Abstract

a presente invenção refere-se a um método para a fabricação de um produto lácteo fermentado filtrado compreendendo as seguintes etapas sucessivas: (a) - fornecimento de um produto lácteo, (b) adição de uma lactase e uma cultura de bactérias compreendendo pelo menos uma cepa de bactérias acidolácticas termofílicas, com a condição de que ela compreende qualquer cepa de bactérias acidolácticas mesofílicas e fermentação do produto lácteo para obter um produto lácteo fermentado, e (c)separação de um soro líquido a partir do produto lácteo fermentado para obter um produto lácteo fermentado filtrado.
