Claims (11)
1. Питательная смесь, рН которой в жидком состоянии составляет от 3,5 до 6, содержащая молочную кислоту, причем по меньшей мере 70 мас.% молочной кислоты присутствует в форме энантиомера L(+) - молочной кислоты, характеризующаяся тем, что приготовление смеси основано на прямом подкислении.
2. Питательная смесь по п.1, которая представляет собой сухую питательную смесь.
3. Сухая смесь по п.1, характеризующаяся тем, что она представляет собой смесь для детского питания.
4. Питательная смесь по любому из пп.1-3, содержащая также источник белка, источник углеводов и/или источник липидов.
5. Питательная смесь по п.4, в которой источник белка содержит источник белка, выбираемый из группы, состоящей из сухого цельного или обезжиренного молока, казеина, белка молочной сыворотки, соевого белка, рисового белка, белка из семян рожкового дерева, белок зародышевой муки и/или их смесей.
6. Питательная смесь по п.5, в которой казеин и/или белок молочной сыворотки является интактным или не гидролизованным.
7. Способ приготовления питательной смеси по любому из пп.1-6, предусматривающий стадии: гидратации источника белка и/или источника углеводов, добавления разбавленной L(+)-молочной кислоты к гидратированному источнику углеводов и/или гидратированному источнику белка до достижения рН примерно 3,5-6.
8. Способ по п.7, предусматривающий дополнительную стадию добавления источника липидов.
9. Способ по п.8, согласно которому стадия добавления источника липидов проводится перед добавлением L(+)-молочной кислоты.
10. Применение выделенной или очищенной L(+)-молочной кислоты для приготовления подкисленных питательных смесей.
11. Применение выделенной или очищенной L(+)-молочной кислоты для предупреждения роста патогенных микроорганизмов в питательных смесях.
