Abstract

L'invention concerne une rôtissoire équipée d'un système de chauffage par rayonnement combiné à un système de chauffage par convection, permettant de préparer de la viande crue et de la volaille à l'intérieur d'une chambre de cuisson. Un ensemble broche sert de support aux aliments et comprend des composants pouvant être démontés afin de faciliter leur nettoyage. Ce four comprend également un ensemble de nettoyage à la vapeur intégré dans le système de chauffage par convection, permettant d'éliminer la graisse des composants à l'intérieur de la chambre de cuisson. Un système d'élimination de l'humidité permet de réguler le niveau d'humidité à l'intérieur de la chambre de cuisson au cours de la préparation. La rôtissoire de l'invention comprend une chambre de cuisson avec au moins une ouverture fermée par un ensemble porte amovible. Un système de chauffage par rayonnement est disposé dans la chambre de cuisson et reçoit de l'électricité afin de générer une chaleur de rayonnement permettant la cuisson des aliments sur l'ensemble broche rotatif. Un ensemble hotte est supporté par la chambre de cuisson, et définit une chambre de filtrage recevant de l'air entrant rempli de graisse provenant de la chambre de cuisson, et servant de logement à au moins un élément filtrant aspirant l'air entrant vers une sortie de la hotte. L'ensemble hotte et la chambre de cuisson se déplacent ensemble tandis que la rôtissoire se déplace d'un emplacement à un autre.
