Abstract

Dans cette invention, des gros et de petits morceaux de viande sont acheminés en ligne droite vers les grilles du hachoir. On empêche les morceaux de viande pressés contre les grilles de se déplacer jusqu'à ce que les tissus de la viande insérés sous pression dans les ouvertures de ladite grille soient coupés par le fil des lames d'un couteau à un tranchant, ledit couteau agissant en coopération avec les bords des ouvertures enserrant la viande. La finesse du broyage de la viande est réglée automatiquement, la longueur des pièces hachées dépendant de la coriacité des tissus se trouvant dans les ouvertures de la grille. On frotte ensuite la viande avec des morceaux récupérés de cartilages et de tendons. Lorsque l'on broie de la viande congelée contre les bords des ouvertures de la grille, seuls les morceaux happés par les lames du couteau sont déplacés à la surface de cette dernière. Il est possible d'utiliser le hachoir à viande pour hacher du lard. Le hachoir à viande est muni d'un seul transporteur à vis monté en surplomb et équipé de pales qui possèdent une partie de saisie et une partie de pressage. Lors du fonctionnement de la machine, les surfaces de travail des grilles et des couteaux se frottent les unes aux autres et leurs bords tranchants s'aiguisent automatiquement; on évite ainsi la formation de jours entre lesdites surfaces. La grille utilisée pour obtenir des petits morceaux de forme régulière possède des ouvertures à bords tranchants qui se présentent sous forme de lames possédant des pointes orientées face au flux de viande.
