Abstract
En stabilisert klikomponent og et stabilisert fullkornmel inneholdende den nevnte komponent fremstilles ved å underkaste en klianriket grov fraksjon som inneholder kli, kimer og stivelse for maling eller knusing for å redusere grynaktigheten av den grove fraksjon uten vesentlig å skade stivelsen på grunn av abrasjon. Den grove fraksjon kan stabiliseres ved oppvarming for i vesentlig grad å redusere lipase- og lipoksygenaseaktiviteten av den grove fraksjon uten vesentlig gelatinering av stivelsen. Høye nivåer av naturlig antioksidanter og vitaminer bibeholdes mens vesentlig akrylamiddannelse under stabilisering unngås. Den stabiliserte grove fraksjon eller stabiliserte klikomponent kan kombineres med en fin fraksjon som inneholder overveiende frøhvite for å oppnå et stabilisert fullkornmel.
