Abstract
La preparación de una suspensión de cristales de hielo es una etapa habitual en la elaboración de productos helados. Es deseable poder proveer unasuspensión de cristales de hielo que tengan un tamano de cristal promedio que sea lo más pequeno posible. Esto se logra mezclando dos soluciones las cualesambas han sido enfriadas individualmente hasta alcanzar una temperatura que oscile entre una temperatura ligeramente superior a la del límite metaestablede la respectiva solución y otratemperatura que supere ligeramente el punto de fusión de la respectiva solución, conteniendo la primera solución azúcarconcentrada, conteniendo la segunda solución una menor concentración de azúcar o agua. Si una o ambas soluciones se enfrían hastaalcanzar una temperatura queoscile entre una temperatura apenas superior a la del límite metaestable de la respectiva solución y otra temperatura levemente inferior al punto de fusión dela respectiva solución, la respectiva solución será sobreenfriada.
