Abstract
"PRODUTO ALIMENTìCIO TRIDIMENSIONAL, MéTODOS DE FABRICAR UM PRODUTO ALIMENTìCIO POR CO-EXTRUSãO E DE CO-EXTRUDAR DOIS MATERIAIS A' E B' EM UMA MATRIZ DE EXTRUSãO E APARELHO". Dois ou mais materiais diferentes, especialmente materiais alimentícios, são co-extrudados através de orifícios adjacentes de uma extrusora. Os fluxos dos dois materiais são cortados em uma direção transversal ao fluxo para formar segmentos de fluxo. Esses segmentos são entremeados de modo a unir a montante e a jusante de cada segmento de primeiro material a um segmento de um segundo material. De um modo geral, duas fileiras de fluxos segmentados unidos são extrudadas lado a lado. De preferência, entre as duas fileiras é formada uma parede limite de célula, que, usualmente, é transformada em um material mais duro após a extrusão. Paredes de células do material mais duro podem circundar, em duas ou três dimensões, células de material mais flexível ou de espuma. A co-extrusão é realizada por um método em que os elementos de divisão que segmentam os fluxos de movem através dos orifícios da extrusora em ritmo com a imposição de pressão de extrusão sobre o material através do respectivo orifício. Os elementos de divisão podem se alternar ou girar em relação aos orifícios. De preferência, os elementos de divisão são fixos e os orifícios são levados a se moverem. Nesse caso, o material pode ser fornecido de respectivos reservatórios em componente fixos, para a porção móvel. O processo e o aparelho são particularmente úteis para produzir produtos de confeitaria, por exemplo, formados de chocolate, marzipan ou materiais de massa de pão.
