Description
(a)5重量%未満のトリグリセリド脂肪、(b)ポリデキストロースおよび(c)リン酸三カルシウムを含有する冷凍菓子に関する。菓子は、1重量%未満の濃度のトリグリセリド脂肪を用いるのが好ましく、0.5重量%未満であるのがより好ましい。さらに好適な実施形態に関しては、少なくとも一種以上の脂肪原料がクリームである。
(a)5重量%未満のトリグリセリド脂肪、(b)ポリデキストロース、および(c)カラヤガムを含有する冷凍菓子を含む。トリグリセリド脂肪の濃度は、1重量%未満であるのが好ましく、0.5重量%未満であるのが特に好ましい。また、少なくとも一種以上の脂肪原料が、クリームであることもまた好ましい。
以下の成分を用いて、低脂肪ファッジバーを上記のように製造する。

Claims (5)
- 5重量%未満のトリグリセリド脂肪と、
ポリデキストロースと、
リン酸三カルシウムを含有する冷凍菓子。 - 前記トリグリセリド脂肪の濃度が、1重量%未満である請求項1に記載の冷凍菓子。
- 前記トリグリセリド脂肪の濃度が、0.5重量%未満である請求項2に記載の冷凍菓子。
- 少なくとも一種以上の脂肪原料が、クリームである請求項1に記載の冷凍菓子。
- 5重量%未満のトリグリセリド脂肪と、
1〜7重量%のポリデキストロースと、
基準1日摂取量(RDI)の10〜30%のカルシウムを供給するのに充分な量のリン酸三カルシウムを含有する冷凍菓子。
