本发明涉及即食食品技术领域,具体涉及一种即食燕窝羹及其制备方法。
背景技术
燕窝的主要成分是由金丝燕筑巢时分泌的唾液风干而成。传统中医认为燕窝有滋阴润肺、补而不燥、益气补中和促进血液循环等功效。现代医学发现,燕窝可促进免疫功能,延缓人体衰老等作用。在中医理论上,燕窝本质是由金丝燕的津液所化而成,而中医学认为津液需要脾胃的运化能力来布输五脏六腑及全身,而部分人的脾胃的运化能力差造成燕窝营养物质的吸收不足,从而无法充分发挥燕窝的功效。目前市场上的即食燕窝主要有两种,一种是冰糖燕窝,其主要成分是冰糖、水和燕窝,冰糖与燕窝搭配没有增进燕窝营养物质吸收或者其他加成效果;另一种是人参燕窝,其主要成分冰糖、水、燕窝、人参和莲子,但并没有公开其具体配方成分比例,也尚未有资料证明此搭配能够发挥燕窝的功效以及能够促进机体更好地吸收燕窝中的营养物质。
发明内容
本发明的目的在于克服现有技术的不足之处而提供一种即食燕窝羹及其制备方法,该燕窝羹筛选具有健脾益气功效的中药组分与燕窝配伍,可以健脾运化、益气补气、有助人体的脾胃运化系统吸收燕窝营养物质,增强肝脏和肺脏的唾液酸含量。
为实现上述目的,本发明采取的技术方案如下:
一种即食燕窝羹,包括燕窝和中药组分,所述中药组分包括人参、党参、黄芪、茯苓、白术、芡实、莲子、山药、黄精、薏仁、大枣和白扁豆中的至少一种;所述燕窝为干燕窝或即炖燕窝;所述中药组分为中药材或中药提取物;
当燕窝以即炖燕窝的方式添加,中药组分以中药材的方式添加时,所述即食燕窝羹包括以下质量份的原料:即炖燕窝20-100份和中药材10-60份。
燕窝和中药组分之间具有配伍关系,本发明通过筛选具有健脾益气功效的中药组分与燕窝配伍,按照即炖燕窝20-100质量份和中药材10-60质量份的比 例搭配,既可健脾运化、益气补气、有助人体的脾胃运化系统吸收燕窝营养成分,充分发挥燕窝的功效,又可避免因中药组分过量而导致过犹不及的效果。
肝脏和肺脏是体内除了脑灰质外唾液酸含量最高的部位,通过研究本发明的燕窝羹对小鼠肝和肺的唾液酸含量影响,结果表明本发明采用上述优选的中药组分与燕窝配伍,能显著增强小鼠肝脏和肺脏的唾液酸含量,增强小鼠对燕窝中的唾液酸的吸收利用能力。
唾液酸是一类九碳单糖骨架的衍生物,带有极强的负电荷,通常位于细胞膜表面的糖蛋白或糖脂的末端,以结合的形式与粘多糖、糖蛋白和糖脂中的低聚糖链相连接,是细胞膜蛋白的重要组成部分。唾液酸通过增加粘蛋白的粘性,与带正电荷离子结合,从而起到生物靶作用,并且有利于维持细胞膜结构,能隐藏细胞因子的识别标志,对人体生理、生化产生积极的作用。据文献报道,唾液酸具有多种生物调节功能,如抗老年痴呆,提高免疫力,抗病毒,抗炎,抑制白细胞的粘附,抗识别,以及提高肠道对于矿物质及维生素的吸收能力,增强机体对营养的吸收水平等。而燕窝是自然界中唾液酸含量最高的食物,高达5%-12%,远超其他任何食物,是除了母乳外,人类可以食用获得的最重要途径。本发明制备的燕窝羹有助于增强机体对燕窝中的唾液酸的吸收利用能力,从而更好地发挥唾液酸的功效。
本发明选用的人参、党参、黄芪、茯苓、白术、芡实、莲子、山药、黄精、薏仁、大枣和白扁豆均为中医领域常见的具有健脾益气功效的中药组分,燕窝与单味健脾益气中药组合也可以达到本技术的目的,但是中药组分之间存在着潜在的协同关系,通过不同健脾益气中药配伍可以达到更佳的效果,本发明通过优选中药组分与燕窝配伍,更有利于发挥燕窝的功效,提升肝脏和肺脏的唾液酸含量,增强对燕窝中的唾液酸的吸收利用能力,具有良好的保健功效。
本发明所述干燕窝指含水率不高于15%的燕窝,所述即炖燕窝为干燕窝经过泡发、清洗、挑毛和炖煮后得到,干燕窝与即炖燕窝的质量比为1:13-18,优选为1:15。因此,本发明可以根据即炖燕窝与干燕窝的比例关系,将上述燕窝羹配方中的即炖燕窝20-100质量份同等替换为干燕窝1.33-6.66质量份,不影响制备得到的燕窝羹的功效。
本发明所述中药材指的是中药饮片,中药饮片指的是根据调配或制剂的需要,对经产地加工的净药材进一步切制、炮炙而成的成品,即市售的中药原药。 中药提取物是由中药材按照10:1-30:1的质量比浓缩提取而成。因此,本发明可以根据中药材及其提取物的比例关系,将上述燕窝羹配方中的将中药材10-60质量份同等替换为中药提取物0.33-6质量份,不影响制备得到的燕窝羹的功效。

本发明还提供了上述即食燕窝羹在制备提高肝脏和肺脏的唾液酸含量的食品或保健食品中的应用。
本发明的即食燕窝羹能够提升肝脏和肺脏的唾液酸含量,增强对燕窝中的唾液酸的吸收利用能力,具有良好的保健功效,能够在制备提高肝脏和肺脏的唾液酸含量的食品或保健食品中应用。

1、本发明通过筛选具有健脾益气功效的的中药组分与燕窝配伍,可以健脾运化、益气补气、有助人体的脾胃运化系统吸收燕窝营养物质,能够显著增强肝脏和肺脏的唾液酸含量,增强人体对唾液酸的吸收利用能力。
2、本发明的原料均为药食同源的食品、新资源食品或普通食品,简单易得,又具有中医理论上的食补功效,且制作工艺简单,便于工业化生产。

即炖燕窝的制备方法为:将含水率为10%的干燕窝放入装满清水的容器内进行常温泡发3小时至膨胀,呈现半透明状后,把燕角顺着纹理撕开,继续泡发2小时后将泡开的燕窝撕成小细条,捞出拣去羽毛与杂质,用网筛捞出燕窝多冲洗几次后沥干水分,加水炖煮,得到即炖燕窝。其中,干燕窝与经过炖煮的燕窝固体物比例为1:15。

药理学实验1
1材料
1.1药物与试剂
燕窝、中药、生理盐水(广东科伦药业,H18091601)、燕窝酸测试盒(南京建成,20190716)、总蛋白定量测试盒(南京建成,20190711)、PBS(gibco,8118378)。
1.2仪器
酶标仪(瑞士tecan,Infinite 200pro)、电子天平(上海精科天美,FA2004B)、离心机(德国SIGMA,3K15)、移液枪(Genex Beta,13655701)。
1.3实验动物
KM小鼠,雄性,购买于南方医科大学实验动物中心,实验期动物饲养在屏障环境,实验动物使用许可证号:SYXK(粤)2017-0125。
2方法
2.1中药及燕窝煎煮方法
中药材煎煮前温水浸泡30~40分钟,煎煮时加水量超过药材表面3~5cm,第一次煎煮每1g中药组分加水6mL,第二次煎煮每1g中药材加水5mL。煎煮遵循先武火后文火的原则,时间从沸腾后计算,第一次煎煮30~40min,第二次煎煮25~30min,合并两次煎煮的药液;再用煎煮法,将对应各组的中药材根据小鼠的灌胃量进行浓缩,得到中药液体。
干燕窝炖煮前将打粉,加入干燕窝重量14倍的温水,浸泡30~40分钟,炖煮为先武火后文火,文火炖煮2-3小时,得到即炖燕窝。
2.2分组及给药
选用104只成年KM雄性小鼠,体重35g±2g,根据体重随机分为空白对照A组、燕窝A组、中药组和中药燕窝1、2、3、4、5、6、7、8、9、10组,共13组,每组8只。空白对照组灌胃生理盐水,燕窝组灌胃燕窝炖煮胶状物,中药组灌胃中药液体,中药燕窝1、2、3、4、5、6、7、8、9、10组分别灌胃对应浓度的中药液体和燕窝炖煮混合液(把燕窝蒸煮液匀浆后倒入中药溶液中混合,具体配方见表1的配方一览表)。

注:根据实验的实际操作情况,中药材及燕窝煎煮方法有所调整,与实际燕窝羹的制备 方法略有差别,但表1实验所配方与对应实施例的实际燕窝羹的中药组分及燕窝比例相同。其中,上述中药组分及燕窝的用量为每组8只小鼠7天的总用量。
上述各组小鼠每次按10mL/kg经口灌胃给予相应受试物,每天1次,连续7天。各组小鼠于末次给药结束10小时后称体重,取肝和肺进行相应指标的测定。
2.3观察指标
2.3.1小鼠肝和肺唾液酸含量测定
小鼠麻醉脱颈椎处死后取肝和肺称重后,按照脏器:PBS=1:5的比例将脏器放入PBS中匀浆,3500r/min离心10min取上清液测定唾液酸含量,含量测定实验步骤按照试剂盒说明书操作。
2.4统计学处理
数据以x±s表示,采用SPSS 22.0软件进行单因素方差分析。
3结果
3.1对小鼠肝和肺唾液酸含量影响
从表2结果可以看出,与空白对照A组比较,中药燕窝1、2、3、4、5、6、7、8、9、10组给药7天后其肝脏唾液酸含量明显升高,存在显著性差异(P<0.01),中药燕窝1、4、7组肺脏唾液酸含量明显升高,存在显著性差异(P<0.05),中药燕窝3、5、6、8、9、10组肺脏唾液酸含量也明显升高,存在显著性差异(P<0.01)见表1。与中药组相比,中药燕窝1组的肝脏和肺脏唾液酸含量明显升高;与燕窝A组相比,中药燕窝1、3、4、5、6、7、8、9、10组的肝脏和肺脏唾液酸含量均有所升高,但中药组分不同配伍也会导致肝脏和肺脏唾液酸含量发生变化。可见,本发明通过燕窝与特定种类的中药组分配伍,可以健脾运化、益气补气、有助人体的脾胃运化系统吸收燕窝营养物质,特定增强肝脏和肺脏的唾液酸含量。对比中药燕窝1和2组、中药燕窝3和4组、中药燕窝6和7组结果可知,燕窝和中药组分种类相同的情况下,中药组分的不同用量也导致肝脏和肺脏的唾液酸含量也发生变化,为发挥燕窝的功效本发明的燕窝羹优选即炖燕窝25-50份和中药材10-55份。

1材料

2方法

干燕窝炖煮前将打粉,加入干燕窝重量14倍的温水,浸泡30~40分钟,炖煮为先武火后文火,文火炖煮2-3小时,得到即炖燕窝。
2.2分组及给药
选用96只成年KM雄性小鼠,体重35g±2g,根据体重随机分为空白对照 B组、燕窝B组和中药燕窝11、12、13、14、15、16、17、18、19、20组,共12组,每组8只。空白对照组灌胃生理盐水,燕窝组灌胃燕窝炖煮胶状物,中药燕窝11、12、13、14、15、16、17、18、19、20组分别灌胃对应浓度的中药液体和燕窝炖煮混合液(把燕窝蒸煮液匀浆后倒入中药溶液中混合,具体配方见表3的配方一览表)。

注:根据实验的实际操作情况,中药材及燕窝煎煮方法有所调整,与实际燕窝羹的制备方法略有差别,但表3实验所配方与对应实施例的实际燕窝羹的中药组分及燕窝比例相同。其中,上述中药组分及燕窝的用量为每组8只小鼠7天的总用量。

3结果
3.1对小鼠肝和肺唾液酸含量影响
从表4结果可以看出,与空白对照B组比较,中药燕窝14组给药7天后其肝脏唾液酸含量明显升高,存在显著性差异(P<0.05),中药燕窝11-13、15、17-18组给药7天后其肝脏唾液酸含量明显升高,存在显著性差异(P<0.01),燕窝B组和中药燕窝11-20组肺脏唾液酸含量明显升高,存在显著性差异(P<0.01)。与燕窝B组相比,中药燕窝15组给药7天后其肝脏唾液酸含量明显升高,存在显著性差异(P<0.05),中药燕窝11-13组给药7天后其肝脏唾液酸含量明显升高,存在显著性差异(P<0.01);中药燕窝11、16、19组肺脏唾液酸含量明显升高,存在显著性差异(P<0.05),中药燕窝12-14、17-18、20组肺脏唾液酸含量明显升高,存在显著性差异(P<0.01)。
由此表明,选用单味中药组分与燕窝配伍,一定程度上也可以健脾运化、益气补气、有助人体的脾胃运化系统吸收燕窝营养物质,且中药组分与燕窝的用量均相同时,相较于黄芪、白扁豆或茯苓,中药组分选用人参、党参、芡实或山药,尤其是山药,更有利于提升肝脏和肺脏的唾液酸含量,增强机体对燕窝中的唾液酸的吸收利用能力。
当选用人参、芡实、山药与燕窝配伍,且燕窝30质量份和中药组分20-40质量份时,更有利于提高肝脏和肺脏唾液酸含量。

上述实施例中还可以根据即炖燕窝和中药材的用量,适当加入60-300质量份清汤,将即炖燕窝和中药材搭配形成药膳汤,所述清汤的原料包括枸杞、冰糖和水中的至少一种;所述清汤的密度优选为0.01-0.3g/mL,有利于提升燕窝羹的风味和口感。
以上实施例和对比例的配方中选用的人参、党参、黄芪、茯苓、白术、芡实、莲子、山药、黄精、薏仁、大枣和白扁豆均以中药材的形式添加,但也可直接以中药提取物的形式添加。本发明可直接选用市售的人参提取物、党参提取物、黄芪提取物、茯苓提取物、白术提取物、芡实提取物、莲子提取物、山药提取物、黄精提取物、薏仁提取物、大枣提取物或白扁豆提取物,并按照其提取物的浓缩提取比例对应调整在燕窝羹中的用量,比如,上述实施例14的配方中可以将人参同等替换人参提取物,即实施例14的即食燕窝羹包括以下质量份的原料:即炖燕窝30份和人参提取物1份,人参提取物由人参药材按照10:1的质量比浓缩提取而成,该燕窝羹对于肝脏和肺脏的唾液酸含量的影响与实施例14基本相同。
上述实施例中的燕窝也可以直接以干燕窝的方式添加,比如,上述实施例14的配方中可以将即炖燕窝同等替换为干燕窝,即实施例14的即食燕窝羹包括以下质量份的原料:干燕窝1份和人参10份,将干燕窝、清汤和人参装入容器后密封,经过110℃~130℃蒸煮或炖煮15-25min,得到即食燕窝羹,该燕窝羹对于肝脏和肺脏的唾液酸含量的影响与实施例14基本相同。
本发明的即食燕窝羹能够提升肝脏和肺脏的唾液酸含量,增强机体对燕窝中的唾液酸的吸收利用能力,具有良好的保健功效,能够在制备提高肝脏和肺脏的唾液酸含量的食品或保健食品中应用。
最后所应当说明的是,以上实施例仅用以说明本发明的技术方案而非对本发明保护范围的限制,尽管参照较佳实施例对本发明作了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的实质和范围。

Claims (10)

  1. 一种即食燕窝羹,其特征在于,包括燕窝和中药组分,所述中药组分包括人参、党参、黄芪、茯苓、白术、芡实、莲子、山药、黄精、薏仁、大枣和白扁豆中的至少一种;所述燕窝为干燕窝或即炖燕窝;所述中药组分为中药材或中药提取物;
    当燕窝以即炖燕窝的方式添加,中药组分以中药材的方式添加时,所述即食燕窝羹包括以下质量份的原料:即炖燕窝20-100份和中药材10-60份。
  2. 根据权利要求1所述的即食燕窝羹,其特征在于,如下(a)~(b)中的至少一项:
    (a)所述即炖燕窝20-100份替换为干燕窝1.33-6.66份;
    (b)所述中药材10-60份替换为中药提取物0.33-6份,所述中药提取物由中药材按照10:1-30:1的质量比浓缩提取而成。
  3. 根据权利要求1所述的即食燕窝羹,其特征在于,包括以下质量份的原料:即炖燕窝25-50份和中药材20-55份。
  4. 根据权利要求1所述的即食燕窝羹,其特征在于,所述中药组分为人参、党参、黄芪、茯苓、芡实、山药和白扁豆中的至少一种。
  5. 根据权利要求4所述的即食燕窝羹,其特征在于,所述中药组分为人参、党参、芡实和山药中的至少一种。
  6. 根据权利要求5所述的即食燕窝羹,其特征在于,所述中药材为山药;
    或所述中药材由人参、芡实和山药组成。
  7. 根据权利要求1所述的即食燕窝羹,其特征在于,如下(c)-(i)中任一项:
    (c)所述中药组分由人参、茯苓、芡实、山药、莲子、白术、黄精、白扁豆和薏仁组成;
    (d)所述中药组分由党参、茯苓、芡实、山药、白扁豆和莲子组成;
    (e)所述中药组分由人参、白扁豆、芡实、山药和莲子组成;
    (f)所述中药组分由芡实、山药、莲子、白扁豆和薏仁组成;
    (g)所述中药组分由芡实、山药和莲子组成;
    (h)所述中药组分由白扁豆、大枣、莲子、茯苓和薏仁组成;
    (i)所述中药组分由人参、茯苓、莲子、山药和大枣组成。
  8. 根据权利要求1-7任一项所述的即食燕窝羹,其特征在于,如下(j)-(k)中至少一项:
    (j)还包括以下质量份的原料:清汤60-300份,所述清汤的原料包括枸杞、冰糖和水中的至少一种;
    (k)所述即炖燕窝为干燕窝经过泡发、清洗、挑毛和炖煮后得到,干燕窝与即炖燕窝的质量比为1:15。
  9. 权利要求1-8任一项所述的即食燕窝羹的制备方法,其特征在于,包括以下步骤:
    (1)按上述比例称取燕窝、清汤和中药组分,备用;
    (2)将燕窝、清汤和中药组分装入容器后密封,经过110℃~130℃炖煮或蒸煮15-25min,得到所述即食燕窝羹。
  10. 权利要求1-8任一项所述的即食燕窝羹在制备提高肝脏和肺脏的唾液酸含量的食品或保健食品中的应用。
