Abstract

Wynalazek opisuje sposób wykonania sfabrykowanych rybnych kawałków, które mają wygląd i teksturę prawdziwej ryby, zawierających od około 75 do około 95% jednego, albo więcej, funkcjonalnego białka, i od około 5 do około 25% innych żywnościowych składników, przy czym funkcjonalne białka zawierają od około 40 do około 95% surimi i od około 0 do około 55% jednego, albo więcej, białka nie-surimi. Sfabrykowane rybne kawałki mają miękki, gładki, warstwowy wygląd i płatkową teksturę podobną do prawdziwej ryby.
