Description
本発明は、乳化剤含有油脂組成物中の乳化剤の分離抑制方法、乳化剤含有油脂組成物、および乳化剤含有油脂組成物を用いて調理した食品の塩味増強方法に関する。
外食、中食、産業給食等の業態において、炒め物、炊飯、麺類の調理時等には、調理器具と食材との付着防止や、食材同士の付着防止といった作業性の向上が求められている。これら作業性の向上には、乳化剤を含む油脂組成物が利用されてきた。特許文献1~3には、特定の乳化剤を食用油脂に含有した炒め物用油脂組成物、米飯類用油脂組成物、麺ほぐれ改良用油脂組成物がそれぞれ記載されている。
また、乳化剤のHLB(Hydrophile Lipophile Balance)値は、乳化剤を構成する分子の親水性領域と親油性領域での親水/親油度のバランスによって算出される数値であり、親水性領域において親水基がない場合をHLB値0とし、逆に親油性領域において親油基がない場合をHLB値20として、そのHLB値0~20の範囲で按分された乳化剤に固有の数値である。一般的に、乳化剤を油脂組成物に含有させる場合、HLB値の高い乳化剤は濁りや沈降といった分離が生じるため、これまでは油となじみやすいHLB値の低いものが選択されてきた。
HLB値の比較的高い乳化剤を利用した例として、特許文献4に、食用油脂を70.0~96.5質量%、ジグリセリンモノラウレートを0.5~10.0質量%、及びジグリセリンモノオレートを3.0~20.0質量%含有する油脂組成物を食品の結着抑制剤として用いることが記載されている。
しかしながら、これら特許文献1~4には、HLB値10以上の高い乳化剤を使用することは記載されておらず、特許文献4においては、HLB値10以上の乳化剤を用いた際には乳化剤の溶解安定性が悪いことが示されている。
そこで、本発明者等が鋭意検討したところ、特定の乳化剤を所定量含有させることで、HLB値10以上20以下と高いHLB値である乳化剤を含有していても分離が抑制できることを見出した。
すなわち、本発明によれば、以下の乳化剤含有油脂組成物中の乳化剤の分離抑制方法、乳化剤含有油脂組成物、および乳化剤含有油脂組成物を用いて調理した食品の塩味増強方法が提供される。

本発明によれば、HLBが高い乳化剤を含む油脂組成物中の乳化剤の分離を抑制できる分離抑制方法、HLBが高い乳化剤を含んでいても分離が抑制された油脂組成物およびHLBが高い乳化剤を含む油脂組成物を用いて調理した食品の塩味増強方法を提供することができる。
以下、本発明の実施形態について説明する。なお、これらの各構成の任意の組み合わせや、本発明の表現を方法、装置などの間で変換したものもまた本発明の態様として有効である。

以下、乳化剤含有油脂組成物中の各成分について説明する。
(食用油脂)
乳化剤含有油脂組成物に用いられる原料油脂としては、食品に供される油脂であれば特に限定されないが、例えば、菜種油、大豆油、コーン油、米油、落花生油、紅花油、ひまわり油、綿実油、ごま油、ぶどう種子油、亜麻仁油、クルミ油、カボチャ種子油、椿油、茶実油、オリーブ油、小麦胚芽油、パーム油、パーム核油、ヤシ油、サル脂、カカオ脂、シア脂などの植物油脂;牛脂、豚脂、鶏脂、乳脂、魚油などの動物油脂;中鎖脂肪酸トリグリセリドなどの合成油脂などが挙げられる。
また、これらの油脂を、硬化、分別およびエステル交換から選ばれる1種または2種以上の処理をした加工油脂を使用することができる。
これらの食用油脂は、1種または2種以上を混合して用いてもよい。好ましくは菜種油、大豆油、コーン油、ひまわり油であり、より好ましくは菜種油、大豆油、コーン油であり、さらに好ましくは菜種油または大豆油である。
乳化剤含有油脂組成物に用いられる原料油脂としては、食品に供される油脂であれば特に限定されないが、例えば、菜種油、大豆油、コーン油、米油、落花生油、紅花油、ひまわり油、綿実油、ごま油、ぶどう種子油、亜麻仁油、クルミ油、カボチャ種子油、椿油、茶実油、オリーブ油、小麦胚芽油、パーム油、パーム核油、ヤシ油、サル脂、カカオ脂、シア脂などの植物油脂;牛脂、豚脂、鶏脂、乳脂、魚油などの動物油脂;中鎖脂肪酸トリグリセリドなどの合成油脂などが挙げられる。
また、これらの油脂を、硬化、分別およびエステル交換から選ばれる1種または2種以上の処理をした加工油脂を使用することができる。
これらの食用油脂は、1種または2種以上を混合して用いてもよい。好ましくは菜種油、大豆油、コーン油、ひまわり油であり、より好ましくは菜種油、大豆油、コーン油であり、さらに好ましくは菜種油または大豆油である。
(乳化剤(A))
乳化剤(A)はHLBが10以上20以下の乳化剤である。HLBは好ましくは12以上であり、より好ましくは13以上である。また、好ましくは18以下であり、より好ましくは16以下である。

乳化剤(A)の添加量は、食用油脂100質量部に対して0.05質量%以上5質量%以下であり、好ましくは0.08質量%以上5質量%以下であり、より好ましくは0.08質量%以上4質量%以下であり、さらにより好ましくは0.1質量%以上3質量%以下である。
乳化剤(A)の種類としては特に限定するものではないが、例えばポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、ポリソルベート、有機酸モノグリセリドなどが挙げられ、ポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、およびポリソルベートからなる群から選ばれる1種または2種以上が好ましい。
乳化剤(A)としてポリグリセリン脂肪酸エステルを添加する際のポリグリセリン脂肪酸エステルの脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が14以上20以下の脂肪酸であり、さらに好ましくは炭素数が18の脂肪酸であり、さらにより好ましくはオレイン酸である。また、グリセリン重合度は、好ましくは3以上10以下であり、より好ましくは5以上10以下である。
乳化剤(A)としてポリソルベートを添加する際のポリソルベートの脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が12以上18以下の脂肪酸であり、さらに好ましくはラウリン酸、ステアリン酸、およびオレイン酸からなる群から選択される1種または2種以上であり、さらにより好ましくはオレイン酸である。
乳化剤(A)としてショ糖脂肪酸エステルを添加する際のショ糖脂肪酸エステルの脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が13以上20以下の脂肪酸であり、さらに好ましくはラウリン酸、ステアリン酸、およびオレイン酸からなる群から選択される1種または2種以上であり、さらにより好ましくはオレイン酸である。
(乳化剤(B))
乳化剤(B)はHLB10未満の、ポリグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、およびプロピレングリコ―ル脂肪酸エステルから選ばれる1種または2種以上である。

乳化剤(B)としてポリグリセリン脂肪酸エステルを添加する際のHLBは、好ましくは8以下であり、より好ましくは7.5以下である。また、脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が14以上20以下の脂肪酸であり、さらに好ましくは炭素数が18の脂肪酸であり、さらにより好ましくはオレイン酸である。また、グリセリン重合度は、好ましくは2以上20以下であり、より好ましくは2以上10以下であり、さらにより好ましくは2である。
乳化剤(B)としてソルビタン脂肪酸エステルを添加する際のHLBは、好ましくは6以下であり、より好ましくは5.5以下である。また、脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が12以上18以下の脂肪酸であり、さらに好ましくは炭素数が18の脂肪酸であり、さらにより好ましくはオレイン酸である。
乳化剤(B)としてプロピレングリコール脂肪酸エステルを添加する際のHLBは、好ましくは6以下であり、より好ましくは4以下である。また、脂肪酸は、好ましくは炭素数が12以上22以下の脂肪酸であり、より好ましくは炭素数が12以上18以下の脂肪酸であり、さらに好ましくは炭素数が18の脂肪酸であり、さらにより好ましくはオレイン酸である。
(乳化剤(C))
乳化剤(C)はポリグリセリン縮合リシノレイン酸エステル(PGPRとも略される)である。グリセリン重合度は、好ましくは2以上10以下であり、より好ましくは2以上8以下であり、さらにより好ましくは3以上6以下である。

乳化剤(B)および乳化剤(C)から選ばれる1種または2種の添加量は、乳化剤(A)に対する質量比で2以上30以下が好ましく、2以上20以下がより好ましく、2以上18以下がさらにより好ましく、3以上16以下がことさら好ましい。
本実施形態において、乳化剤含有油脂組成物は、食用油脂、乳化剤(A)、乳化剤(B)および乳化剤(C)の乳化剤以外の成分を含んでもよい。たとえば、レシチン、シリコーン、香料、酵素製剤、アルカリ製剤、リン酸塩、増粘剤、色素、酸化防止剤、静菌剤、調味料等の通常食品に用いられる成分を含んでもよい。
本実施形態において、乳化剤含有油脂組成物は炒め用、炊飯用、麺の表面への付着用、または炊飯米の表面への付着用として用いられる。
炒め用として用いられる際に適用される食品は、炒飯、焼きそば、野菜炒め、一般的な肉類、魚介類の炒め物等が挙げられる。
炊飯用として用いられる際には、米飯の炊飯前あるいは炊飯後に添加して使用される。炊飯用として適用される米飯の用途としては、白米の他、ドライカレー、炊き込みご飯、鯛めし、ドリア、炒飯、チキンライス、ケチャップライス等が挙げられる。
麺の表面への付着用として用いられる際に適用される食品は、スパゲッティやマカロニ等のパスタ、中華麺、うどん、きしめん、素麺、フォー、韓国冷麺、春雨等が挙げられる。また、加熱後の麺に付着することが好ましい。
炊飯米の表面への付着用として用いられる際に適用される食品は、炊飯済の米飯が挙げられる。また、炊飯米の炊き立てもしくは加熱後に付着することが好ましい。
本実施形態においては、乳化剤含有油脂組成物を用いて調理した食品の塩味を増強することができる。
前記食品は、特に限定されないが、前記炒め用として用いられる際に適用される食品、前記炊飯用として用いられる米飯および麺の表面への付着用として用いられる際に適用される食品が挙げられる。
以下に、本発明の実施例について説明するが、本発明はこれに限定するものではない。
(乳化剤)
表1には、以下の試験で使用した乳化剤をまとめて示す。

(乳化剤含有油脂の調製方法)
食用油脂に各乳化剤を添加し、60℃に加温して完全に溶解させることにより、各乳化剤を含有する油脂を得た。

<試験1>
食用油脂として、精製菜種油(株式会社J-オイルミルズ製)を用いて、表2に示す配合の乳化剤含有油脂を調製し、分離評価を行った。結果を表2に示す。

比較例1、2に示すように、乳化剤(A)のみを添加すると分離が見られるが、乳化剤(B)または乳化剤(C)を所定量添加することで分離が抑制された。
<試験2>

(焦げ付きの評価)
下記手順により、ソースご飯の焦げ付き評価を行った。
(1)ごはん50gにソース(焼そばソース:オタフクソース株式会社製)10gと水5gをあえる。
(2)直径22cmのステンレス製フライパンの質量を測定する。
(3)フライパンに油脂1.5gを入れ、中心の表面温度が170℃になるまでIHヒーターで加熱する。
(4)ソースご飯を、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(5)フライパンを上下逆にしてソースご飯を取り除き、質量を測定する。
上記(5)で測定した質量と、上記(2)で測定した質量との差を、焦げ付きの質量とした。
下記手順により、ソースご飯の焦げ付き評価を行った。
(1)ごはん50gにソース(焼そばソース:オタフクソース株式会社製)10gと水5gをあえる。
(2)直径22cmのステンレス製フライパンの質量を測定する。
(3)フライパンに油脂1.5gを入れ、中心の表面温度が170℃になるまでIHヒーターで加熱する。
(4)ソースご飯を、フライパン表面を満遍なく覆うように広げ、1分30秒間加熱する。
(5)フライパンを上下逆にしてソースご飯を取り除き、質量を測定する。
上記(5)で測定した質量と、上記(2)で測定した質量との差を、焦げ付きの質量とした。
なお、焦げ付きの評価は対照例を使用したときを基準にして、以下に示す段階的評価でも表記した。

実施例15~実施例23に示すように、乳化剤Bを所定量添加することで分離が抑制され、かつ焦げ付き評価が良好であった。焦げ付き評価の観点では、乳化剤(A)の脂肪酸がオレイン酸のもので評価が高い傾向であった。
<試験3>
食用油脂として精製菜種油および精製大豆油(株式会社J-オイルミルズ製)を用いて、表4に示す配合の乳化剤含有油脂を調製し、分離評価および焦げ付き評価を行った。結果を表4に示す。

実施例24~29に示すように、乳化剤(A)と乳化剤(B)の質量比を変化させても分離抑制効果がみられ、かつ焦げ付き評価が良好であった。焦げ付き評価の観点では、乳化剤(A)のHLB値が13であるA-171EとO-15Dを用いた際に評価が高かった。
<試験4>
食用油脂として精製菜種油および精製大豆油(株式会社J-オイルミルズ製)を用いて、表5に示す配合の乳化剤含有油脂を調製し、分離評価および焦げ付き評価を行った。結果を表5に示す。なお、酵素分解レシチンはベネコートBMI-40L(花王株式会社製)を用いた。

実施例30~35に示すように、乳化剤(A)と乳化剤(B)の質量比を変化させても分離抑制効果がみられ、かつ焦げ付き評価が良好であった。
<試験5>
表6に示すように、対照例、実施例20、実施例38、実施例39、実施例40、実施例42の乳化剤含有油脂組成物を炒め油として用いて炒飯の塩味評価を行った。結果を表6に示す。
(炒飯の塩味増強効果の評価方法)
・炒飯の作成方法
(1)ステンレスフライパンの中心の表面温度が170℃になるまでIHヒーターで加熱した
(2)各乳化剤含有油脂組成物を2.5g投入し、30秒間加熱した
(3)溶いた卵15g、ごはん100gを順に投入し、30秒間炒めた
(4)味付塩こしょう(エスビー食品株式会社製)0.5g、ウェイパー(株式会社廣記商行製)1gを投入し、1分30秒炒めた
・塩味の評価方法
(1)作成した炒飯をプラスチック容器に入れ、4℃の冷蔵庫で2日間保管した。
(2)3名のパネラーが食し、合議により以下に示す評価基準で評点を付した。
<塩味の評価基準>
5:塩味を非常に強く感じる
4:塩味を強く感じる
3:塩味を感じる
2:塩味がやや弱い
1:塩味が弱い
表6に示すように、対照例、実施例20、実施例38、実施例39、実施例40、実施例42の乳化剤含有油脂組成物を炒め油として用いて炒飯の塩味評価を行った。結果を表6に示す。
(炒飯の塩味増強効果の評価方法)

表6に示すように、本発明における乳化剤含有油脂組成物を用いて調理した炒飯は、塩味が増強されていた。
<試験6>
表7の配合で、食用油脂に各乳化剤を添加し、110℃まで加熱して、乳化剤が溶解するかどうかを評価した。また、試験1と同様にして分離評価を行った。結果を表7に示す。

表7に示すように、ショ糖脂肪酸エステルの高HLB乳化剤であるO-1570のみ添加すると、加熱しても油脂に溶解せず、分離がみられるが、乳化剤(B)を所定量添加することにより、ショ糖脂肪酸エステルの高HLB乳化剤についても、油脂に溶解させることができ、かつ分離が抑制された。
<試験7>
表8に示すように、対照例、実施例30の乳化剤含有油脂組成物を炊飯に用いた場合のほぐれ性評価および老化感評価を行った。結果を表8に示す。

(ほぐれ性、老化感の評価方法)
下記手順により、炊飯米のほぐれ性、老化感評価を行った。
(1)洗米し30分間浸水させた米200gと、水270gとを炊飯器の釜に投入した。
(2)各乳化剤含有油脂組成物を3.0g添加し、かき混ぜた。
(3)炊飯器を用いて炊飯した。

表8に示すように、本発明における乳化剤含有油脂組成物を添加して炊飯した米は、良好なほぐれ性を有し、老化感が抑制されていた。
<試験8>
表9に示すように、対照例、実施例30の乳化剤含有油脂組成物を麺に用いた場合のほぐれ性評価を行った。結果を表9に示す。なお、麺は中華麺(株式会社菊水製)を用いた。

(ほぐれ性の評価方法)
下記手順により、麺のほぐれ性評価を行った。
(1)2000gの湯に200gの中華麺を投入し、3分間茹でた。
(2)茹で上がった麺を1分間冷水で冷却した後、3分間ざるに静置して水を切った。
(3)各乳化剤含有油脂組成物を2.7gボウルに量り取り、該ボウルに(2)の中華麺150gを加え、30秒間和えた。
(4)成形容器に移し、300gの重りを載せ、4℃の冷蔵庫で1日保管した。
(5)容器内の中華麺がほぐれるまでの秒数を記録した。
下記手順により、麺のほぐれ性評価を行った。
(1)2000gの湯に200gの中華麺を投入し、3分間茹でた。
(2)茹で上がった麺を1分間冷水で冷却した後、3分間ざるに静置して水を切った。
(3)各乳化剤含有油脂組成物を2.7gボウルに量り取り、該ボウルに(2)の中華麺150gを加え、30秒間和えた。
(4)成形容器に移し、300gの重りを載せ、4℃の冷蔵庫で1日保管した。
(5)容器内の中華麺がほぐれるまでの秒数を記録した。
表9に示すように、本発明における乳化剤含有油脂組成物を添加した麺は、良好なほぐれ性を有する。
<試験9>
食用油脂として精製菜種油および精製大豆油を用いて、表10に示す配合の乳化剤含有油を調製し、フライに用いた場合の油ハネ、サクミ、拭き取りやすさ評価を行った。結果を表10、図1に示す。なお、天ぷら粉は天ぷら粉黄金(昭和産業株式会社製)を、冷凍エビは天然むきえび(イオントップバリュ株式会社製)を用いた。
食用油脂として精製菜種油および精製大豆油を用いて、表10に示す配合の乳化剤含有油を調製し、フライに用いた場合の油ハネ、サクミ、拭き取りやすさ評価を行った。結果を表10、図1に示す。なお、天ぷら粉は天ぷら粉黄金(昭和産業株式会社製)を、冷凍エビは天然むきえび(イオントップバリュ株式会社製)を用いた。
下記手順により、油ハネ、サクミ、拭き取りやすさ性評価を行った。
(フライの作成方法)

(3)乳化剤含有油300gを170℃に達するまで加熱した。
(4)エビを衣にくぐらせ、(3)の油に入れ、1分半揚げた。
(油ハネの評価方法)
上記(4)においてエビを揚げている間、鍋の上に紙を置き、紙に付着した油を観察した。なお、片手鍋を用い、油を300g用いたとき、油の液面は鍋底から3cmの位置にあり、紙は油液面から4.5cmに位置する。
(サクミの評価方法)
3名のパネラーが食し、対照例を基準として評点を付し、3名の評点の平均値を求めた。
(評価)
5:対照例より非常にサクミが強い
4:対照例よりサクミが強い
3:対照例より少しサクミが強い
2:対照例と同等のサクミ
1:対照例よりサクミが弱い
(拭き取りやすさの評価方法)
フライを揚げた後の油を、Oil Blue N 0.5%で着色し、ステンレスバットに0.3g滴下した。水道水15gで満遍なく濡らしたキムタオルを上記ステンレスバットに10秒間当てた後に離し、バットに残った油を記録した。
(フライの作成方法)
(1)天ぷら粉100gに氷水150mLを加え、1分間攪拌し、天ぷら衣を調製した。
(2)冷凍エビを解凍し、水で洗い、ざるに静置して水を切った。
(3)乳化剤含有油300gを170℃に達するまで加熱した。
(4)エビを衣にくぐらせ、(3)の油に入れ、1分半揚げた。
(油ハネの評価方法)

(拭き取りやすさの評価方法)

表10に示すように、乳化剤(B)を所定量添加した本発明の乳化剤含有油を用いて揚げたフライは、良好なサクミを有する。また、図1に示すように、乳化剤(A)を添加した場合に油ハネが少なく、油の拭き取りやすさが向上したことが確認されたところ、乳化剤(B)を所定量添加した本発明の乳化剤含有油は、乳化剤(B)を添加していない油に比べ、更に油ハネが少なく、油の拭き取りやすさが向上した。
<試験10>
食用油脂として精製菜種油を用いて、表11に示す配合の乳化剤含有油脂組成物を調製し、試験1と同様に分離評価を行い、また、ごはんに用いた場合のほぐれ性評価を行った。結果を表11に示す。

(3)和えた後にしゃもじで和えた場合と、手でほぐした再のほぐれ性を総合して以下に示す評価基準で評点し、3回の評点の平均値を求めた。

4:ややほぐれが良い
3:通常のほぐれ性
2:ややほぐれが悪い
1:ほぐれが悪い

Claims (6)
- HLB10以上20以下の乳化剤(A)を含む食用油脂における、乳化剤の分離抑制方法であって、
前記食用油脂及び乳化剤の合計量に対して、前記乳化剤(A)を0.05質量%以上5質量%以下含有させると共に、
下記乳化剤(B)および下記乳化剤(C)から選ばれる1種または2種以上を0.01質量%以上20質量%以下含有させる、前記方法。
乳化剤(B):HLB10未満の、ポリグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、およびプロピレングリコ―ル脂肪酸エステルから選ばれる1種または2種以上
乳化剤(C):ポリグリセリン縮合リシノレイン酸エステル - 前記乳化剤(A)が、ポリグリセリン脂肪酸エステル、ポリソルベート、およびショ糖脂肪酸エステルから選ばれる1種または2種以上である、請求項1に記載の方法。
- 下記乳化剤(A)を含む食用油脂と、下記乳化剤(B)および下記乳化剤(C)から選ばれる1種以上を含む乳化剤含有油脂組成物であって、
前記食用油脂及び乳化剤の合計量に対して、下記乳化剤(A)を0.05質量%以上5質量%以下含み、
下記乳化剤(B)および下記乳化剤(C)から選ばれる1種または2種以上を0.01質量%以上20質量%以下含む、乳化剤含有油脂組成物。
乳化剤(A):HLB10以上20以下の乳化剤
乳化剤(B):HLB10未満の、ポリグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、およびプロピレングリコ―ル脂肪酸エステルから選ばれる1種または2種以上
乳化剤(C):ポリグリセリン縮合リシノレイン酸エステル - 前記乳化剤(A)が、ポリグリセリン脂肪酸エステル、ポリソルベート、およびショ糖脂肪酸エステルから選ばれる1種または2種である、請求項3に記載の乳化剤含有油脂組成物。
- 炒め用、炊飯用、麺の表面への付着用、または炊飯米の表面への付着用である、請求項3または4に記載の乳化剤含有油脂組成物。
- 請求項3または4に記載の乳化剤含有油脂組成物を用いて食品を調理する、食品の塩味増強方法。
