Abstract

Patente de Invenção: "MéTODO PARA PREPARAçãO DE PRODUTOS DESIDRATADOS". Esta invenção proporciona um método para preparação de frutas, legumes e tubérculos desidratados. As etapas do método incluem ferver produto bruto comestível inteiro, fatias ou pedaços desse produto bruto comestível por um tempo suficiente para cozinhar parcialmente o amido e amolecer o tecido do produto comestível; fragmentar o produto cozido; e secar o produto fragmentado. O produto bruto comestível é preferencialmente não-descascado ou parcialmente descascado. O produto desidratado resultante (1) retém mais Vitamina C; (2) apresenta cor mais clara; (3) alta porcentagem de amilose livre; (4) menos células rompidas; e (5) produtos com menos degradação do que um produto correspondente produzido através de métodos convencionais.
