Claims (10)
- 코코아액 또는 코코아 분말 및 천연단백질을 함유하지 않으며, 영양가에 있어서는 일반적인 초콜렛과 적어도 동일하고, 알레르기 발현을 일으킴이 적음과 메틸크산틴 및 생물학적 활성아민이 실제적으로 함유되지 않음에 의하여 소비자에 대한 허용성이 개선되었음을 특징으로 하는 소비자에게 적절한 초콜렛
- 실질적으로는 설탕, 코코아버터, 단백질 가수분해물 및/또는 1-아미노산, 말토스 및/또는 락토스 및/또는 말토텍스트린, 우유지방 및 레시틴으로 구성된 소비자에게 적절한 초콜렛
- 제1항 또는 2항중 어느 한 항에 있어서, 단백질 가수분해물 및/또는 1-아미노산의 함량이 그 내용물의 중량에 대해 12중량%이하이고 8중량%이상인 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제1항 내지 3항중 어느 한 항에 있어서, 1-아미노산의 혼합물이 바람직하지 못한 풍미를 지닌 것, 특히 글루탐산, 아스파르트산, 아르기닌 및 시스텐을 제거한 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제2항 및 제3항에 있어서, 단백질 가수분해물이 카제인, 락트알부민, 쌀단백질, 콩단백질 또는 고기단백질에서, 바람직하게는 카제인 또는 락트알부민에서 효소적으로 생산한 단백질 가수분해물인 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제1항 내지 제5항 중 어느 한 항에 있어서, 비타민A, 베타카로텐, 비타민C, 비타민B1, 비타민B2, 비타민B6, 비타민B12, 비타민D, 비타민E, 니아신, 폴산, 펜토텐산 및 비오틴으로 이루어진 군의 비타민을 첨가하되 목적 소비자의 추천된 일일 섭취량에 관련된 배합량으로 하는 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제1항 내지 제6항중 어느 한 항에 있어서, 칼슘, 마그네슘, 아연, 철, 인산염, 요오드군으로부터의 미네랄 영양분을 첨가하되, 목적 소비자의 추천된 일일 섭취량에 관련된 배합량으로 하는 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제1항 내지 제7항중 어느 한 항에 있어서, 비알레르기 발현성인 풍미제를 함유하는 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 제1항 내지 제8항중 어느 한 항에 있어서, 비알레르기 발현성인 천연의 또는 천연의 것과 동일한 착색제, 예를 들어 베타 카로텐을 함유하는 것을 특징으로 하는 소비자에게 적절한 초콜렛
- 영양분의 손실 및 감각성의 저하를 일으키는 바람직하지 못한 화학반응을 최소화하는 반면, 단백질 가수분해물 및/또는 1-아미노산, 비타민, 미네랄, 풍미제 및 착색제의 첨가를 허용하는 것과 같이 화이트 초콜렛의 통상적인 제조과정을 수정한 것을 특징으로 하는 제1항 내지 제9항중의 어느 한 항에 따른 소비자에게 적절한 초콜렛의 제조방법※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
