Abstract

"MéTODOS PARA PRESERVAR FRUTA FRESCA E PRODUTO DELA DERIVADO" Trata-se de proporcionar métodos para preservar fruta fresca com preservativos fresh fruit os quais prolongam a vida de prateleira da fruta fresca particularmente fruta recém cortada. O preservativo fresh fruit preserva a textura sabor, aparência, característica crocante, e cor da fruta fresca, particularmente a pele exposta da fruta fresca. O método compreende as seguintes etapas: proporcionar uma solução ou preservativo de fruta que contenha: água, íons cálcio; e íons ascorbato, na qual o íon cálcio e o íon ascorbato estão presentes em uma relação iónica de preferivelmente desde cerca de 1,5:1 até cerca de 2,5:1; e, aplicar o referido preservativo da fruta na fruta. Preferivelmente a fruta é em seguida armazenada a uma temperatura que não congele a fruta, temperatura de -6°C têm sido achadas não congelar as maçãs. Preferivelmente a fruta é armazenada em temperaturas de entre cerca de -7°C até uma temperatura ambiente, de cerca de 20°C, mais preferivelmente cerca de -2°C até cerca de 7°C, muito preferivelmente de 2°C até 5°C. A invenção também se refere a frutas frescas preservadas com preservativos de fruta fresca.
