技术领域
本发明属于中餐的制作方法,尤其是居家、食堂的中餐标准化烹饪方法。
背景技术
现有的中餐烹制过程是:烹饪者按经验配置好菜的比例在炉灶上烹制,人为因素(如烹饪者的主观因素、火候的控制等)造成菜肴口味不能统一,尤其是难以烹饪出与餐厅中的菜肴相一致的口味。
发明内容
本发明要解决的技术问题和提出的技术任务是克服现有技术存在的同样的一道菜口味不能统一的缺陷,提供一种中餐标准化烹饪方法,用于实现中餐的标准化制作。
为此,本发明采用以下技术方案:中餐标准化烹饪方法,其特征是:在计算机上安装计算机程序并将中餐菜肴的烹饪工艺写入计算机受控于所述的计算机程序,将带有控制模块的厨房加热设备通过网络与所述的计算机连接;在计算机上运行计算机程序将中餐菜肴的烹饪工艺赋予所述的控制模块令厨房加热设备按照该中餐菜肴的烹饪工艺工作,计算机程序启动后按照中餐菜肴烹饪工艺的提示适时地将烹饪中餐菜肴的中餐制作容器置于厨房加热设备上并向中餐制作容器内加入定量的配料实现中餐标准化烹饪。
为了方便使用者,所述的计算机程序或/和中餐菜肴的烹饪工艺写在可携带的存贮介质中或者上传在互联网上供下载。
为了便于烹饪者参阅,所述中餐菜肴烹饪工艺的提示显示在计算机上或者通过打印机打印出来。
为了保证标准化烹饪,所述定量的配料进行预制并包装,在该配料的包装物上载明所述中餐菜肴烹饪工艺的提示。这样的定量预制便于实现商业化,如商家(餐厅或者食品加工厂)可将该包装好的定量预制配料在市场上销售。
所述的烹饪工艺包括控制厨房加热设备工作的相关联的时间和功率。该时间和功率可按照数学模型关联在一起(如二者的关系可以绘制出时间-功率曲线)。
为了实现同时烹饪个菜肴,所述的厨房加热设备为多台并通过地址分配器与所述的计算机进行网络连接;且由所述的计算机程序将一中餐菜肴的烹饪工艺分配给一个空闲的厨房加热设备。此时为了避免将中餐制作容器错误地置于某一厨房加热设备上,由所述的计算机程序输出一包含中餐菜肴和厨房加热设备编号的分配单供烹饪者参阅。
作为一种具体的网络连接方式,所述的网络连接为有线网络连接或者无线网络连接。
根据不同的中餐菜肴,所述厨房加热设备工作的模式可从空闲、准备、烹制、预制、保温、暂停、完成、保温预警、暂停预警、手动暂停、报废、故障中选择。
作为具体形式,厨房加热设备可为电磁炉、微波炉、光波炉、烤箱、蒸笼、炸炉、电陶、夹层锅中的至少一种,只要能够通过服务器上的计算机程序进行控制即可。
本发明的有益效果是:对各种中餐菜肴设置烹饪工艺,并通过计算机程序将烹饪工艺赋予厨房加热设备进行标准化制作,同时可实现火候、配菜比例、佐料用量的精确量化,保证每道中餐菜肴的口味统一,实现烹饪标准化;该方法可适用于居家、单位食堂、商业餐厅等场合。

具体实施方式
如图1所示,该中餐标准化烹饪方法所涉及的硬件包括:
一台或多台用于产生热量并具有多种工作模式的厨房加热设备3(一台通常为家用;多台多为单位食堂用,需进行编号),该厨房加热设备具有控制模块以便由下文述及的计算机程序控制;
一个或多个用于分别容纳中餐配料及在相应的厨房加热设备上受热的中餐制作容器(图中未示);
用于安装计算机程序(该程序的逻辑设计图参见图2,在下文会进一步述及)的计算机1;
一个地址分配器2,用于计算机1通过该地址分配器2将烹饪任务分配给多台厨房加热设备3。
借助这些硬件,本发明的中餐标准化烹饪方法是在计算机1上安装计算机程序并将中餐菜肴的烹饪工艺写入计算机1受控于所述的计算机程序,将带有控制模块的厨房加热设备3通过网络与计算机1连接;在计算机1上运行计算机程序将中餐菜肴的烹饪工艺赋予厨房加热设备的控制模块令厨房加热设备3按照该中餐菜肴的烹饪工艺工作,计算机程序启动后按照中餐菜肴烹饪工艺的提示适时地将烹饪中餐菜肴的中餐制作容器置于厨房加热设备3上并向中餐制作容器内加入定量的配料实现中餐标准化烹饪。
作为对上述技术方案的进一步完善和补充,本发明还包括以下附加的技术特征以根据其作用在实施时选用。
为了方便使用者,计算机程序或/和中餐菜肴的烹饪工艺写在可携带的存贮介质(如磁盘、U盘)中或者上传在互联网上供下载。
为了便于烹饪者参阅,中餐菜肴烹饪工艺的提示可显示在计算机的显示器上或者通过打印机4打印出来。
为了保证标准化烹饪,定量的配料进行预制并包装,在该配料的包装物上载明中餐菜肴烹饪工艺的提示(如加料步骤)。这样的定量预制便于实现商业化,如商家(餐厅或者食品加工厂)可将该包装好的定量预制配料在市场上销售。
烹饪工艺包括控制厨房加热设备工作的相关联的时间和功率。该时间和功率可按照数学模型关联在一起(如二者的关系可以绘制出时间-功率曲线)。

图2示出了通过计算机程序实现本发明方法的自动化控制的流程图:
欲烹饪一道菜肴时,启动计算机程序并执行该菜肴的烹饪工艺,计算机程序会分配空闲的厨房加热设备(多台时如此,若仅有一台厨房加热设备,则可直接分配),并由计算机程序将该菜肴的烹饪工艺加载到指定的厨房加热设备并判断是否加载成功;
若工艺加载不成功,则重新分配空闲的厨房加热设备;若工艺加载成功,则打印或显示包括菜名和加料步骤的厨房加热设备分配单供烹饪者参阅;
之后按照中餐菜肴烹饪工艺的提示(该提示可与前述的分配单同时显示,如可显示在计算机上或者通过打印机打印出来,涉及烹饪工艺的加料步骤还可记载在配料的包装物上)将中餐制作容器置于指定的厨房加热设备上并向中餐制作容器内加入定量的配料开始烹饪;
在烹制过程中,可显示是否需要暂停加料,若需要暂停加料,则获得暂停信息提醒烹饪者加料,并按下启动键继续执行烹制;若不需暂停加料,则判断是否发生故障;
若在判断否发生故障时判断出发生了故障,再判断是否具有过载保护:若有过载保护,则可重新开始烹制,若没有过载保护,自动重新分配厨房加热设备,将中餐制作容器置于新的厨房加热设备(该新的设备也可包括原设备)上按下启动键继续执行烹制;
若在判断否发生故障时判断出没有发生故障,则会判断是否烹制结束:若烹制未结束,则继续烹制,若烹制已经结束,则判断是否需要应急加热;
在判断是否需要应急加热时判断出需要应急加热,则可按下应急键继续执行烹制,若判断出不需要应急加热,则可端走厨房加热设备,完成标准化烹制。
以上通过一个具体例子说明了本发明涉及的计算机程序对本发明方法的控制,但是并不限于该具体流程,在具体实施时可以根据本发明的根据方法进行适当的修改。

Claims (8)

  1. 中餐标准化烹饪方法,其特征是:在计算机(1)上安装计算机程序并将中餐菜肴的烹饪工艺写入计算机(1)受控于所述的计算机程序,将带有控制模块的厨房加热设备(3)通过网络与所述的计算机(1)连接;在计算机(1)上运行计算机程序将中餐菜肴的烹饪工艺赋予所述的控制模块令厨房加热设备(3)按照该中餐菜肴的烹饪工艺工作,计算机程序启动后按照中餐菜肴烹饪工艺的提示适时地将烹饪中餐菜肴的中餐制作容器置于厨房加热设备上并向中餐制作容器内加入定量的配料实现中餐标准化烹饪。
  2. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述的计算机程序或/和中餐菜肴的烹饪工艺写在可携带的存贮介质中或者上传在互联网上供下载。
  3. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述中餐菜肴烹饪工艺的提示显示在计算机上或者通过打印机打印出来。
  4. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述定量的配料进行预制并包装,在该配料的包装物上载明所述中餐菜肴烹饪工艺的提示。
  5. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述的烹饪工艺包括控制厨房加热设备工作的相关联的时间和功率。
  6. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述的厨房加热设备为多台并通过地址分配器与所述的计算机进行网络连接;且由所述的计算机程序将一中餐菜肴的烹饪工艺分配给一个空闲的厨房加热设备。
  7. 根据权利要求6所述的中餐标准化烹饪方法,其特征是:由所述的计算机程序输出一包含中餐菜肴和厨房加热设备编号的分配单。
  8. 根据权利要求1所述的中餐标准化烹饪方法,其特征是:所述的网络连接为有线网络连接或者无线网络连接。
