Abstract
本発明は、カラメル色素の退色が緩和された飲料を提供することを目的とする。また、本発明は、そのような飲料の製造方法、及び飲料中のカラメル色素退色を緩和する方法を提供することも目的とする。 以下の条件(A)及び(B):(A)RebAの含有量に対するRebD又はRebMの含有量の比率が0.45以上である、及び(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように含有する、を満たす飲料。
Description
本発明は、飲料中のカラメル色素の退色が緩和された飲料に関する。
多様化する消費者ニーズに対応すべく、様々な飲料が開発され、市販されている。ショ糖等の糖類は、甘味を与える等の目的で飲料にごく普通に配合される成分であるが、過剰摂取による健康への影響が指摘されてきており、低カロリー飲料に対するニーズがある。そして、天然由来の素材に対するニーズが高まりつつある。これらのニーズに応えるべく、糖類に比べて甘味度が高い、天然由来の甘味料が注目されつつある。特許文献1は、ビタミン、高甘味度甘味料、及び甘味改善組成物を含有する機能性甘味料組成物を開示する。
天然甘味料の一つにステビア抽出物があり、本願の発明者は、ステビア抽出物の飲料への利用に関して研究を行っている。その研究の過程において、カラメル色素を含有する飲料にステビア抽出物を配合すると、飲料におけるカラメル色素の退色がさらに進行するという問題が見出された。なお、詳細は後述するが、天然甘味料として、ステビア抽出物の甘味成分としてステビオサイド(Stevioside)、レバウディオサイド(Rebaudioside、以下「Reb」とする。)等が知られている。
本発明は、上記の問題点に鑑みてなされたものであり、ステビア抽出物を配合していながらもカラメル色素の退色が緩和された飲料を提供することを目的とする。
本発明者らは、上記課題を解決すべく鋭意検討した結果、驚くべきことに、ステビア抽出物において、RebAの含有量とRebD及び/又はRebMの含有量との比率を所定の範囲に調整することによって、飲料におけるカラメル色素の退色が緩和されることを見出した。かかる知見に基づいて、本発明者らは、本発明を完成させた。
(1)以下の条件(A)及び(B):
(A)RebAの含有量に対するRebD及び/又はRebMの含有量の比率が0.45以上である、及び
(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように含有する、
を満たす、飲料。
(2)前記条件(A)の比率が2.2~2.8である、(1)に記載の飲料。
(3)カラメル色素がカラメルIVである、(1)又は(2)に記載の飲料。
(4)飲料のBrix(ショ糖換算)が1~15である、(1)~(3)のいずれか1に記載の飲料。
(5)飲料中のカラメル色素の退色を緩和する方法であって、
(A)RebAの含有量に対するRebD及び/又はRebMの含有量の比率を0.45以上に調整する工程、及び
(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように添加する工程、
を含む、前記方法。
(6)カラメル色素の退色が緩和された飲料であって、
以下の条件(A)~(E):
(A)RebAの含有量に対するRebMの含有量の比率が2.4以上である、

以下、本発明の実施の形態に係る飲料を説明する。
本発明の実施の形態に係る飲料は、以下の条件(A)及び(B):
(A)RebAの含有量に対するRebD及び/又はRebMの含有量の比率が0.45以上である、及び
(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように含有する、
を満たす飲料である。

Reb(レバウディオサイド(Rebaudioside))は、ステビア抽出物に含まれる甘味成分として知られている。ステビア抽出物は、ステビア乾燥葉から抽出、精製されたものである。ステビアは南米パラグアイを原産地とする菊科多年生植物で、学名をステビア・レバウディアナ・ベルトニー(Stevia Rebaudiana Bertoni)という。ステビアは砂糖の約300倍以上の甘味を持つ成分を含むので、この甘味成分を抽出して天然甘味料として用いる為に栽培されている。Rebとしては、RebA、RebB、RebC、RebD、RebEが知られている。更に、最近では特表2012-504552に記載のRebM等、様々な配糖体の存在が報告されている。様々なRebの中で、RebAは、高甘味度と良質甘味を有する甘味料として評価されており、広く用いられている。本発明の実施の形態では、ステビア抽出物としてRebA、RebD、及びRebMに着目する。RebA、RebD、及びRebMは、市場から入手することができるし、有機化学的手法により合成することもできる。或いは、ステビア抽出物を出発原料として、RebA、RebD、及びRebMを分離、精製することもできる。例えば、RebAは特表2009-517043号に記載された方法に従って精製することができ、RebDはUS8414949号に記載された方法に従って精製することができ、そしてRebMはFoods 2014, 3(1), 162-175; doi:10.3390/foods3010162に記載された方法に従って精製することができる。RebA、RebD、及びRebMは、いずれの方法によって分析してもよいが、例えば、特表2012-504552号に記載の条件に設定した高速液体クロマトグラフィー分析計(HPLC)により分析することができる。本明細書では、特に記載がなければ、当該方法によりRebA、RebD、及びRebMを分析するものとする。
本発明の実施の形態に係る飲料では、RebA、並びにRebD及び/又はRebMの含有量が特定の比率で配合される。具体的には、RebAの含有量に対するRebD及び/又はRebMの含有量の比率((RebD及び/又はRebM)/RebA)が0.45以上である。当該比率が0.45未満になると、飲料におけるカラメル色素の退色を緩和する効果が低くなる傾向にある。なお、本明細書において「RebD及び/又はRebM」とは、RebD及びRebMの両方が含まれていてもよいし、RebD又はRebMのいずれか一方のみが含まれていてもよいことを意味する。これにより上記の含有量の比率は、
(i)RebAの含有量に対するRebD及びRebMの合計含有量の比率、
(ii)RebAの含有量に対するRebDの含有量の比率、及び
(iii)RebAの含有量に対するRebMの含有量の比率、
にそれぞれ対応することができる。
(i)RebAの含有量に対するRebD及びRebMの合計含有量の比率、
(ii)RebAの含有量に対するRebDの含有量の比率、及び
(iii)RebAの含有量に対するRebMの含有量の比率、
にそれぞれ対応することができる。
本発明の実施の形態に係る飲料において、RebAの含有量に対するRebD及び/又はRebMの含有量の比率は、好ましくは1以上、より好ましくは2.4以上である。また、当該比率はさらに大きい数値であってもよく、例えば、5以上、10以上、30以上、50以上、70以上、又は100以上であってもよい。RebDについてはさらに大きい数値であってもよく、RebAの含有量に対するRebDの含有量の比率は、例えば、150以上、200以上、又は250以上であってもよい。RebMに関しては、RebAの含有量に対するRebMの含有量の比率は、例えば、5以上、10以上、30以上、50以上、70以上とすることができる。
また、RebAの含有量に対するRebD及び/又はRebMの含有量の比率は、特に限定されないが、例えば、500以下、400以下、又は300以下とすることができる。RebDについて、RebAの含有量に対するRebDの含有量の比率は、例えば、500以下、400以下、又は300以下とすることができる。RebMについてはさらに小さい数値であってもよく、RebAの含有量に対するRebMの含有量の比率は、例えば、200以下、150以下、100以下、90以下、又は80以下であってもよい。一つの実施形態として、RebAの含有量に対するRebD及び/又はRebMの含有量の比率は、例えば20以下であり、好ましくは9.5以下、より好ましくは4.2以下である。RebAの含有量に対するRebD及び/又はRebMの含有量の比率の好ましい範囲としては1~9.5であり、より好ましくは2.2~2.8であるが、特にこれに限定されない。
ここで、上記の含有量の比率は、Brix比(ショ糖換算)に換算することができる。ショ糖に対して、RebAは300倍、RebDは285倍、RebMは285倍の甘味度を有する。Brix比(ショ糖換算)は、ショ糖に対するRebの甘味度とRebの含有量から計算することができる。そのため、ショ糖換算のBrix比は、RebAの含有量を300倍した数値、RebDの含有量を285倍した数値、及びRebMの含有量を285倍した数値を用いて算出することができる。この計算方法に基づき、逆にBrix比(ショ糖換算)から上記の質量比を求めることもできる。なお、ショ糖換算のBrixが1に相当する量は、RebAについては33.3ppm、RebDについては35.1ppm、及びRebMについては35.1ppmである。
本願の発明者は、ステビア抽出物を含有する飲料に関して、カラメル色素の退色の進行にRebAが関与していることを初めて見出している。本発明の実施の形態は、カラメル色素含有飲料において、ステビア抽出物としてのRebAの含有量を少なくすることによって当該色素の退色を緩和するものである。RebAの含有量は、例えば、飲料中、350ppm以下、好ましくは300ppm以下、より好ましくは250ppm以下、200ppm以下、150ppm以下、100ppm以下、50ppm以下、又は30ppm以下であるが、これに限定されるものではない。また、RebAはわずかでも甘味を感じる程度に飲料に含まれていてもよく、例えば、1ppm以上、好ましくは5ppm以上、より好ましくは10ppm以上で飲料に含まれていてもよい。本明細書において用いる「ppm」は、特に断りがない限り、重量/容量(w/v)のppmを意味する。
上記のように、ステビア抽出物としてRebAの飲料における含有量を単に低くした場合、飲料にステビア抽出物に由来する甘味を十分に与えることができない。本願の発明者は、RebAに比べて、RebD及び/又はRebMがカラメル色素の退色を進行させにくくすることを初めて突き止めた。即ち、本発明の実施の形態は、飲料において、ステビア抽出物としてのRebAをReD及び/又はRebMに置き換えることにより、カラメル色素含有飲料の退色の問題に対処しながら、ステビア抽出物に由来する甘味を十分に与えることを可能とする。本発明の実施形態の飲料においては、RebD又はRebMの含有量は、RebAの代替として必要な量とすることができる。上述した通り、本発明の実施形態の飲料は、RebD及びRebMを単独で又は組み合わせて含有することができる。RebD又はRebMが単独で含有される場合、飲料中のRebD又はRebMの含有量は、特に限定されないが、例えば10~550ppmであり、好ましくは30~500ppm、より好ましくは50~500ppmである。RebD及びRebMのいずれもが含有される場合は、RebDとRebMの合計量は、特に限定されないが、例えば10~550ppmであり、好ましくは30~500ppm、より好ましくは50~500ppmである。
本発明の実施の形態に係る飲料では、特に制限されないが、適度な甘味を感じることができるようその甘味度を調整することができる。その甘味度として、例えば、本発明の実施の形態に係る飲料のBrix(ショ糖換算)は1~15である。当該Brixは、飲料の使用状況等に応じて適宜設定することができ、例えば3~13、又は7~13の範囲に設定することができる。また、当該Brixは低い範囲にも高い範囲にも設定可能であり、その場合は、例えば5以下(例えば、1~5)、4以下(例えば、1~4)、3以下(例えば、1~3)、2以下(例えば、1~2)、或いは、10以上(例えば、10~15)、11以上(例えば、11~15)、12以上(例えば、12~15)、13以上(例えば、13~15)、14以上(例えば、14~15)とすることができる。本発明の実施の形態に係る飲料のBrix(ショ糖換算)は、RebA、RebD及びRebMの合計含有量のみで調整してもよいし、或いは、RebA、RebD及びRebM以外の甘味料を用いて、全甘味料の合計値として調整してもよい。
本発明の実施の形態に係る飲料は、カラメル色素を含有する。カラメル色素としては、食用に適する公知のカラメル色素を使用することができる。例えば、砂糖又はブドウ糖に代表される食用炭水化物を熱処理して得られるもの、又は酸もしくはアルカリを加えて食用炭水化物を熱処理して得られるもの等をカラメル色素として用いることができる。また、果汁や野菜汁に含まれる糖分をカラメル化して使用することもでき、この場合、加熱処理、酸やアルカリ処理などによって糖分をカラメル化することができる。
本発明において、カラメル色素は、カラメルI、カラメルII、カラメルIII及びカラメルIVのあらゆる区分のカラメルを使用することができる。各種区分のカラメル(I~IV)は、カラメル色素の製造時の亜硫酸化合物及びアンモニウム化合物での処理の有無により区別される。即ち、カラメルIは、亜硫酸化合物及びアンモニウム化合物のいずれも使用せずに食用炭水化物を熱処理して得られたカラメル色素であり、カラメルIIは、アンモニウム化合物は使用せず、亜硫酸化合物を使用して、食用炭水化物を熱処理して得られたカラメル色素であり、カラメルIIIは、亜硫酸化合物は使用せず、アンモニウム化合物を使用して、食用炭水化物を熱処理して得られたカラメル色素であり、カラメルIVは、亜硫酸化合物及びアンモニウム化合物を両方とも使用して食用炭水化物を熱処理して得られたカラメル色素である。本発明の実施の形態に係る飲料では、特に限定されないが、好ましくはカラメルIVが含有される。
本発明の実施の形態に係る飲料においては、飲料のLab値はそれぞれL:45~55、a:10~20、及びb:25~35であり、そのようなLab値となるように飲料の色を調整することができる。前記Lab値は、好ましくはL:47~53、a:16~20、及びb:29~34である。本発明の実施の形態に係る飲料のLab値は、カラメル色素の含有量で調整することができる。即ち、本発明の実施の形態に係る飲料は、カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、b:25~35となるように含有することができる。
本発明の実施の形態に係る飲料において、飲料のLab値は当業者に公知の計測装置を用いて測定することができる。具体例としては、後述の試験例に示されるように、日本電色工業社製の分光色差計(色度計)SE6000を用いてLab値を測定することができるが、特にこれに限定されるわけではない。
また、本発明の実施の形態に係る飲料において、カラメル色素の含有量は濃度で特定することもできる。その場合、特に限定されるわけではないが、飲料中のカラメル色素の含有量は、0.01~0.5重量%(w/w)とすることができ、好ましくは0.03~0.5重量%(w/w)、より好ましくは0.05~0.4重量%(w/w)とすることができる。
本発明の実施の形態に係る飲料において、カラメル色素の含有量を測定する方法は特に限定されないが、例えば、ガスクロマトグラフィー、HPLC等を用いて測定することができる。各種公定書に記載されている定量法、定性法、確認試験法または純度試験法などの方法を適宜応用して用いてもよく、また、文献公知の方法を改良して用いてもよい。また、製品や製品パンフレットなどの表示・記載や、製造指図書、製造記録、許認可に係る書類などから判断することもできる。
本発明の実施の形態に係る飲料は、本発明の効果を妨げない限り、カテキン等のポリフェノール類、植物の抽出物、カフェイン、シンナムアルデヒド、及び甘味料(砂糖、異性化液糖、等の糖類、並びにアスパルテーム、スクラロース、及びアセスルファムK等の高甘味度甘味料)、香料、酸味料(クエン酸、酒石酸、リンゴ酸、リン酸、乳酸)、着色料、果汁、果汁ピューレ、乳、乳製品、その他のフレーバー、及び強化剤(ビタミン類、カルシウム、ミネラル類、アミノ酸類)等の、飲食品に用いることのできる成分を更に含んでもよい。これらの成分は単独又は複数を組み合わせて飲料に配合してもよい。
本発明において、飲料の種類は特に限定されず、炭酸飲料、非炭酸飲料、アルコール飲料、非アルコール飲料、栄養飲料、機能性飲料などいずれであってもよい。
本発明の実施の形態に係る飲料を炭酸飲料(即ち、発泡性)とする場合、その方法は特に制限されず、発酵により炭酸ガスを飲料中に発生させてもよく、或いは人為的に炭酸ガスを飲料に注入してもよい。炭酸ガスを注入する場合、そのガス圧は、液温が20℃において、例えば1~5kgf/cm2、好ましくは2~5kgf/cm2、より好ましくは3~5kgf/cm2とすることができる。炭酸ガスの添加は、当業者に公知の方法を用いて行うことができる。飲料中の炭酸ガス圧は、例えば、京都電子工業製ガスボリューム測定装置GVA-500Aを用いて測定することができる。
本発明の実施の形態に係る飲料は、特に限定されないが、容器詰めとすることができる。容器は、いずれの形態・材質の容器を使用することができ、例えば、ビン、缶、樽、又はペットボトル等の容器であってもよい。また、飲料の容器への充填方法も特に制限されない。
本発明の実施形態の別の側面によれば、飲料中のカラメル色素の退色を緩和する方法が提供される。本発明の方法は、飲料中のカラメル色素の退色を緩和する方法であって、
(A)RebAの含有量に対するRebD及び/又はRebMの含有量の比率を0.45以上に調整する工程、及び
(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように添加する工程、
を含む、前記方法である。

本発明の実施の形態に係る方法では、特に限定されないが、RebA、RebD、及びRebM、飲料中の含有量が上記に示した量となるように飲料に配合することができる。また、本発明の方法では、特に限定されないが、カラメル色素も上記に示した含有量となるように飲料に配合することができる。各種成分の配合順序は特に限定されるものではなく、また、各種成分は同時に配合されてもよい。また、本発明の方法は、上記に示した成分及び材料を配合する工程やそれらの含有量を調整する工程も含むことができる。本発明の方法において、飲料中の成分の種類やその含有量等の各種要素については、本発明の飲料に関して上記した通りであるか、それらから自明である。
本発明の実施の形態に係る方法により、カラメル色素を含有する飲料において、そのカラメル色素の退色の程度を緩和することができる。
以下、実験例及び実施例を示して本発明の詳細を具体的に説明する。以下の説明は、本発明の理解を容易にすることをのみを目的とするものであり、本発明の範囲を限定することを意図するものではない。
飲料中のカラメル色素の退色の程度を調べるため、以下の通り飲料サンプルを調製した。
まず、カラメル色素としてカラメルIV(Z-80(仙波糖化工業株式会社))を用い、これを2960mg/Lの濃度となるよう純水に添加した。次に、得られたカラメル色素含有溶液に、下表に示した配合量となるようにRebA、RebD及びRebMを添加した。Lab測定値補正用のコントロールとして、RebA、RebD及びRebMは添加していないカラメル色素含有溶液を用いた。
各種飲料サンプル及びLab測定値補正用コントロールサンプルのLab値(即ち、L、a及びbの値)を、分光色差計(日本電色工業社製、SE6000)を用いて測定した。
その後、人工気象器(日本医化器械製作所 NC-410HH)を用いて、各種サンプルに対して、55000luxで15時間15分(10000luxで3.5日分に相当)の光照射を行った。
光照射を行った後、再び、上記装置を用いて各種飲料サンプル及びLab測定値補正用コントロールサンプルのLab値を測定した。
光照射前後の各種飲料サンプルのLab値の差を求め、Lab測定値補正用コントロールサンプルの光照射前後のLab値の差を1としたときの相対値をそれぞれ算出した。なお、Lab値の差は、下記式を用いて求めた。
光照射前のL値:L1、光照射後のL値:L2
光照射前のa値:a1、光照射後のa値:a2
光照射前のb値:b1、光照射後のb値:b2
Lab値の差 = ((L2-L1)2+(a2-a1)2+(b2-b1)2)1/2
光照射前のL値:L1、光照射後のL値:L2
光照射前のa値:a1、光照射後のa値:a2
光照射前のb値:b1、光照射後のb値:b2
Lab値の差 = ((L2-L1)2+(a2-a1)2+(b2-b1)2)1/2
各種飲料サンプルのLab値の差を調べた結果を下記の表に示す。また、Lab測定値補正用コントロールサンプルに対する各種飲料サンプルの相対値の結果を図1及び2に示す。
図1及び2に示される通り、RebAの含有量の一部又は全部をRebD又はRebMで置き換えることによって、カラメル色素の退色の程度が緩和された。特に、RebAに対するRebD又はRebMのショ糖換算のBrix比((RebD又はRebM)/RebA)が3/7以上、即ち質量比が0.45以上で、カラメル色素の退色の程度が緩和された。なお、D50、D70及びD100の飲料サンプルは、D0(即ち、RebAの比率が100%)の飲料サンプルに対して統計学的有意差を持って退色が緩和することが示された。また、同様に、M70の飲料サンプルは、M0(即ち、RebAの比率が100%)の飲料サンプルに対して統計学的有意差を持って退色が緩和することが示された。
また、下表に示すように、RebMに関しては、RebAに対するRebMの比率が高くなるにつれて全体のモル数は小さくなることがわかる。しかしながら、全体のモル数は小さくなるにもかかわらず、RebMの比率が高くなるとカラメル色素の退色の程度が緩和される結果となった。これは、RebMがRebAに比べて分子量が大きい化合物であるため、RebMの方がよりカラメル色素を光からブロックしていることに起因していると考えられた。
Claims (4)
- 以下の条件(A)及び(B):
(A)RebAの含有量に対するRebD及び/又はRebMの含有量の比率が0.45以上である、及び
(B)カラメル色素を、飲料のLab値がそれぞれL:45~55、a:10~20、及びb:25~35となるように含有する、
を満たす、飲料。 - 前記条件(A)の比率が2.2~2.8である、請求項1に記載の飲料。
- カラメル色素がカラメルIVである、請求項1又は2に記載の飲料。
- 飲料のBrix(ショ糖換算)が1~15である、請求項1~3のいずれか1項に記載の飲料。
