Abstract
CONFEITO CONGELADO E PROCESSO PARA A PREPARAçãO DE UM CONFEITO CONGELADO A presente invenção refere-se a um confeito congelado que é fornecido compreendendo:de 1 a 8% em peso de gordura; um teor de sólidos total de 10 a 25% em peso; uma proteína estruturante do gelo (ISP); e pelo menos 0,1% em peso de agente de aeração; sendo o confeito obtido por um processo que compreende aerar uma mistura com um gás de aeração que contém pelo menos 50% em volume de dióxido de carbono, óxido nitroso e suas misturas. Também é fornecido um processo para a produção do confeito congelado.
