(4) Spread the rice sauce evenly over the surface of the frying pan and heat for 1 minute and 30 seconds. (5) Turn the frying pan upside down, remove the sauce rice, and measure the mass. The difference between the mass measured in (5) above and the mass measured in (2) above was defined as the burnt mass.

Abstract
乳化剤の添加量を低減したり、使用しなかったりしたとしても、離型油としての機能性を発揮することができる離型用油脂組成物を提供する。ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を有効成分として含有する、離型用油脂組成物である。また、食材を加熱調理する際に、前記食材にピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を添加する工程を含む、加熱調理食材の焦げ付き防止方法である。
Description
本発明は、離型用油脂組成物及び加熱調理食材の焦げ付き防止方法に関する。
油脂は食材とフライパン等との焦げ付きを防止する効果を有している。しかしながら、油脂単独では、焦げ付きを防止する効果が充分ではない場合があった。
このような問題に関して、例えば、特許文献1には、油脂にポリソルベートを所定量配合することにより、離型性、作業性、歩留まり、風味が共に優れた離型油が提供可能であると記載されている。
また、例えば、特許文献2には、油脂組成物に所定量のレシチンを含有することで、使用量を減らし、なおかつ、充分な離型性を有することが記載されている。
離型油などの機能油には、乳化剤が使用されることが多いが、需要者の嗜好によっては好まれない場合もある。
本発明の目的は、乳化剤の添加量を低減したり、使用しなかったりしたとしても、離型油としての機能性を発揮することができる離型用油脂組成物を提供することにある。また、これを利用した加熱調理食材の焦げ付き防止方法を提供することにある。
本発明者らは、鋭意研究した結果、特定の油脂を用いることによって上記課題を解決することができることを見出し、本発明を完成するに至った。
すなわち、本発明は、その第1の観点においては、ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を有効成分として含有する、離型用油脂組成物を提供するものである。
本発明による離型用油脂組成物においては、前記油脂が他の油脂とともに含まれてなる油脂組成物の形態であることが好ましい。
一方、本発明は、その第2の観点においては、食材を加熱調理する際に、前記食材にピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を添加する工程を含む、加熱調理食材の焦げ付き防止方法を提供するものである。
本発明による加熱調理食材の焦げ付き防止方法においては、前記油脂は、他の油脂とともに含まれてなる油脂組成物の形態で前記食材に添加することが好ましい。
また、上記加熱調理食材の焦げ付き防止方法においては、前記加熱調理は、炒め、焼成、蒸し、炊き、燻し、スチームコンベクション加熱、又は電子レンジ加熱から選ばれた1種であることが好ましい。
本発明によれば、ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を用いるので、乳化剤の添加量を低減したり、使用しなかったりしたとしても、離型油としての機能性を発揮させることができる。
本発明は、ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を用いて、離型油としての機能性を発揮させるものである。
ここで、「離型油としての機能性を発揮させる」とは、食材を加熱調理する際に、その食材に油脂を添加したうえ、炒めたり、焼成したり、蒸したり、炊いたり、燻したり、スチームコンベクション加熱したり、電子レンジ加熱したりすること等によって、その食材の表面の少なくとも一部をその油脂が覆うように処理し、これにより、加熱調理食材がフライパン、鍋、炊飯器、焼成モールド、鉄板等の加熱調理器具等に焦げ付くのを防止することをいう。防止とは、より具体的には、油脂を添加しない場合や、上記以外の油脂を添加した対照に比べて、加熱調理器具等に焦げ付く量が低減することをいう。また、焦げ付きは、例えば、加熱調理前後の調理器具の重量を測定して、その差を測定すること等によって評価することができる。
本発明に用いられるピーナッツオイルとしては、ピーナッツを油糧原料として調製された油脂を用いればよく、特に制限はないが、下記条件で測定したときの静的界面張力(mN/m)の値が23(mN/m)以下であることが好ましく、より好ましくは10~23(mN/m)の範囲であり、更により好ましくは12~23(mN/m)の範囲であり、特に好ましくは15~23(mN/m)の範囲である。
本発明に用いられるウォールナッツオイルとしては、ウォールナッツを油糧原料として調製された油脂を用いればよく、特に制限はないが、下記条件で測定したときの静的界面張力(mN/m)の値が23(mN/m)以下であることが好ましく、より好ましくは10~20(mN/m)の範囲であり、更により好ましくは12~20(mN/m)の範囲であり、特に好ましくは12~18(mN/m)の範囲である。
本発明に用いられるマカダミアナッツオイルとしては、マカダミアナッツを油糧原料として調製された油脂を用いればよく、特に制限はないが、下記条件で測定したときの静的界面張力(mN/m)の値が23(mN/m)以下であることが好ましく、より好ましくは5~20(mN/m)の範囲であり、更により好ましくは5~15(mN/m)の範囲であり、特に好ましくは7.5~12.5(mN/m)の範囲である。

・使用機器:滴下容量法表面張力測定装置TVT2(LAUDA社製)
・温度:25℃
・ニードル外径:1.060mm

上記した油脂は、1種類を単独で用いてもよく、2種類以上を併用してもよい。併用は、2種類以上の油脂を混合して併用してもよいし、段階的、順次的に2種類以上の油脂を併用してもよい。
一方、本発明により提供される離型用油脂組成物は、ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を有効成分として含有するものである。よって、上記油脂のそのものを、食材を加熱調理する際にその食材に添加して、離型用の機能性を発揮せるための組成物として使用してもよい。この場合、上記油脂の、その離型用油脂組成物中の含有量は100質量%である。また、上記油脂は、上述したように2種類以上の油脂を併用してもよい。ただし、本発明においては、上記した油脂は、該油脂が他の原料とともに含まれてなる油脂組成物の形態で用いられてもよい。
上記したピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂の、その離型用油脂組成物中の含有量としては、30質量%以上100質量%以下であることが好ましく、50質量%以上100質量%以下であることがより好ましく、70質量%以上100質量%以下であることが更により好ましく、80質量%以上100質量%以下であることが特に好ましい。
上記離型用油脂組成物には、本発明による目的を損ねない限り、上記した油脂以外の他の油脂を含有せしめてもよい。他の油脂としては、限定されないが、例えば、菜種油、大豆油、コーン油、米油、紅花油、ひまわり油、綿実油、ごま油、ぶどう種子油、亜麻仁油、カボチャ種子油、椿油、茶実油、オリーブ油、小麦胚芽油、パーム油、パーム核油、ヤシ油、サル脂、カカオ脂、シア脂などの植物油脂;牛脂、豚脂、鶏脂、乳脂、魚油などの動物油脂;中鎖脂肪酸トリグリセリドなどの合成油脂等が挙げられる。また、これらの油脂を、硬化、分別およびエステル交換から選ばれる1種または2種以上の処理をした加工油脂を使用することができる。この場合、他の油脂の、その離型用油脂組成物中の含有量としては、0質量%以上70質量%以下であることが好ましく、0質量%以上50質量%以下であることがより好ましく、0質量%以上30質量%以下であることが更により好ましく、0質量%以上20質量%以下であることが特に好ましい。なお、上記他の油脂としては、1種類を単独で用いてもよく、2種類以上を併用してもよい。
上記離型用油脂組成物には、本発明による目的を損ねない限り、乳化剤を含有せしめてもよい。乳化剤としては、限定されなないが、例えば、レシチン(大豆由来)、プロピレングリコール脂肪酸エステル、ポリグリセリン縮合リシノレイン酸エステル(PGPR)、ポリグリセリン脂肪酸エステル、モノグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、ショ糖脂肪酸エステル、モノグリセリン有機酸エステル等が挙げられる。この場合、乳化剤の、その離型用油脂組成物中の含有量としては、0.01質量%以上10質量%以下であることが好ましく、0.03質量%以上10質量%以下であることがより好ましく、0.05質量%以上8質量%以下であることが更により好ましく、0.07質量%以上5質量%以下であることが特に好ましく、0.1質量%以上5質量%以下であることが特により好ましい。なお、上記乳化剤としては、1種類を単独で用いてもよく、2種類以上を併用してもよい。ただし、本発明のより好ましい態様としては、上記離型用油脂組成物は、乳化剤を含有しないことが望ましい。
上記離型用油脂組成物には、本発明による目的を損ねない限り、上記した以外の他の素材を含有せしめてもよい。他の素材としては、例えば、トコフェロール、アスコルビン酸パルミテート、ローズマリー抽出物、茶抽出物、甘草抽出物等の酸化防止剤;クエン酸、リンゴ酸等の金属キレート剤;ビタミンA、ビタミンD等のビタミン類;シリコーン;香料等が挙げられる。
本発明が適用される食品としては、限定されないが、例えば、ソースご飯、チャーハン、焼きそば、ホイコウロウ、八宝菜、チンジャオロース等の料理、一般的な肉類、野菜類、魚介類、卵、豆腐等を使用した炒め物、焼き肉、餃子、焼き魚、お好み焼き、ハンバーグ、ホットケーキ、クレープ等の焼成品、食パン、パイ、デニッシュ、マフィン、タルト、ワッフル、ケーキなどのベーカリー食品類等が挙げられる。
以下、実施例を挙げて本発明を更に具体的に説明するが、これらの実施例は本発明を何ら限定するものではない。
〔1.油脂・乳化剤〕
表1には、以下の試験で使用した油脂及び乳化剤について、まとめて示す。なお、使用した油脂の静的界面張力を、下記条件で測定した。

(静的界面張力の測定)
・使用機器:滴下容量法表面張力測定装置TVT2(LAUDA社製)
・温度:25℃

〔2.焦げ付きの評価 その1〕
下記手順により、ソースご飯の焦げ付き評価を行った。
(1)ごはん60gにウスターソース(ブルドックソース株式会社製)6gをあえる。
(2)直径22cmのステンレス製フライパンの質量を測定する。
(3)フライパンに試験油1.5gを入れ、中心の表面温度が170℃になるまでIHヒーターで加熱する。
(4)ソースご飯を、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(5)フライパンを上下逆にしてソースご飯を取り除き、質量を測定する。
上記(5)で測定した質量と、上記(2)で測定した質量との差を、焦げ付きの質量とした。
下記手順により、ソースご飯の焦げ付き評価を行った。
(1)ごはん60gにウスターソース(ブルドックソース株式会社製)6gをあえる。
(2)直径22cmのステンレス製フライパンの質量を測定する。
(3)フライパンに試験油1.5gを入れ、中心の表面温度が170℃になるまでIHヒーターで加熱する。
(4)ソースご飯を、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(5)フライパンを上下逆にしてソースご飯を取り除き、質量を測定する。
上記(5)で測定した質量と、上記(2)で測定した質量との差を、焦げ付きの質量とした。
<試験1>
ソースご飯を炒める炒め油として表2に示す各種の油種からなるものを使用し、フライパンで炒めた後、そのフライパンへの焦げ付きを評価した。

結果を表2に示す。なお、焦げ付きの評価は菜種油を使用したときを基準にして、以下に示す段階的評価でも表記した。

その結果、表2に示されるように、ソースご飯を炒める炒め油として菜種油を使用した試験例1-1に比べ、ピーナッツオイルを使用した試験例1-2や、ウォールナッツオイルを使用した試験例1-3や、マカダミアナッツオイルを使用した試験例1-4では、いずれも焦げ付きが低減したことが分かる。特に、マカダミアナッツオイルを使用した試験例1-4では、乳化剤としてレシチンを使用した試験例1-5と同程度の焦げ付きの低減効果が認められた。
〔3.焦げ付きの評価 その2〕
下記手順により、ハンバーグの焦げ付き評価を行った。
(1)直径22cmのステンレス製フライパンの質量を測定する。
(2)フライパンに試験油1.5gを入れ、中心の表面温度が200℃になるまでIHヒーターで加熱する。
(3)ハンバーグの種100gを、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(4)フライパンを上下逆にしてハンバーグの種を取り除き、質量を測定する。
上記(4)で測定した質量と、上記(1)で測定した質量との差を、焦げ付きの質量とした。
下記手順により、ハンバーグの焦げ付き評価を行った。
(1)直径22cmのステンレス製フライパンの質量を測定する。
(2)フライパンに試験油1.5gを入れ、中心の表面温度が200℃になるまでIHヒーターで加熱する。
(3)ハンバーグの種100gを、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(4)フライパンを上下逆にしてハンバーグの種を取り除き、質量を測定する。
上記(4)で測定した質量と、上記(1)で測定した質量との差を、焦げ付きの質量とした。
<試験2>
ハンバーグを焼くための炒め油として表3に示す各種の油種からなるものを使用し、フライパンで炒めた後、そのフライパンへの焦げ付きを評価した。

結果を表3に示す。
その結果、表3に示されるように、ハンバーグを焼くための炒め油として菜種油を使用した試験例2-1に比べ、ピーナッツオイルを使用した試験例2-2や、ウォールナッツオイルを使用した試験例2-3や、マカダミアナッツオイルを使用した試験例2―4では、いずれも焦げ付きが低減したことが分かる。特に、ピーナッツオイルを使用した試験例2-2では、乳化剤としてレシチンを使用した試験例2-5と同程度の焦げ付きの低減効果が認められた。
Claims (5)
- ピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を有効成分として含有する、離型用油脂組成物。
- 前記油脂が他の油脂とともに含まれてなる油脂組成物の形態である、請求項1記載の離型用油脂組成物。
- 食材を加熱調理する際に、前記食材にピーナッツオイル、ウォールナッツオイル、及びマカダミアナッツオイルからなる群から選ばれた1種又は2種以上の油脂を添加する工程を含む、加熱調理食材の焦げ付き防止方法。
- 前記油脂は、他の油脂とともに含まれてなる油脂組成物の形態で前記食材に添加する、請求項3記載の加熱調理食材の焦げ付き防止方法。
- 前記加熱調理は、炒め、焼成、蒸し、炊き、燻し、スチームコンベクション加熱、又は電子レンジ加熱から選ばれた1種である、請求項3又は4記載の加熱調理食材の焦げ付き防止方法。
