Abstract

MéTODO PARA PREPARAR MATERIAL DE PROTEìNA DE SOJA DESFLAVORIZADO Materiais derivados de soja, tais como leite de soja, concentrados de soja e isolados de proteína de soja, são desfiavorizados pelo ajuste do pH de uma composição aquosa desses materiais derivados de soja, usando eletrodiálise com membrana, para um pH de cerca de 9 a cerca de 12, para solubilizar as proteínas de soja e liberar os compostos flavorizantes e passando em seguida a composição com o pH ajustado a uma membrana de ultrafiltração possuindo um corte no peso molecular de até 50000 Daltons, em condições nas quais os compostos flavorizantes passam através da membrana, deixando o material de soja retido com um flavor melhorado.
