Abstract

Хранителният продукт съдържа твърда маса на шоколадова основа или друга подобна основа, в комбинация с влажна незамразена маса. Твърдата шоколадова маса поема слабо вода при подходящи условия на съхранение. Тя съдържа следните компоненти в тегл. %: мазнини от 43 до 80, сухо и обезмаслено какао <18,обезмаслено сухо мляко <17, захари >13, като тегловното съотношение между сухото обезмаслено какао и захарите и евентуално обезмасленото сухо мляко епод 0,45. Процентното съдържание на наличната несвързана вода във влажната среда е между 45 и 88%, а стойността на (тау) е под 3 и се определя от уравнението@тау = (- [вода] + 0,37) х MG + (5,25 х [вода] - 1,67) х (S + PLE) + (26,2 х [вода] - 9,6)х С (61 х [вода] - 14,5) х (S + PLE) x C.
