"MéTODOS PARA A PREPARAçãO DE UM DOCE PROCESSáVEL POR CALOR, MéTODOS PARA A PREPARAçãO DE UM DOCE DE CHOCOLATE E DE UM DOCE NãO DE CHOCOLATE PROCESSáVEL EM TEMPERATURA ULTRA ELEVADA, E, DOCE PROCESSáVEL POR CALOR". A invenção atual apresenta uma sobremesa de doce RTE firme, processável por calor. A sobremesa de doce RTE desta invenção e preparada a partir de uma mistura emulsificada de água, gordura, leite, lecitina, e um aglutinante aquoso. Poderão ser adicionados adoçantes e/ou flavorizantes para fornecerem o nível desejado de adoçamento ou o perfil desejado de sabor. é apresentada uma sobremesa de textura de doce confeitado, firme, macia, compreendendo cerca de 20 a cerca de 60% de água, cerca de 15 a cerca de 45% de gordura, cerca de 1 a cerca de 15% de leite desidratado sem gordura (ou proteína do leite equivalente), cerca de 0,1 a cerca de 3% de lecitina, e cerca de 0,1 a cerca de 20% de aglutinante aquoso.
