Abstract

La presente invención se refiere a un procedimiento para preparar un producto fermentado de la leche que contiene entre el 4% y el 5%, en peso, de proteína, que comprende: a. Poner en contacto la leche con una enzima con actividad carboxipeptidasa. b. Poner en contacto la leche con una composición que contiene bacterias de ácido láctico. La invención se refiere además, al uso de una enzima con actividad carboxipeptidasa para aumentar la fluidez de un producto fermentado de la leche.
