Abstract

Patente de Invenção: <B>"PROCESSO DE GORDURA E ALIMENTO QUE CONTéM GORDURA"<D>. Esta invenção refere-se a um processo para controlar a solidificação e/ou cristalização de uma gordura ou um alimento que contém gordura, caracterizado pelo fato de que a solidificação e/ou cristalização é realizada sob a influência de um campo magnético. O processo pode ser utilizado particular e vantajosamente onde a gordura é polimórfica, por exemplo manteiga de cacau, e o campo magnético permite que a gordura seja produzida sob uma forma cristalina particular. Assim, pode ser produzido um produto que contém manteiga de cacau em forma sólida, tendo a manteiga de cacau sido formada diretamente de uma fase líquida em forma de cristais VI sem ter passado por outra forma de cristais e sem adição de cristais-semente.
