本申请涉及二碳酸二甲酯(dimethyl dicarbonate,DMDC)以及二羧酸和三羧酸系列的多种有机酸的混合物用于饮料的灭菌和保存的用途。
背景技术
基于果汁的清凉饮料、速溶茶饮料、许多其他特征类型的清凉饮料、葡萄酒冷饮品、还有多种脱醇葡萄酒以及其他葡萄酒,总体上必须得到保护来对抗由细菌、酵母菌以及霉菌造成的侵染/腐败。已知有很多方法,例如无菌包装、热包装、巴斯德灭菌隧道、使用持续性防腐剂,这仅提及最重要的方法。二碳酸二甲酯(DMDC)作为冷型灭菌剂的已知用途对于许多难保存的产品也一直在获得日益增加的重要性。然而,本领域的普通技术人员经常会遇到难题的情况。具体地说,在不加二氧化碳的、无泡清凉饮料,基于果汁和/或茶的饮料,以及还有具有一定风味的饮料的情况下,当使用已知的保存方法时会产生一些问题,例如,像山梨酸和苯甲酸的盐类的使用的耐受现象,在高剂量率时的味道损害以及还有由国家立法的允许剂量的限制。
具体到可重复使用的塑料包装的使用,特别是引入PET瓶(如人们所知,它不能在标准实施方式中用于通过巴斯德灭菌法来由于保存)也显著地增强了对没有热处理的有效的保存方法的要求。
从专业文献中人们已知,饮料防腐剂DMDC对在酒类饮料中的酵母菌以及细菌的效果通过二氧化硫而协同地得到增强(见J.Enol.Vitic.39:4:279-282(1988))。
人们进一步已知,DMDC的作用与抗坏血酸以及山梨酸钾防腐剂相结合而可以协同地得到增强(见EP-A 0 804 093)。
然而,基于DMDC的已知的多种防腐剂需要改善,因为它们对抗某些微生物的孢子是不够活跃的。
完全出人意料地,现在已经发现二碳酸二甲酯与常规的作为二羧酸和三羧酸系列的酸化剂的多种有机酸以及还有它们的盐类的混合物是高度地适合于饮料的灭菌和保存。在许多情况下,通过添加这些有机酸,此时DMDC的效果可以协同地得到增强,这就是说该混合物的效果是大于这些单独组分的效果,其中这些有关的酸类本身不具有一种抗微生物的作用。
发明内容
因此,本发明涉及将包含二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类的用于饮料的灭菌和保存的混合物的用途。
优选地,这些二羧酸和三羧酸的盐类是碱金属以及碱土金属的盐。
根据本发明,有待使用的这些二羧酸和三羧酸及其盐类优选是柠檬酸、柠檬酸钠、柠檬酸钾、柠檬酸钙;苹果酸、苹果酸钠、苹果酸钾、苹果酸钙;酒石酸、酒石酸钠、酒石酸钾、酒石酸钙;己二酸、己二酸钠、己二酸钾;琥珀酸、琥珀酸钠、琥珀酸钠钾;富马酸、富马酸钠、富马酸钾。
根据本发明所要使用的这些混合物优选地包含二碳酸二甲酯以及一个协同地活性的量的二羧酸和三羧酸系列的至少一种有机酸及其盐类。
具体地说,这些混合物包含20ppm到1000ppm的二碳酸二甲酯以及100到30 000ppm的二羧酸和三羧酸系列的至少一种有机酸及其盐类,特别优选50ppm到250ppm的二碳酸二甲酯以及500ppm到10 000ppm的二羧酸和三羧酸系列的至少一种有机酸及其盐类。
对于本发明的目的,饮料优选是指清凉饮料例如无醇风味清凉饮料,例如柠檬汽水、包含果汁的清凉饮料、茶(被称为即饮茶饮料)、茶/含果汁的清凉饮料的混合饮料、还有相应的浓缩剂、以及还有葡萄酒冷饮品和多种脱醇葡萄酒。
为了不同的国家立法的目的,通过根据本发明所要使用的混合物,在极大减少的SO2含量下葡萄酒类也可以可靠地保存,如果这是立法所允许的。主要的是,根据本发明所要使用混合物是用于上述类型的无泡饮料中,但还有轻度地含二氧化碳的饮料以及还有含二氧化碳的饮料可以有利地由这些混合物进行灭菌。
优选地,根据本发明所要使用的混合物是用于被称为无泡的饮料,这就是说不含二氧化碳的茶以及茶/混合的饮料。
具体实施方式
这些饮料根据常规的方法生产。例如,在根据本发明的用途的情况下,总体上,将二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类的一种混合物结合到要保存的饮料中。还有可能将该混合物的这些单独的组分分别加入该饮料中。优选地,为此,首先将该饮料或其组分与二羧酸和三羧酸系列的至少一种有机酸及其盐类进行混合,并且随后通过一个适当的计量装置将它们与二碳酸二甲酯混合,特别是例如LEWA DA9、或相应的Burdomat类型的计量系统。
实例
将一种含有水果组分的饮料与柠檬酸的不同的浓缩物进行混合,并且随后接种多变拟青霉菌的真菌分生孢子。随后,用不同的DMDC浓缩物对这些接种的饮料样本进行处理,并且在27℃下培养两周。在随后的评估中,清楚的是对于阻止多变拟青霉菌的生长来说,单独的250ppm的DMDC以及单独的30000ppm的柠檬酸都是不足够的,而结合在一起,少至200ppm的DMDC以及3000ppm的柠檬酸就足以防止真菌生长(参见表1)。

Claims (10)

1.一种包含二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类的混合物用于饮料的灭菌和保存的用途。
2.根据权利要求1所述的用途,其特征在于这些二羧酸类和三羧酸类的盐类是它们的碱金属盐类以及碱土金属盐类。
3.根据权利要求1和2中至少一项所述的用途,其特征在于这些二羧酸类和三羧酸类及其盐类是柠檬酸、柠檬酸钠、柠檬酸钾、柠檬酸钙;苹果酸、苹果酸钠、苹果酸钾、苹果酸钙;酒石酸、酒石酸钠、酒石酸钾、酒石酸钙;己二酸、己二酸钠、己二酸钾;琥珀酸、琥珀酸钠、琥珀酸钾。
4.根据权利要求1到3中至少一项所述的用途,其特征在于该混合物包含协同作用的量的二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类。
5.根据权利要求1到4中至少一项所述的用途,其特征在于该混合物包含20ppm到1000ppm的二碳酸二甲酯以及100ppm到30000ppm的二羧酸和三羧酸系列的至少一种有机酸及其盐类。
6.根据权利要求1到5中至少一项所述的用途,其特征在于这些被灭菌和保存的饮料是果汁或包含果汁的饮料、含二氧化碳的清凉饮料、不起泡的、不含二氧化碳的清凉饮料、含酒精的混合饮料、茶或茶/果汁混合物。
7.用于饮料的灭菌和保存的方法,其特征在于将二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类结合到有待保存的饮料之中。
8.根据权利要求7所述的方法所生产的饮料。
9.包含20ppm到1000ppm的二碳酸二甲酯以及100ppm到30000ppm的二羧酸和三羧酸系列的至少一种有机酸及其盐类的饮料。
10.用于饮料灭菌的防腐剂,包含二碳酸二甲酯以及二羧酸和三羧酸系列的至少一种有机酸及其盐类。
