Abstract
La invencion se relaciona con la industria de los alimentos, en particular la industria de la leche y puede ser usada para introducir tecnologias de alimentos novedosas y desarrollar un gran numero de productos alimenticios novedosos que tengan propiedades mejoradas. El metodo de la invencion para producir un producto consiste de lo siguiente: 1) combinar una base alimenticia o al menos un componente de la misma con al menos un portador o excipiente fisiologicamente aceptable y/o al menos un componente precursor del mismo; 2) combinar la base alimenticia y/o un componente de la misma con al menos un microorganismo (MO) y/o con otro sistema biologico (SB); 3) formar no menos de un sistema portador - biocatalizador y/o modificar cualesquier caracteristicas de calidad de al menos un sistema similar, por ejemplo, caracteristicas fisicas y/o quimicas y/o fisicoquimicas y/o bioquimicas y/o microbiologicas y/u otras conocidas; 4) la participacion de al menos una parte de microorganismo y/u otros sistemas biologicos de un catalizador inmovilizado en la produccion del producto terminado usando procesos metabolicos, por ejemplo sintesis microbiana y en la transformacion de un sustrato alimenticio; 5) la presencia de al menos un biocatalizador inmovilizado producido o transformado en el producto. Tambien se describen los productos de la invencion llamados productos biocatalizados y las levaduras de los mismos.
