Abstract

Se describe una jalea de agua refrigerada que comprende una masa molida de jalea y una fase de fruta hecha de piezas de fruta, dichas piezas siendouniformemente distribuidas en el sistema de gelificacion, el sistema de gelificacion de aguac onsiste de 50 a 90% y la fase de fruta de 10 a 50% de lajalea de agua, en donde la masa molida de jalea comprende en peso 0.4 a 0.7% de xantano, un compuesto de gelificacion tomado en un grupo que consiste de 0.5 a1.5% de carragenina, 0,4 a 1.0%de c arragenina junto con 0,1 a 0,5% de goma de algarroba y 0.1 a 0.5% de goma de niaoui y 15 a 30% de azucar y en donde lafase de fruta tiene un contenido de azucar cercano al contenido de azucar de la masa molida de jalea y éste contiene entre0.4 a 0. 7% de xantano. Se revelaademás el procedimiento para preparar dicha jalea
