Abstract
"COMPOSIçãO ESPESSANTE PARA TEMPEROS E PRODUTOS SIMILARES". A presente invenção refere-se a uma composição espessante alimentícia fluida, fracionável e estável durante a estocagem, contendo amido não-gelatinizado. A presente invenção refere-se a um novo tipo de composição fluida concentrada dispersável, baseada em amido, que pode ser dispersada em líquido frio ou quente com mínima ou nenhuma formação de grumos, utilizável como base para temperos ou como espessante/aglutinante em alimentos, e que pode ser obtida colocando amido em suspensão dentro de uma base aquosa que contém pelo menos um agente depressor de a~ w~, de tal modo que a atividade em água do produto proporcione estabilidade na estocagem sem pasteurização e/ou ajuste do pH, e ao mesmo tempo, conserve sua fluidez.
