Abstract

Una confitura congelada que comprende una o más proteínas anticongelantes derivadas de vegetales en la que las proteínas anticongelantes de un compuesto acuoso tienen un tamaño de cristal de hielo de menos de 15um, después de un congelamiento a velocidad a 40ºC o menos, seguido de almacenamiento durante una hora a 60ºC. La confitura congelada en la que la proteína anticongelante mantiene su capacidad de limitar el crecimiento de los cristales de hielo después de un tratamiento en calor a una temperatura superior a los 60ºC durante un periodo de al menos 30seg, y más preferentemente de 1 min.
