Abstract
Se refiere a un producto aireado congelado sin agregados de emulsionante y, preferentemente, sin agregados de estabilizante y con un contenido de grasade 6 a 18%, que satisface las siguientes condiciones: a) % GD > [2,29 * %G]; b) % PM100 < 80% - [5,93 * %G]; y c) una distribucion de tamano de celdas de airetal que el tamano promedio de celdas de aire es inferior a 40 micrones, con una desviacion estándar de 20 micrones; donde GD = grasa desestabilizada; G =grasa; PM100 = pérdida de masa después de 100 minutos. Además, se refiere a procedimientos para prepararlo.
