大豆油(株式会社J−オイルミルズ社製)
菜種油(株式会社J−オイルミルズ社製)
落花生油(株式会社J−オイルミルズ社製)
ペースト状レシチン(株式会社J−オイルミルズ社製 商品名:AYレシチン)
PC含量:20重量%
分画レシチン(株式会社辻製油社製 商品名:SLP PC−35)
PC含量:35重量%
酵素分解レシチン(株式会社花王社製 商品名:ベネコート BMI40L)
PC含量:10重量%
ショ糖脂肪酸エステル(株式会社三菱化学フーズ社製 商品名:リョートーシュガーエステル ER−290、)
ポリグリセリン縮合リシノール酸エステル(株式会社阪本薬品工業社製 商品名:SYグリスター CR―ED)
社団法人日本油化学会制定・基準油脂分析試験法(4.3.3.2−1996 リン脂質組成)に従って測定した。
60℃に保温した大豆油に、表1に記載したように分画レシチンを加え、充分に溶解して調製した油脂組成物を用いて、下記離型性試験を行なった。
中華鍋を200℃まで加熱し、油脂組成物20gを投入し、豚肉80g、もやし50g、麺200g、塩1g、こしょう1gの順で計2分炒めて、焼きそばを調理した。炒め調理後中華鍋に焦げ付いている具材の量により下記評価基準によって焦げ付きの評価を行なった。

3:良い
2:やや良い
1:悪い
60℃に保温した大豆油に、表2に記載したレシチンを加え、充分に溶解して調製した油脂組成物を用いて、試験例1と同様にして、焦げ付きの評価を行なった。
表3に示した油脂を60℃に保温し、分画レシチンを0.3重量%加え、充分に溶解して調製した油脂組成物を用いて、試験例1と同様にして、焦げ付きの評価を行なった。
比較例1−1、実施例1−3、実施例3−5の油脂組成物を使用して、表4に記載のように油脂組成物の使用量を変えたことを除き、試験例1と同様にして、焦げ付きの評価を行なった。
表5に記載した油脂を60℃に保温し、表5に記載したレシチン等を添加して、充分に溶解して調製した油脂組成物を使用したことを除き、試験例1と同様にして、焦げ付きの評価を行なった。
Claims (5)
- 落花生油を45重量%以上含有し、レシチンを0.05重量%以上5重量%以下含有することを特徴とする炒め用油脂組成物。
- 前記レシチンが分画レシチンである、請求項1に記載の炒め用油脂組成物。
- さらに、ショ糖脂肪酸エステルを0.03重量%以上5重量%以下含有することを特徴とする請求項1または2に記載の炒め用油脂組成物。
- 請求項1乃至3のいずれか一項に記載の油脂組成物で炒めた食品。
- 落花生油を含有する40℃以上90℃以下の油脂に、レシチンを添加し、該落花生油の含有量が45重量%以上、該レシチンの含有量が0.05重量%以上5重量%以下となるようにすることを特徴とする、炒め用油脂組成物の製造方法。
