このような中、従来の乾燥トマトは、例えば、ドライトマト、セミドライトマトのいずれにおいても、その製造工程において乾燥を促進するために、トマト本体を1/2にカットしたり、1/6にカットしたりしてから乾燥処理して製造されている。
そして、このような問題点を解決するために、例えば、トマト本体をカットせずに乾燥処理すると、乾燥に長時間を要するという問題点があった。また、果肉と果皮の収縮率が異なるため、出来上がった乾燥トマトは、果肉から果皮が剥離して、食感が非常に悪くなるという問題点があった。
第一実施態様の発明は、トマトの表面にレーザを照射して、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部を除去することを特徴とする加工トマトの製造方法である。

第三実施態様の発明は、本体が切断加工されていないトマトにおいて、表面への果汁漏出を防止しつつ、クチクラ層の一部と共に果皮組織の一部を除去することを特徴とする加工トマトの製造方法である。
第四実施態様の発明は、除去をトマトの表面にレーザを照射して行うことを特徴とする第二又は第三実施態様に記載の加工トマトの製造方法である。
第五実施態様の発明は、レーザ照射領域内において、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部をトマト表面側から点状に削孔し、隣り合う該削孔部間の最短距離を8mm未満とすることを特徴とする第四実施態様に記載の加工トマトの製造方法である。
第六実施態様の発明は、レーザ照射領域内において、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部を、トマト表面側から格子を形成するように線状に切削し、前記格子の対向する線分間の最短距離を20mm未満とすることを特徴とする第四実施態様に記載の加工トマトの製造方法である。
第七実施態様の発明は、波長10.6μm、平均出力12~30W、表面通過速度500mm/sの条件でレーザ照射することを特徴とする第六実施態様に記載の加工トマトの製造方法である。
第八実施態様の発明は、平均出力18~30Wの条件でレーザ照射することを特徴とする第七実施態様に記載の加工トマトの製造方法である。
第九実施態様の発明は、レーザ照射領域の面積を、トマト表面積の60%以上とすることを特徴とする第五~第八実施態様のいずれか一つに記載の加工トマトの製造方法である。
第十実施態様の発明は、第一~第九実施態様のいずれか一つに記載の製造方法で加工トマトを製造し、次いで該加工トマトを乾燥することを特徴とする乾燥トマトの製造方法である。
第十二実施態様の発明は、除去がレーザ照射によりなされたことを特徴とする第十一実施態様に記載の加工トマトである。
第十三実施態様の発明は、第十一又は第十二実施態様に記載の加工トマトが乾燥されてなることを特徴とする乾燥トマトである。
第十四実施態様の発明は、本体が切断加工されていないことを特徴とする第十三実施態様に記載の乾燥トマトである。
<加工トマト及びその製造方法>
本発明の加工トマトは、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部が除去されたことを特徴とする。
トマトは通常、表面側より、クチクラ層、果皮細胞及び果肉細胞がこの順で存在する。
本発明の加工トマトは、好ましくは、トマト表面の一部において、表面側から、果皮細胞が存在する果皮組織側へ向けて、クチクラ層の少なくとも一部が、あるいはクチクラ層の一部と共に果皮組織の少なくとも一部が除去されたものである。表面側から果皮組織を除去する場合には、該果皮組織に接するクチクラ層をトマトに残すことはできないので、必然的に果皮組織に接するクチクラ層も除去される。
レーザ源としては、特に限定されず、公知のものから適宜選択して使用できる。具体的には、He-Ne、He-Xe、Ar、He-Cd、CO2、Cu蒸気、Hg蒸気等の気体レーザ;ルビー等の固体レーザ;色素レーザ;自由電子レーザ;半導体レーザが例示できる。なかでも、CO2レーザが好適である。
本発明の加工トマトにおいては、クチクラ層や果皮組織が、トマト表面側から点状に削孔されたもの、又は線状に切削されたものが好ましい。
クチクラ層や果皮組織を点状に削孔する場合、隣り合う該削孔部間の距離を所定の範囲内に設定することが好ましい。
また、クチクラ層や果皮組織を線状に切削する場合、得られる加工トマトとしては、その表面において、隣り合う線状切削部が互いに略平行となるように切削されたもの、線状切削部が交差するように切削されたもの等が例示できる。また、線状に切削する場合に一つの切削部は、例えば、全体として線分状、リング状、らせん状、渦巻状等、種々の形態をとるようにすることができる。なかでも本発明においては、格子を形成するように線状に切削するのが好ましい。また、線状に切削する場合には、隣り合う線状切削部間の距離を所定の範囲内に設定することが好ましい。
このように、隣り合う点状削孔部間又は線状切削部間の距離を所定の範囲内に設定することで、加工トマトの乾燥効率を向上でき、乾燥トマトにおいて果肉からの果皮の剥離が一層抑制される。
このような加工は、正確かつ容易に行える点から、特にレーザ照射によりレーザ照射領域内で行うことが好ましい。
クチクラ層や果皮組織を線状に切削する場合、隣り合う線状切削部間の最短距離は20mm未満であることが好ましく、9mm未満であることがより好ましい。特に格子を形成するように切削する場合は、前記格子の対向する線分間の最短距離を、20mm未満とすることが好ましく、9mm未満とすることがより好ましい。また、これら最短距離の下限は特に限定されない。
例えば、レーザの出力、照射時間、表面通過速度等を調整することで、トマト表面からの加工部の深さを調整できるので、所望の深さとなるように、これらの値のいずれか一つ以上を調整すると良い。通常は、加工部の深さが深い方が、加工トマトの乾燥効率が向上するので、加工部の最深部は果皮組織を貫通して、果肉細胞が存在する層へ到達していても良い。ただし、クチクラ層の一部を除去するだけでも十分に乾燥できる。
具体的に加工部の深さは、クチクラ層を貫通させたい場合には1~5μm程度を目安とすれば良く、果皮組織を貫通させたい場合には、20~50μm程度を目安とすれば良い。
具体的には、例えば、レーザ照射でトマトを加工する場合には、レーザ照射領域の面積を、トマト表面積の60%以上とすることが好ましく、80%以上とすることがより好ましく、90%以上とすることが特に好ましく、100%とすることが最も好ましい。また、トマト表面へ複数方向からレーザを照射する場合には、照射領域が重複しても良い。
また、加工部は、トマト表面の広い領域に渡って形成することが好ましい。加工部の数が同じ場合でも、形成されている領域が広い方が、加工トマトを一層均一に乾燥でき、乾燥状態が一層良好な乾燥トマトが得られる。
照射源についてはその位置及び照射方向の少なくとも一方を変化させ、トマトについてはその位置及び向きの少なくとも一方を変化させるのが好ましい。より具体的には、例えば、照射源については、
(a)照射源の位置を変化させずに照射方向を変化させる
(b)照射源の位置を変化させて照射方向を変化させない
(c)照射源の位置と照射方向をともに変化させる
のいずれかとし、トマトについては、
(d)トマトの位置を変化させずに向きを変化させる
(e)トマトの位置を変化させて向きを変化させない
(f)トマトの位置と向きをともに変化させる
のいずれかとして、(a)~(c)のいずれかと、(d)~(f)のいずれかとを組み合わせて照射するのが好ましい。なかでも、少なくともトマトについて(f)を採用するのが好ましい。例えば、トマトを転がしながらレーザ照射する方法は、最も簡便且つ低コストな方法の一つであり、製造ラインで大量の加工トマトを製造するのに最も適した方法の一つである。
本発明の乾燥トマトは、上記本発明の加工トマトが乾燥されてなることを特徴とする。すなわち、上記方法で加工トマトを製造し、次いで該加工トマトを乾燥することで得られる。
乾燥方法は特に限定されず、周知の方法から加工トマトの形態に応じて、適宜選択すれば良い。具体的には、天日干し、陰干し等の自然乾燥や、通気乾燥器、回転乾燥器、トンネル乾燥器等の熱風乾燥器;遠赤外線乾燥器;真空乾燥器等を利用した乾燥方法が例示できる。
例えば、直径が3cm~8cm程度の中玉トマトを加工したものを、各種乾燥器を利用して乾燥させる場合には、乾燥温度は、30~80℃であることが好ましく、40~75℃であることが好ましく、50~70℃であることが特に好ましい。乾燥時間は、乾燥温度に応じて設定すれば良いが、乾燥温度が上記のような好ましい範囲内である場合には、5~70時間であることが好ましく、10~60時間であることがより好ましく、12~48時間であることが特に好ましい。
例えば、加工トマトの加工部位が少ない場合や、加工部位がトマト表面の特定の領域に偏っている場合など、乾燥効率がやや劣ると考えられる場合には、乾燥温度をやや低めに設定して、乾燥時間を長くするなど、条件を穏やかにして乾燥すると、果肉からの果皮の剥離が抑制されるので好ましい。
また、直径が3cm以下のミニトマトを加工したものについては、中玉トマトを加工したものの場合より条件を穏やかにして乾燥するのが好ましく、直径が8cm以上の大玉トマトを加工したものについては、中玉トマトを加工したものの場合より条件を厳しくして乾燥するのが好ましい。
なお、以下の実施例における「照射面数」とは、図1に示すように、互いに略直交する三つの軸を設けた時に、一つの軸についてこれに略平行でかつ相対する二つの方向を定め、合計六つの方向のいずれか一以上からレーザをトマトに照射した場合のトマト表面における照射面の数を指す。そして、方向1からレーザを照射した時のトマト表面における照射面を照射面1とし、以下同様に、方向2~6から照射した時の照射面を照射面2~6とする。方向1及び2は互いに略並行であり、方向3及び4は互いに略並行であり、方向5及び6は互いに略並行である。
照射面数が6の場合とは、照射面1~6を形成したことを指し、照射面の面積の合計はトマト表面積の概ね100%である。
照射面数が4の場合とは、照射面1~4を形成したことを指し、照射面の面積の合計はトマト表面積の概ね67%である。
照射面数が2の場合とは、照射面1~2を形成したことを指し、照射面の面積の合計はトマト表面積の概ね33%である。
照射面数が1の場合とは、照射面1を形成したことを指し、照射面の面積の合計はトマト表面積の概ね17%である。
また、「加工面数」とは、上記においてレーザ照射に代わり針による穴あけ加工を行った場合のトマト表面における加工面の数を指す。
表1に示す条件で、市販のトマト(直径6~7cm程度)にレーザ照射(実施例1~5)又は針による穴あけ(比較例2~3)を行った加工トマト、及び未加工のトマト(比較例1)を用いて、トマトを乾燥させた。レーザを照射する時は、照射源については、その位置を変化させずに照射方向を変化させ(すなわち前記「(a)」)、トマトについては、その位置と向きをともに変化させた(すなわち前記「(f)」)。これは以下の試験例においても同様である。
レーザ照射には、3-Axis CO2レーザマーカーML-Z9500(株式会社キーエンス製)を用いた。また、針による穴あけは、2mm間隔で表面全域に渡って行った。実施例1~3では10個、実施例4~5及び比較例1~3では5個のトマトをそれぞれ用いた。
レーザ照射条件は、波長10.6μm、平均出力18Wとし、その他の条件は表1に従ったうえで、点状に削孔する場合及び格子を形成するように線状(格子状)に切削する場合のいずれにおいても、レーザのトマト表面通過速度を500mm/sとした。実施例1~5で得られた加工トマトの画像を図2に例示する。
得られた乾燥トマトについては、乾燥の度合いを質量率で評価し、果肉からの果皮の剥離の程度(外観)を目視で評価した。評価結果を表1に示す。
質量率は、乾燥後質量/乾燥前質量×100(%)と定義した。
外観評価は、研究員2名による目視で行い、果皮の剥離が無いものを「○」、果皮の剥離が表面の一部で見られるものを「△」、果皮の剥離が表面の大半(概ね50%以上)で見られるものを「×」と評価した。
一方、比較例1では、乾燥度が低く、果皮の剥離が著しく、商品として許容できる乾燥トマトではなかった。
また、比較例1~3では、針で開けた穴から漏出した果汁がトマト表面で凝固したため、トマトは乾燥が十分進行せず、果皮の剥離が著しく、商品として許容できる乾燥トマトではなかった。
表2に示すように、実施例2及び4と同様に加工したトマトを用いて、レーザ照射面の中央部及び周辺部において、果皮組織をメスで厚さ約0.5mmに切断し、切断面を光学顕微鏡で観察した(試験例1~4)。また、針を用いて概ね50~500μmの深さで穴を開けたトマトにおいて、穴を開けた部位の果皮組織をメスで厚さ約0.5mmに切断し、切断面を光学顕微鏡で観察した(試験例5)。この時の観察画像を図4に例示する。
一方、試験例3と試験例4とでは、加工部の深さはほぼ同じで1~5μm程度であり、果皮組織又はクチクラ層が僅かに削られた程度であった。すなわち、格子を形成するように線状(格子状)に切削した場合には、照射部位による加工部の深さに関して、明確な違いは認められなかった。
これに対し試験例5では、加工部が果皮組織を貫通し、果肉細胞に達していたが、穴は塞がっており、開口していなかった。
試験例1~4の加工トマトからは、良好な品質の乾燥トマトが得られ、試験例5の加工トマトからは、商品として許容できる乾燥トマトが得られないことから、加工部においてクチクラ層や果皮組織を除去し、加工部が閉塞しないようにして、乾燥が十分進行するようにすることが重要であると考えられた。
表3に示す条件で、市販のトマト(直径6~7cm程度)にレーザ照射を行った加工トマトを用いて、トマトを乾燥させた。
レーザ照射には、3-Axis CO2レーザマーカーML-Z9500(株式会社キーエンス製)を用いた。また、試験例6~9のいずれにおいても、2個のトマトを用いた。
レーザ照射条件は、波長10.6μm、平均出力18W、トマト表面通過速度を500mm/sとし、その他の条件は表3に従った。
加工トマトは、高温通風乾燥機STERILIZER KPV-211(エスペック株式会社製)を用いて、60℃、15時間の条件で乾燥させた。
得られた乾燥トマトについては、実施例1~5と同様に質量率と外観を評価した。評価結果を表3に示す。
一方、照射面数が6の場合は、果皮の剥離がなく、商品として好ましいものであった。また、照射面数が4の場合は、乾燥トマト表面のうちレーザ照射していない領域を中心に表面の一部に果皮の剥離が生じていたが、商品として許容できる範囲であった。
表4及び5に示すように、実施例1~5と同様にトマトにレーザ照射して、乾燥を行い、乾燥トマトを製造した(試験例10~18、試験例20~36)。また、比較対象(基準)として、未加工のトマトも同様に乾燥に供した(試験例19及び37)。試験例10~19では10個、試験例20~37では5個のトマトをそれぞれ用いた。
また、外観評価では、研究員18名(男:10、女:8)を評価者とし、それぞれの乾燥トマトを目視して、以下の基準で点数をつけ、その平均値を算出したうえで、3点以上を「○」、2点以上3点未満を「△」、2点未満を「×」と評価した。
5点:果皮の剥離がなく、商品として適する。
4点:5点と3点との間の評価
3点:果皮の剥離はあるが、商品として許容できる。
2点:3点と1点との間の評価
1点:果皮の剥離が激しく、商品として適さない。
総合評価では、乾燥状態評価及び外観評価の結果を鑑み、乾燥状態評価及び外観評価のいずれかが「○」であるものを「○」、乾燥状態評価及び外観評価のいずれもが「○」ではなく、いずれかが「△」であるものを「△」、乾燥状態評価及び外観評価のいずれもが「○」でも「△」でもないものを「×」と評価した。
それぞれの評価結果を表4及び5に示す。
レーザ照射時の平均出力を表6に示すようにしたこと以外は、試験例11と同様にトマトにレーザ照射して、乾燥を行い、乾燥トマトを製造した(試験例38~47)。また、比較対象(基準)として、未加工のトマトも同様に乾燥に供した(試験例48)。いずれにおいても、3個の加工トマトを用いた。
得られた乾燥トマトについて、試験例11と同様に質量率を算出し、乾燥状態を評価した。評価結果を表6に示す。
Claims (14)
- トマトの表面にレーザを照射して、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部を除去することを特徴とする加工トマトの製造方法。
- 本体が切断加工されていないトマトにおいて、クチクラ層の一部を除去することを特徴とする加工トマトの製造方法。
- 本体が切断加工されていないトマトにおいて、表面への果汁漏出を防止しつつ、クチクラ層の一部と共に果皮組織の一部を除去することを特徴とする加工トマトの製造方法。
- 除去をトマトの表面にレーザを照射して行うことを特徴とする請求項2又は3に記載の加工トマトの製造方法。
- レーザ照射領域内において、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部をトマト表面側から点状に削孔し、隣り合う該削孔部間の最短距離を8mm未満とすることを特徴とする請求項4に記載の加工トマトの製造方法。
- レーザ照射領域内において、クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部を、トマト表面側から格子を形成するように線状に切削し、前記格子の対向する線分間の最短距離を20mm未満とすることを特徴とする請求項4に記載の加工トマトの製造方法。
- 波長10.6μm、平均出力12~30W、表面通過速度500mm/sの条件でレーザ照射することを特徴とする請求項6に記載の加工トマトの製造方法。
- 平均出力18~30Wの条件でレーザ照射することを特徴とする請求項7に記載の加工トマトの製造方法。
- レーザ照射領域の面積を、トマト表面積の60%以上とすることを特徴とする請求項5~8のいずれか一項に記載の加工トマトの製造方法。
- 請求項1~9のいずれか一項に記載の製造方法で加工トマトを製造し、次いで該加工トマトを乾燥することを特徴とする乾燥トマトの製造方法。
- クチクラ層の一部、又はクチクラ層の一部と共に果皮組織の一部が除去されたことを特徴とする加工トマト。
- 除去がレーザ照射によりなされたことを特徴とする請求項11に記載の加工トマト。
- 請求項11又は12に記載の加工トマトが乾燥されてなることを特徴とする乾燥トマト。
- 本体が切断加工されていないことを特徴とする請求項13に記載の乾燥トマト。
