Abstract

A találmány tárgya eljárás cseppfolyós halmazállapotú vagy oldottállapotban lévő anyag olvadékból vagy oldatból való kristályosítására.Az eljárással különösen trigliceridzsírokat, nevezetesen növényiolajokat vagy állati eredetű zsírokat, például tejzsírt lehetkristályosítani. A találmány szerint oly módon járnak el, hogykristályosítás közben a folyadékot ultrahangnak teszik ki átmenetikavitációtól mentesen. A folyadékot konkrétan annyi ideig és olyanultrahang-frekvenciával kezelik, amely körülmények között afolyadékban stabil kristályok nukleációja indukálódik a kavitációsküszöb túllépése nélkül, az átmeneti kavitáció és az ízek azzal járóromlásának elkerülésével. A találmány tárgya továbbá eljárástrigliceridolaj frakcionálására, melynek során a) ha a zsír szilárd, atriglicerid olajat addig melegítik, míg nem marad jelentős mennyiségűszilárd triglicerid az olajban; b) a triglicerid olajat hűlni éskristályosodni hagyják, amíg egy szilárd sztearin frakció és egyfolyékony olefin frakció képződik; c) a sztearin frakciótelválasztással kinyerik az olefin frakcióból, oly módon, hogy a b)lépés alatt az olajat ultrahangnak teszik ki átmeneti kavitációtólmentesen.
