明涉及个体食用后饮料的吸收提高的复水饮料(例如,运动饮料)。
背景
长期以来已知生产各种配方的饮料。希望改良的和新的配方能实现所需的营养特征、风味、货架期和额外目标。例如,希望人食用后提高身体吸收复水/运动饮料的速度。
复水饮料可以结合身体活动(如,锻炼)一起使用,以补充活动过程中流失的流体和电解质,以及提供额外的能量。为此,复水饮料通常至少包含水、碳水化合物和电解质,并且具有250-350mOsm/kg的测量的重量摩尔渗透压浓度。通常包括在这些饮料中的碳水化合物是高果糖玉米糖浆和蔗糖。
重量摩尔渗透压浓度是每千克溶剂中溶质的渗透压摩尔数,其中一渗透压摩尔由每摩尔的离子电荷来提供。理论上,如果饮料的重量摩尔渗透压浓度低于个体血浆的重量摩尔渗透压浓度(其通常为约280mOsm/kg至约300mOsm/kg),则与如果重量摩尔渗透压浓度高于血浆的情况相比,饮料会被个体的胃肠道系统更快地吸收。因此,在复水/运动饮料中使用高果糖玉米糖浆和蔗糖的混合物的一个缺点在于饮料的最初重量摩尔渗透压浓度为约330mOsm/kg,这远高于平常的血浆重量摩尔渗透压浓度。此外,这些碳水化合物随着时间在溶液中经历水解,这提高了饮料的重量摩尔渗透压浓度,同时降低了饮料的吸收率。

概述

实施方案的详述
应当理解根据本发明公开内容的碳水化合物混合物、饮料和其他饮料产品可以具有各种不同的特定配方或组成中的任一种。根据本发明公开内容的组合物的配方可以在某种程度上有所不同,这取决于如下这样的因素:产品计划的市场区域、其所需的营养特征、风味特征等。例如,将更多的成分加入到特定实施方案的配方(包括以下所述配方的任一种)中是常用的一种选择。可以加入额外的甜味剂(即,更多的和/或其他的),通常将调味剂、维生素、色素、水果产品、呈味剂、遮味剂等和/或风味增强剂加入到任一种这样的配方中,以改变味道、口感、营养特征等。基于在此提供的指导,配制这样的其他产品将在配制食品领域的技术人员的能力范围内;这样的产品也涵盖在本发明的范围内。

在一个实施方案中,至少一些葡萄糖由葡萄糖低聚糖提供,其可以具有含有至多六个糖聚合度的结构,而在其他实施方案中,结构含有至多十个糖聚合度。在一个实施方案中,葡萄糖低聚糖是中链寡糖,其中超过90%重量的寡糖含有三至七个糖聚合度。在另一个实施方案中,约20-30%的葡萄糖由具有十一个聚合度或更高聚合度的多糖提供。
寡糖和多糖在溶液中通常比二糖更能抵抗水解。已经发现了葡萄糖低聚糖中的糖之间的独特连接可以提供对抗葡萄糖低聚糖水解的稳定性。在本发明的某些实施方案中,包括在碳水化合物混合物中的葡萄糖低聚糖的结构具有初始的α-(1,4)葡萄糖-至-葡萄糖连接,接着是交替的α-(1,3)葡萄糖-至-葡萄糖连接和α-(1,6)-葡萄糖-至-葡萄糖连接。合适的葡萄糖低聚糖由Cargill,Incorporated,Wyzata,MN生产,名称为葡萄糖水合物(Glucohydrate)。
如以上所讨论的,将重量摩尔渗透压浓度限定为每千克溶剂的溶质的渗透压摩尔数,其中一渗透压摩尔由每摩尔的离子电荷来提供。葡萄糖低聚糖比较小的碳水化合物(如,二糖或单糖)具有更大的分子量。因此,包含特定重量百分比的葡萄糖低聚糖的第一种碳水化合物混合物溶液将具有低于第二种碳水化合物溶液的渗透度,第二种碳水化合物溶液与第一种相同,除了替代葡萄糖低聚糖,其替代地包含特定重量百分比的二糖。为此的原因是因为第一种溶液中存在的碳水化合物的总摩尔数低于第二种溶液中的。因此,包含蔗糖和高果糖玉米糖浆(HFCS)的复水饮料通常具有约330mOsm/kg的初始测量的重量摩尔渗透压浓度,而含有约4%重量至约10%重量的碳水化合物混合物的水溶液具有约230-300mOsm/kg的测量的重量摩尔渗透压浓度。此外,在根据本发明公开内容的饮料组合物的某些示例性实施方案中,提供了具有230mOsm/kg至260mOsm/kg范围的测量的重量摩尔渗透压浓度的复水饮料组合物。
根据不同实施方案的饮料组合物可以包含一种或多种碳水化合物来源。在某些实施方案中,该碳水化合物可以包括单糖、双糖和葡萄糖低聚糖的来源,而在其他实施方案中,该碳水化合物还可以包括多糖来源,例如,玉米糖浆固体。在某些实施方案中,提供了包含水和4%重量至10%重量碳水化合物混合物的饮料组合物,该碳水化合物混合物具有35%重量至45%重量的果糖和55%重量至65%重量的葡萄糖。至少一些葡萄糖由葡萄糖低聚糖提供。该饮料可以是复水饮料,并且进一步包括电解质、食用酸、着色剂、调味剂、维生素、功能性成分及其组合。
有利地,本发明的某些实施方案提供了组合物,如复水饮料组合物,其中碳水化合物源的水解得到最小化。因为碳水化合物的水解导致碳水化合物的总摩尔数的增加,受到水解的组合物的重量摩尔渗透压浓度将随着时间导致测量的重量摩尔渗透压浓度的提高。相反,根据本发明的包含4%重量至10%重量碳水化合物混合物的组合物的测量的重量摩尔渗透压浓度在长达六个月的贮存过程中的提高不超过5%。因此,根据本发明实施方案的组合物通常提供具有低于血浆的测量的重量摩尔渗透压浓度(例如,大约300mOsm/kg)的复水饮料,并且其立即被胃肠系统快速吸收,并且在制造后持续长达至少六个月。
在提供包装的即饮饮料的实施方案中,可以将饮料组合物与液体(如,水)预先混合。在某些实施方案中,该即饮饮料包含饮料总重的约80-99重量百分比(wt%)的液体。除非另外指出,所有重量百分比基于即饮饮料的总重。在更多的实施方案中,该饮料组合物可以包装成可食组合物或浓缩物,如干混合物(例如,粉末)或液体浓缩物,用于此后用一种或多种液体重建来形成饮料。该浓缩组合物可以与用于制备饮料组合物的说明书相结合。在另一个实施方案中,该饮料浓缩物可以包装成凝胶、胶囊或片剂,其与液体一起食用。当以这些形式提供时,该饮料组合物可以包含用等于所制得饮料组合物的约80-99wt%的液体的量来混合或食用的说明书。
通常,根据本发明公开内容的复水/运动饮料通常至少包含水、一种或多种碳水化合物、电解质、酸味剂和调味剂。适用于根据本发明公开内容的至少某些配方的示例性调味剂包括柑橘调味剂、香辛料调味剂等。如果需要,可以加入防腐剂,这将取决于其他成分、生产技术、所需的货架期等。在已知本发明公开内容益处的情况下,本领域技术人员将认识到额外的和可替换的合适成分。
用初始体积的水(向其中加入额外的成分)制得所考虑的饮料浓缩物的至少某些示例性实施方案。可以通过将更多体积的水加入到浓缩物中从而从饮料浓缩物形成一倍浓度饮料组合物。通常,例如,可以通过将大约1份浓缩物与大约3至大约7份水混合,从浓缩物制得一倍浓度饮料。在某些示例性实施方案中,通过将1份浓缩物与5份水混合来制得一倍浓度饮料。在某些示例性实施方案中,用于形成一倍浓度饮料的其他水是碳酸化水。在某些其他实施方案中,直接制得一倍浓度饮料,而无浓缩物的形成和随后的稀释。
水是在此公开的饮料中的基础成分,通常是载体或主要的液体部分,剩余的成分在其中溶解、乳化、悬浮或分散。纯水可以用于在此公开的饮料的某些实施方案的制造中,并且可以使用标准饮料质量的水,使得不会不利地影响饮料口味、气味或外观。基于生产饮料时要求的工业和政府标准,水通常是澄清的、无色、无令人不快的矿物质、味道和气味、无有机物质,低碱性和可接受的微生物品质。在某些典型实施方案中,水以饮料的约80%至约99.9%重量的水平存在。在至少某些示例性实施方案中,在此公开的饮料和浓缩物中所用的水是“处理水”,这指的是在任选补充(例如,如美国专利no.7,052,725中公开的,补充钙)之前已经处理来降低水的总溶解固体的水。生产处理水的方法是本领域普通技术人员公知的,并且其中包括去离子、蒸馏、过滤和反向渗透(“r-o”)。理解术语“处理水”、“纯水”、“去离子水”、“蒸馏水”和“r-o水”在本发明讨论中通常是同义的,指的是已经从其中基本上除去了所有矿物质内含物的水,通常含有不超过500ppm的总溶解固体,例如,250ppm的总溶解固体。
在一个实施方案中,饮料组合物包括电解质来源,用于提供钠(Na)。可以通过钠化合物,如氯化钠、柠檬酸钠、碳酸钠、碳酸氢钠及其组合,来提供钠。在精选的实施方案中,钠的量为饮料的约0.03%重量至约0.06%重量。其他的量也是有用的,这将取决于应用和其他因素。在一个实施方案中,通过氯化钠和柠檬酸钠来提供钠。如表1中的两个示例性配方所示,柠檬酸钠为饮料组合物的约0.0659%重量,而氯化钠为饮料组合物的约0.0659%重量。
除了钠(Na)以外或者与钠(Na)无关,饮料组合物中还可以包括提供例如钾(K)、镁(Mg)、钙(Ca)和氯(Cl)离子的其他类型的电解质来源。可以通过其化合物或其化合物的组合来提供不同类型的电解质。例如,化合物可以包括醋酸钾、碳酸氢钾、溴酸钾、氯化钾、柠檬酸钾、D-葡糖酸钾、磷酸二氢钾、磷酸氢二钾、醋酸钙、氯化钙、D-葡糖酸钙、乳酸钙、果糖钙、磷酸二氢钙、氯化镁、碳酸镁和硫酸镁,或其组合。在一个实施方案中,通过磷酸二氢钾或磷酸氢二钾来提供钾离子。在一个这样的实施方案中,磷酸氢二钾占饮料组合物的约0.0439%重量。在另一个实施方案中,饮料可以含有约0.01%重量至约0.04%重量的钾,约0.01%重量至约0.02%重量的镁,约0.001%重量至约0.003%重量的钙,约0.02%重量至约0.03%重量的氯化物。其他的量或组合也是有用的。
可以将非矿物质营养化合物(如维生素)加入到饮料组合物中。非矿物质营养补充剂成分的实例是本领域普通技术人员已知的,并且包括,例如,抗氧化剂和维生素,包括维生素A、D、E(生育酚)、C(抗坏血酸)、B1(硫胺素)、B2(核黄素)、B6、B12和K、烟酸、叶酸、生物素,及其组合。任选的非矿物质营养补充剂通常以优质生产规范下公认的量存在。示例性的量为约1%至约100%RDV,其中这样的RDV是确定的。在某些示例性实施方案中,非矿物质营养补充成分以约5%至约20%RDV的量存在,RDV是确定的。
用于在此公开的饮料中的酸可以执行几种功能中的任何一种或多种,包括,例如,提供抗氧化活性、使饮料产生酸的口味、增强适口性、提高解渴作用、改变甜味以及通过提供微生物稳定性作为温和的防腐剂。可以使用任何合适的食用酸,例如,柠檬酸、苹果酸、酒石酸、磷酸、抗坏血酸、乳酸、蚁酸、富马酸、葡糖酸、琥珀酸、马来酸、硫酸钠和/或己二酸。酸可以以溶液形式来使用,例如,以足以提供所需饮料pH的量,总地为约0.01%至约1.0%重量的饮料,例如,约饮料的约0.05%至约0.5%重量,如饮料的0.1%至0.25%重量,这将取决于所用的酸味剂、所需的pH、所用的其他成分等。

可以依据适用的法律和法规,以不超过规定的最大水平的量来使用防腐剂。所用的防腐剂水平通常根据计划的终产品pH以及特定饮料配方的微生物腐败潜能来调节。所用的最大水平通常为饮料的约0.05%重量。在已知本发明公开内容的情况下,为根据本发明公开内容的饮料选择合适的防腐剂或防腐剂组合在本领域技术人员的能力范围内。在本发明的某些实施方案中,苯甲酸或其盐(苯甲酸盐)可以用作饮料产品中的防腐剂。
适用于在此公开的饮料产品的至少某些示例性实施方案的饮料防腐的其他方法包括,例如,无菌包装和/或热处理或热加工步骤,如热灌装和隧道式巴氏杀菌。这样的步骤可以用于降低饮料产品中的酵母、霉菌和微生物生长。例如,Braun等的美国专利No.4,830,862公开了在果汁饮料的生产中使用巴氏杀菌以及在碳酸饮料中使用合适的防腐剂。Kastin的美国专利No.4,925,686公开了热巴氏杀菌的可冷藏果汁组合物,其含有苯甲酸钠和山梨酸钾。通常,热处理包括热灌装方法,其通常使用高温短时,例如,约190°F,持续10秒钟,隧道式巴氏杀菌方法通常使用较低的温度,持续较长的时间,例如,约160°F,持续10-15分钟,而蒸馏方法通常在升高的压力下,即,在高于1个大气压的压力下,使用例如约250°F,持续3-5分钟。
在此公开的饮料产品任选地含有风味组合物,例如,天然和合成的水果香精、植物香精、其他香精及其混合物。如在此所用的,术语“水果香精”通常指的是源自种子植物的可食繁殖部分的那些香精。包括其中甜果肉与种子相伴的那些,例如,香蕉、番茄、树莓等,以及具有小的新鲜的浆果的那些。术语浆果在此还用来包括聚生果实,即,不是“真实的”浆果,但通常认为是浆果。术语“水果香精”中还包括合成制得的以模拟源自真实来源的水果香精。合适的水果或浆果来源的实例包括完整的浆果或其部分、浆果汁、浆果汁浓缩物、浆果泥及其混合物、干浆果粉、干浆果汁粉等。
示例性水果香精包括柑橘类水果香精,例如,橙子、柠檬、酸橙和葡萄柚,以及如苹果、葡萄、樱桃和菠萝香精等香精,及其混合物。在某些示例性实施方案中,饮料浓缩物和饮料包含水果香精成分,例如,汁液浓缩物或汁液。如在此所用的,术语“植物香精”指的是源自果实以外的植物部分的香精。因此,植物香精可以包括源自精油以及坚果、树皮、根和叶的提取物的那些香精。术语“植物香精”中还包括合成制备的以模拟源自天然来源的植物香精的香精。这样的香精实例包括可乐香精、茶香精等,及其混合物。香精成分可以进一步包含各种上述香精的混合物。用于给本发明的饮料提供风味特征的风味成分的特定的量将取决于所选的香精、所需的香味印象和香精成分的形式。在已知本发明公开内容的情况下,本领域技术人员将能够容易确定用于获得所需风味印象的任何特定风味成分的量。
适用于本文中公开的饮料产品的至少某些示例性实施方案中的其他调味剂包括,例如,香辛料调味剂,如肉桂、丁香、桂皮、胡椒、生姜、香草香辛调味剂、豆蔻、芫荽、根汁汽水、檫木、人参等。在已知本发明公开内容的情况下,适用于至少某些示例性实施方案的各种其他和可替换的调味剂将是本领域技术人员显而易见的。调味剂可以是提取物、油树脂、汁液浓缩物、bottler′s base或其他本领域已知的形式。在至少某些示例性实施方案中,这样的香辛料或其他香精补充了汁液或汁液组合的那些。

实施例1
使用根据本发明的碳水化合物混合物制得饮料组合物。复水饮料组合物中包括的特定成分和每种成分的重量百分比列于以下的表1中。碳水化合物混合物包含35.1%重量的果糖、4.7%重量的明串珠菌二糖和葡萄糖和60.1%重量的具有二至九聚合度的葡萄糖低聚糖。测得制得的复水饮料组合物的初始重量摩尔渗透压浓度为247mOsm/kg。

实施例2
对根据实施例1制得的复水饮料组合物进行了测试,以确定该组合物随着时间对水解的稳定性。按照配方制得复水饮料组合物并热灌装至20盎司聚对苯二甲酸乙二醇酯(PET)瓶中。一旦组合物冷却至大约70°F,测试它们最初的重量摩尔渗透压浓度。通过将一半瓶子放入设定为110°F的培养箱中,将另一半瓶子放入设定为70°F的培养箱,然后测量随着时间的重量摩尔渗透压浓度,来进行对抗水解的稳定性实验。
除了包含碳水化合物混合物的复水饮料组合物,还测试了对照样品,以测量含有常规碳水化合物来源的复水饮料对水解的稳定性。根据实施例1的配方制备了对照样品,除了碳水化合物成分,其只含有高果糖玉米糖浆和蔗糖。将一半对照样品瓶子放入设定为110°F的培养箱中,而另一半放入设定为70°F的培养箱中,然后测量随着时间的对照样品的重量摩尔渗透压浓度。
在贮存过程中,在某些时间间隔下,将每种样品和对照样品的一瓶从两个培养箱中取出并分析重量摩尔渗透压浓度。在渗压计(Advanced Instruments Osmometer Model 3D3,Advanced Instruments Inc.,Norwood,MA)上测量的重量摩尔渗透压浓度,以测定每种溶液的重量摩尔渗透压浓度值,单位为毫摩尔/公斤(mOsm/kg)。如以上所讨论的,当溶液中存在的碳水化合物通过水解分解时,因为水解导致更多摩尔的碳水化合物离子的产生,溶液的重量摩尔渗透压浓度提高。贮存27周的实验样品的测量的重量摩尔渗透压浓度值显示于图1中。复水饮料产品经历的标准条件可以包括在高达70°F的温度下贮存长达六个月,或大约二十七周,接着测量产品。将产品贮存在温度不受控制地方的情况中,复水饮料产品周围的环境温度可以高达110°F。
图1中提供的结果显示了对照样品经历了足以提高溶液重量摩尔渗透压浓度的水解,在70°F贮存27周后,从最初的332mOsm/kg测量值提高至391mOsm/kg的测量值,这提高了大约18%。在升高的温度下贮存对照样品导致贮存过程中对照样品重量摩尔渗透压浓度更大的变化,在110°F下贮存27周后升高至433mOsm/kg的测量值,这提高了大约30%。
与含有HFCS和蔗糖作为碳水化合物来源的对照样品相反,包含根据本发明的碳水化合物混合物的复水饮料组合物在贮存过程中呈现出非常少的水解。特别地,图1中呈现的结果显示出复水饮料组合物样品具有247mOsm/kg的初始测量的重量摩尔渗透压浓度,并且在70°F贮存27周后,只升高至249mOsm/kg的值,这提高了大约1%。升高温度下的贮存导致贮存过程中重量摩尔渗透压浓度的略微更高的提高,升高至257mOsm/kg的重量摩尔渗透压浓度测量值,这提高了大约4%。因此,预期包含本发明碳水化合物混合物的复水饮料基本上保持其比具有较高重量摩尔渗透压浓度的饮料更快地被个体胃肠系统吸收的初始能力,甚至在高达110°F的至少约六个月的过程中。
实施例3
使用根据本发明的碳水化合物混合物制备饮料组合物。复水饮料组合物中包括的特定成分和每种成分的重量百分比列于以下的表2中。碳水化合物混合物含有结晶果糖和Star-240玉米糖浆固体。Star-产品可从A.E.Staley Manufacturing Company,Decatur,IL购得。碳水化合物混合物包含35.0%重量的果糖,3.6%重量的葡萄糖,41.8%重量的具有二至十聚合度的葡萄糖低聚糖,和19.6%重量的具有十一和更高聚合度的多糖。测得所制得的复水饮料组合物的初始重量摩尔渗透压浓度为243mOsm/kg。

实施例4
使用根据本发明的碳水化合物混合物制备饮料组合物。复水饮料组合物中包括的特定成分和每种成分的重量百分比列于以下的表3中。碳水化合物混合物含有结晶果糖和Star-200玉米糖浆固体。碳水化合物混合物含有35.0%重量的果糖,1.4%重量的葡萄糖,39.5%重量的具有二至十聚合度的葡萄糖低聚糖和24.1%重量的具有十一和更高聚合度的多糖。测得所制得复水饮料组合物的初始重量摩尔渗透压浓度为243mOsm/kg。

实施例5
使用根据本发明的碳水化合物混合物制备饮料组合物。复水饮料组合物中包括的特定成分和每种成分的重量百分比列于以下的表2中。碳水化合物混合物含有结晶果糖和Star-180玉米糖浆固体。碳水化合物混合物含有35.0%重量的果糖,1.0%重量的葡萄糖,35.0%重量的具有二至十聚合度的葡萄糖低聚糖和29.0%重量的具有十一和更高聚合度的多糖。测得所制得复水饮料组合物的初始重量摩尔渗透压浓度为232mOsm/kg。

实施例6
对根据实施例3、4和5制得的复水饮料组合物进行了测试,以测定该组合物随着时间对水解的稳定性。按照配方制得复水饮料组合物并热灌装至20盎司聚对苯二甲酸乙二醇酯(PET)瓶中。一旦组合物冷却至大约70°F,测试它们最初的重量摩尔渗透压浓度。对设定为70°F的培养箱中的瓶子进行了对抗水解的稳定性实验,通过测量样品随着时间的重量摩尔渗透压浓度来进行。
在贮存过程中,在某些时间间隔下,将每种样品的一瓶从培养箱中取出并分析重量摩尔渗透压浓度。在Advanced Instruments Osmometer渗压计(Model 3D3)上测量每种溶液的重量摩尔渗透压浓度值,以mOsm/kg计。在20周贮存过程中的实验样品的测量的重量摩尔渗透压浓度值显示于图2中。
结果显示了包含果糖和玉米糖浆固体的碳水化合物混合物的复水饮料组合物样品在贮存过程中呈现出非常少的水解。特别地,结果显示了实施例3和实施例4的复水饮料组合物各自具有243mOsm/kg的初始测量的重量摩尔渗透压浓度,并且在70°F下贮存20周后只升高至246mOsm/kg的值,这提高了大约1%。相似地,实施例5的复水饮料组合物具有232mOsm/kg的初始测量的重量摩尔渗透压浓度,并且在70°F下贮存20周后只升高至238mOsm/kg的值,这提高了大约2.5%。因此,预期包含本发明碳水化合物混合物的复水饮料基本上维持其比具有较高重量摩尔渗透压浓度的饮料更快地被个体胃肠系统吸收的初始能力。

Claims (12)
1.一种碳水化合物混合物,其包含55%重量至65%重量的至少部分由葡萄糖低聚糖提供的葡萄糖和35%重量至45%重量的果糖;其中在水中包含6%重量的所述碳水化合物混合物的溶液在生产后即刻具有230-300mOsm范围的初始测量的重量摩尔渗透压浓度,并且在生产后贮存溶液长达六个月后该溶液具有在初始测量的重量摩尔渗透压浓度5%内的贮存测量的重量摩尔渗透压浓度。
2.权利要求1的碳水化合物混合物,其中该碳水化合物混合物包含选自蔗糖、明串珠菌二糖、海藻糖、半乳糖、异麦芽酮糖、右旋糖、麦芽糖糊精、玉米糖浆固体及其组合的碳水化合物。
3.权利要求1的碳水化合物混合物,其中至少90%重量的葡萄糖低聚糖包含具有三至七个糖聚合度的结构。
4.权利要求3的碳水化合物混合物,其中葡萄糖低聚糖的结构具有初始的α-(1,4)葡萄糖-至-葡萄糖连接,接着是交替的α-(1,3)葡萄糖-至-葡萄糖连接和α-(1,6)葡萄糖-至-葡萄糖连接。
5.权利要求1的碳水化合物混合物,其中溶液的初始测量的重量摩尔渗透压浓度为230mOsm至260mOsm。
6.一种饮料组合物,其包含水和4%重量至10%重量的碳水化合物混合物,该碳水化合物混合物包含55%重量至65%重量的至少部分由葡萄糖低聚糖提供的葡萄糖和35%重量至45%重量的果糖;其中该饮料组合物在组合物制备后即刻具有230-300mOsm范围的初始测量的重量摩尔渗透压浓度,并且该饮料组合物在生产后贮存长达六个月后具有在初始测量的重量摩尔渗透压浓度5%内的贮存测量的重量摩尔渗透压浓度。
7.权利要求6的饮料组合物,进一步包含至少一种选自电解质、食用酸、着色剂和调味剂的成分。
8.权利要求7的饮料组合物,其中该碳水化合物混合物包含选自蔗糖、明串珠菌二糖、海藻糖、半乳糖、异麦芽酮糖、右旋糖、麦芽糖糊精、玉米糖浆固体及其组合的碳水化合物。
9.权利要求6的饮料组合物,其中至少90%重量的葡萄糖低聚糖包含具有三至七个糖聚合度的结构。
10.权利要求9的饮料组合物,其中葡萄糖低聚糖的结构具有初始的α-(1,4)葡萄糖-至-葡萄糖连接,接着是交替的α-(1,3)葡萄糖-至-葡萄糖连接和α-(1,6)葡萄糖-至-葡萄糖连接。
11.权利要求6的饮料组合物,其中初始测量的重量摩尔渗透压浓度为230mOsm至260mOsm。
