Abstract

"PROCESSO PARA PREPARAçãO DE UMA CULTURA INICIADORA BACTERIANA DE áCIDO LáCTICO, CULTURA INICIADORA BACTERIANA DE áCIDO LáCTCO, PROCESSO PARA PREPARAçãO DE UM PRODUTO FERMENTADO, E, USOS DE UM COMPOSTO DE PORFIRINA E DE UMA CULTURA INICIADORA LáCTICA". A presente invenção refere-se a um processo para preparação de culturas iniciadoras bacterianas de ácido láctico, que compreende as etapas de: cultivar pelo menos uma cepa de bactérias de ácido láctico sob aeração e em um meio nutriente apropriado, no qual pelo menos um composto de porfirina está presente ou está adicionado; colher as bactérias no final da citada cultura. A invenção também se refere ao emprego de culturas iniciadoras bacterianas de ácido láctico obtidas de acordo com citado processo para preparação de um produto fermentado.
