Abstract
"PROCESSO PARA PREPARAçãO DE UM PRODUTO AERADO CONGELADO,E, PRODUTO AERADO CONGELADO". Usando um homogeneizador operando em pressões maiores (ca. 200 MPa) do que aquelas convencionalmente empregadas na fabricação de sorvete, é possível gerar tamanhos de gotícula de óleo menores (ca. 0,3 mm) em uma pré-mistura de sorvete. Permite estabilização de uma maior interface de ar:água, acarretando menores células gasosas discretas que por sua vez modificam a qualidade organoléptica do sorvete.
