Abstract

"CONFEITO CONGELADO". A presente invenção refere-se a um confeito congelado preservando sua untuosidade e apresentando reduzido crescimento cristalino durante um choque por calor seguido por recongelamento, e compreendendo gordura, adoçante, sólidos do leite que não sejam gordura e água, caracterizado pelo fato da soma das quantidades de amido e sólidos do leite que não sejam gordura ficar entre 2,5 e 18 % e pelo fato da proporção em peso de amido/sólidos do leite que não sejam gordura ficar entre 0,03 e 1,5. Processo para a fabricação de um tal confeito congelado.
