Claims (16)

1. Соединение общей формулы I:

причем R1 является гидроксилом (–OH) или содержащей аминогруппу кислотой, и при этом n равно 1 или 2; или соль указанного соединения.
2. Соединение по п. 1, в котором содержащая аминогруппу кислота является аланином, таурином, аспарагиновой кислотой или глутаминовой кислотой.
3. Соединение по одному из пп. 1 и 2, в котором соединение с n, равным 1, является производным ксилозы или рибозы.
4. Соединение по одному из пп. 1 и 2, в котором соединение с n, равным 2, является производным глюкозы.
5. Соединение по п. 1, представляющее собой 1-деокси-D-фруктозил-N-орнитин, 1-деокси-D-фруктозил-N-орнитил-β-аланин, 1-деокси-2-пентулофураноза-1-ил-орнитин или 1-деокси-2-пентулофураноза-1-ил-орнитил-β-аланин.
6. Композиция, содержащая соединение по одному из пп. 1-5 в количестве по меньшей мере 0,25 мг/г, предпочтительно по меньшей мере 1,5 мг/г.
7. Композиция по п. 6, которая представляет собой пищевую композицию.
8. Композиция по п. 7, выбранная из группы продуктов, состоящей из кулинарной приправы, кулинарной добавки, соуса или супового концентрата, сухого или влажного корма для животных.
9. Применение соединения по одному из пп. 1-5 для усиления аромата пищевого продукта.
10. Применение соединения по п. 9 для усиления аромата приготовленного на гриле мяса или аромата хлеба в пищевом продукте.
11. Применение соединения по одному из пп. 1-5 для усиления солоноватости и/или умамистости пищевого продукта.
12. Применение соединения по одному из пп. 6-8 для усиления аромата и/или солоноватости пищевого продукта.
13. Способ усиления аромата приготовленного на гриле мяса и/или аромата хлеба в кулинарном пищевом продукте, включающий стадию добавления в пищевой продукт соединения по одному из пп. 1-5 или композиции по одному из пп. 6-8.
14. Способ усиления солоноватости кулинарного пищевого продукта, включающий стадию добавления в пищевой продукт соединения по одному из пп. 1-5 или композиции по одному из пп. 6-8.
