Abstract

Patente de Invenção: <B>"PROCESSO DE OBTER FRAçõES DE PECTINA SELECIONADAS, TAIS FRAçõES E SEUS USOS"<D>. Processo de fornecer frações selecionadas de pectina esterificada em alto teor, cada uma tendo funcionalidades diferentes, por extração consecutiva de um material vegetal com uma solução aquosa ácida para obter frações sucessivas de pectina esterificada em alto teor com tempo de ajuste crescente. O material vegetal é opcionalmente antes de ser extraído sujeito a um pré-tratamento ácido aquecendo-o em uma mistura homogênea de água e um solvente orgânico miscível em água. As frações de pectina que podem ser obtidas pelo processo têm propriedades melhoradas quando usadas na preparação de produtos alimentícios tais como conservas e produtos de leite acidificado. As frações de pectina são também úteis como materiais de partida em um processo de obter frações de pectina desesterificadas e opcionalmente amidadas tendo características funcionais adicionalmente melhoradas.
