Abstract

Vegetable material containing water-insoluble pectin is treated in the presence of an acid with an organic solvent to dissolve as much as possible of the substances accompanying the pectin, and the resulting solution is separated from the residue, which contains water-soluble pectin. The residue may then be washed with the solvent and treated with water to dissolve the pectin. The solvent may be an aliphatic alcohol, acetone, methyl ethyl ketone, ethyl acetate or acetic acid. The acid may be acetic or a mineral acid. Specifications 184,081, [Class 121], and 453,877 are referred to.
