Abstract

"TRATAMENTO ENZIMáTICO DE óLEOS". A presente invenção refere-se a um método para reduzir e/ou remover diglicerídeos de um óleo comestível, compreendendo a) mistura de um óleo comestível com um substrato aceptor de acil e uma diglicerídeo:glicerol aciltransferase independente do ácido graxo CoA, em que a diglicerídeo:glicerol aciltransferase independente do ácido graxo CoA é caracterizada como uma enzima a qual, num óleo comestível, pode transferir um grupo acil de um diglicerídeo para o glicerol. Preferivelmente, a diglicerídeo:glicerol aciltransferase compreende a porção da seqüência de aminoácidos GDSX, em que X é um ou mais dos seguintes resíduos de aminoácidos L, A, V, I, F, Y, H, Q, T, N, M ou S. Além disso, a presente invenção refere-se ao uso da diglicerídeo:glicerol aciltransferase independente do ácido graxo CoA, caracterizada como uma enzima, a qual num óleo comestível, é capaz de transferir um grupo acil de um diglicerideo para o glicerol, na produção de um óleo comestível, para reduzir e/ou remover (preferivelmente, seletivamente reduzindo e/ou removendo) diglicerídeo do referido óleo comestível, e ao uso da referida enzima na produção de um gênero alimentício compreendendo um óleo comestível para melhorar as propriedades de cristalização do referido gênero alimentício.
